Hello friends! I hope everyone is enjoying this lovely spring day! I definitely am. I started out the day as I always do, with a delicious cup of coffee. I’ve written about the health benefits of coffee previously, but recent studies that I’ve read made me think it’s worthwhile to revisit the topic with you, my lovely readers. I’ll conclude with my “recipe” for healthy coffee. So grab a cup of coffee, sit back and read this post. It will be worth your while, I promise!

New evidence has shown that coffee drinking may help minimize the risk of malignant melanoma, the most deadly form of skin cancer. In a study at Yale, researchers analyzed data from over 440,000 people, followed up with them 10 years later, and found that caffeinated coffee drinking lowered the risk of melanoma by 10%. If 4 or more cups of caffeinated coffee per day was consumed the risk was 20% lower. Decaf coffee did not change the risk of melanoma. It is thought that the reason for this is that caffeine protects against UV radiation.

In addition to protecting against melanoma, research shows that coffee drinkers may have a higher protection against other cancers like breast, colon, prostate and even liver. Coffee drinking also has been shown to reduce the risk of type 2 diabetes. Harvard School of Public Health researchers gathered data from 3 different studies and found that study participants who increased their coffee intake by more than one cup a day, to be exact 1.69 cups per day over a 4 year period, had an 11% lower type 2 diabetes risk than people who did not change their coffee intake. Another study has shown that drinking coffee in moderation protects against heart failure (Moderation= 2 8 ounce servings per day). People who drank 4 cups per day had an 11% lower risk of heart failure, compared to those who did not.

One of the coolest benefits to drinking coffee I’ve found is the study that showed evidence that drinking coffee may reduce mortality. That’s right, drinking 4-5 cups of coffee daily may reduce the risk of early death, even for those who drink decaf. Coffee drinking can also protect against developing Parkinson’s disease, lower the incidence of cirrhosis of the liver for alcohol drinkers by 22%, and lower the risk of developing multiple sclerosis. That’s some compelling evidence for drinking coffee, isn’t it?!

However, and I’ve said this before, sugar is one of the worst things we can put in our bodies on a daily basis, and excessive sugar leads to diabetes, heart disease, and cancer- the very things from which coffee protects us. So you cannot drink 4-5 sugary cups of coffee, and think you are doing something good for your body. That being said, I have developed a cup of coffee over the years that tastes like it’s bad for you, but is actually very healthy. I’ve shared it in past posts but it’s so good, it’s worth repeating.

First step, start out with good coffee. I have a Nespresso machine and make espresso by using Nespresso capsules. I pull a large espresso, but if you have a regular coffee maker use the best quality coffee you can and make a good sized cup of coffee, leaving room at the top for the other ingredients.

Second, I add 1 teaspoon of organic cinnamon and 1 teaspoon UNSWEETENED cocoa powder to the coffee and stir. I like the warm, spicy taste of cinnamon in my coffee and the cocoa powder adds a delicious, chocolatey flavor, without adding any sugar to it. Both these things are essential to a yummy cup of coffee for me, and add more to the healthiness of the beverage also. Unsweetened cocoa powder may reduce the risk of cardiovascular disease, is low in calories and contains essential minerals that support the heart, bones and immune system. Cinnamon also lowers the risk of cardiovascular disease, helps reduce blood sugar levels in diabetics, improves brain function, protects against Parkinson’s disease, and helps reduce the risk of diabetes. See? Delicious and healthy!

Next step, I use my milk frother to whip Organic half and half with French vanilla coconut milk creamer. Remember that healthy fats are good for you, like half and half, so don’t feel guilty using it. It makes the coffee very creamy and rich. I use the coconut milk creamer for sweetness. I use about 2 tablespoons half and half, and 1 tablespoon coconut milk creamer. The coconut milk creamer only has 5 ingredients, all of them healthy, and 4 grams of sugar per tablespoon. No added sugar needed. I like using a frother because it makes the cream warm and frothy, but it isn’t necessary if you don’t have one, just add the ingredients into the coffee.

Hello friends! I just finished this awesome smoothie and I had to tell you about it because it’s life altering! Now you might think, “Why is she so excited about a smoothie?” Well, I’ll tell you why. It contains one of my favorite things- coffee. I love coffee more than most things in life. It’s one of my three favorite liquids- water, coffee and wine. Coffee’s reputation has been totally rejuvenated these days, as it used to be universally vilified and the supposed source of all kinds of health problems. I’m very happy though that now coffee is known to be GOOD for you and can help protect against many heinous diseases like Parkinson’s, liver cancer, diabetes, and heart disease. Coffee drinkers are also less likely to die than non coffee drinkers, like 8-15% less likely to die. That sounds good to me.

Why is coffee so good for you, you ask? Good question! Here’s why, it contains chlorogenic acid, lignans, quinides, trigonelline, and magnesium which reduces inflammation and insulin resistance. It’s also the number 1 source of antioxidants in the American diet. Antioxidants are chemical compounds that fight the damage to your DNA caused by day to day life. Now most of the studies have been done on caffeinated coffee so researchers are not sure that the health benefits are the same for decaf coffee. And remember, we are not talking about the zillion calorie, full of sugar drinks from your favorite coffee shop, because we know that the damage caused by all that sugar far outweighs the benefits of the coffee. So that brings me back to my coffee smoothie- talk about healthy! I never really thought about coffee in a smoothie. I don’t drink smoothies very often because they are usually filled with things that aren’t very healthy, and they can really be quite calorie laden. I ran across this recipe on Prevention.com and what I liked about it is that it was lower in calories and sugar. It was also filled with ingredients I really enjoy so I thought, “What the heck, I’ll give it a try.” And I loved it so much that I wanted to share it with you today.

Delicious Coffee Smoothie

  • 3/4 cup almond milk (or any milk of choice)
  • 1/2 cup cold coffee or coffee ice cubes
  • 1 frozen banana
  • 1 tablespoon cocoa powder
  • 1 tablespoon peanut butter
  • Pinch of salt

The first thing you have to do is put a peeled banana in the freezer a few hours before you plan to make this smoothie. I always put my overly ripe bananas, you know the ones that no one wants because they’re black and smooshy, into a freezer bag and store them in the freezer until I need them. The second step is to brew a cup of coffee and put it in the fridge to cool. I pull a shot of espresso the night before I’m going to make this smoothie and put it in the fridge. You can make coffee ice cubes too but I don’t have any ice cube trays so that’s out for me.

Next you add the first four ingredients (almond milk, coffee, banana, and cocoa powder) into the blender and whirl.

Last, add the final ingredients (peanut butter and salt) and give it a second whirl to combine.

And there you have it! The smoothie is sweet, but not too sweet, chocolatey, and the hint of salt from the peanut butter and salt really brings out the wonderful flavors of the smoothie. It’s also healthy for you at only 240 calories per serving, 7 grams of protein, 7 grams of fiber, and 11 grams of fat, it’s a great meal substitute. You get your meal and your coffee all in one, what could be better than that?!! Drinking healthy coffee smoothies will help you live a life of vitality-with Valerie!

Hello my friends! How have you been lately? As for me, it seems my girls have been home more often these days, and in two weeks they’ll be home for the summer which will make me the happiest Mom on the planet! There’s nothing I like better than to have my chickadees back in the nest. I also love to cook for them when they’re home, and they beg for me to cook as often as I can because they’re homemade meal deprived college students.

They are desperately grateful for anything I make them to eat, but we are especially happy sitting in our pajamas eating breakfast and sipping our coffee/tea together. I would have to say that breakfast is my favorite meal to make, no matter what it is I’m cooking. I guess because I have the best memories of my mom making pancakes and bacon on the weekends, and my dad making waffles, eggs, and bacon.

If you’ve read my blog in the past you know that I have pretty much cut sugar completely out of my diet because sugar is a toxic poison to the body, and since my youngest has a gluten allergy and the rest of us seem to do better without it too, I don’t use gluten in my cooking either. That makes sweet breakfast foods particularly challenging. I mean, I do lots of eggs, bacon and sausage which covers the protein end of the breakfast, but sometimes in the morning you just want a muffin, doughnut, waffle or pancake, ya know?!

I ran across a really cool recipe for a gluten free, no sugar muffin that sounded intriguing because it contained no flour or any weird ingredients. Sometimes with gluten free baking the recipes call for obscure flours or strange ingredients like xanthan gum. Who has that sitting around in their pantry? Not me for sure. Plus, I’m not much into baking so another reason I really like the recipe is that it was simple and I had all the ingredients. So I decided to give it a try and my family LOVED them! You can’t tell they are gluten free or sugar free, and I’m not even sure how they are actually muffins since they contain no flour, but they’re so good! I made some adjustments that work better for my family, and I think they’re easy and delicious so I’d like to share them with you now.

Easy Peasy Banana Nut “muffins”

  • 1/2 cup all natural almond butter
  • 1 large ripe banana
  • 1 egg
  • 1/4 cup organic honey
  • 1/2 cup gluten free oats
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 medium apple, peeled, cored and chopped
  • 1/3 cup walnuts or pecans

Preheat oven to 375 and spray a muffin tin with nonstick cooking spray.

Add all ingredients to a high speed blender and blend it up until batter is smooth and creamy. I had to use the tool that came with my blender to tamp all the ingredients down by opening the clear plastic part in the center of the blender lid and smushing everything down until it blended.

Now just pop them into the oven and wait to smell the amazing aromas that will begin to emanate!

Pour the batter into the muffin tins to about 3/4 full and bake for about 15 minutes or until the tines of a fork when inserted into the muffins come out clean.

The muffins are loaded with fiber from the oats, flaxseed, apple, banana, nuts and nut butter. They also have protein from the nuts, flaxseed, and nut butter, and tons of vitamins and antioxidants from the fruit. As far as I can calculate they have approximately 120 calories per muffin. That’s a great bang for my caloric buck!

When I’m serving these muffins or any other sweet baked good for breakfast I always make sure I serve plenty of protein with it. Usually I will make scrambled eggs and bacon with these muffins. If I’m making pancakes or waffles I make fried eggs and bacon or sausage (because I like to break my fried egg yolk all over my pancakes and waffles, and eat them all together). Protein is key to give you energy for your busy day!

Well friends, spring is coming to the Midwest, I can feel it now and it feels SO GOOD! The snow is melting, the air is warming, and the sun is finally shining- to which I have to say, thank goodness! Along with this feeling of utter joy that the weather is so much nicer, I am also feeling the need for spring house cleaning. No, not in my actual house, but in my life. I realize that as the winter seemed to drag on forever, my eating habits got as heavy as my mood and I was eating more pastas, breads, and potatoes. Right after Valentine’s day I got on the scale and much to my dismay I had gained 5 pounds since early December. That happens a lot easier now as I grow older!

So I decided to follow my own advice and do some spring cleaning to my diet. Conveniently for me I gave up all sweets and snack foods for Lent so those things were the first to go. I’m not much of a sweets eater however I do love my dark chocolate so I’m really missing that right now. I also don’t eat a lot of snack foods but occasionally I really enjoy chips and other salty foods. So that was a first step but I still wasn’t seeing much improvement- probably because I don’t eat too much of those kinds of foods anyway. I decided to practice what I preach and take the next step toward “decluttering” my body by cutting WAY back on carbs.

If you refer back to one of my past blog posts, “Fat Doesn’t Make You Fat”, you will see that contrary to popular opinion fatty foods like butter and bacon do not make you gain weight. It’s difficult even to overeat those foods because they are SO rich they will make you feel sick if you eat too much of them. What does cause major weight gain and belly fat is carbohydrates. Did you read that? It’s so important I’m going to repeat it: WHAT DOES CAUSE MAJOR WEIGHT GAIN AND BELLY FAT IS CARBOHYDRATES. Period. End of story.

It’s so hard for people to grasp though. They think, “Well I eat only 1600 calories every day and I should be able to lose weight, but I can’t.” What they don’t realize is that a calorie is not a calorie is not a calorie. In other words, all calories are not created the same. As I explained in my past blog post, the reason that carbs make you fat is that they overload the liver and then the liver turns the carbs/sugar into fat. Now you might say, “wait, I don’t eat sugar so I’ll be fine.” That’s untrue because carbs like potatoes, pasta, bread, muffins, etc etc etc, turn to sugar in your body, and then that sugar overloads the liver and turns to fat. Specifically it turns to belly fat, especially if you’re over 40. You don’t even need to eat many carbohydrates to overload your liver. Any small amount will cause this to happen. That’s why you get that ANNOYING muffin top that laps over the top of your pants, it’s because of carbs. Don’t forget too, that sugar hides in processed food so even if you’re cutting out sugar and carbs, you could still be gaining weight if you’re eating a ton of food that comes out of a box.

So, I went back to basics, no bread, pasta, or tortilla chips (my personal favorites), and VERY limited amounts of potatoes (obviously no French fries or mashed potatoes), brown rice and quinoa. I would only have ONE SERVING A DAY of the carbs on my very limited list. Here’s the deal, my friends, I lost that 5 pounds that I had gained over the past few months in three weeks! I also lost my muffin top in the process and found my abs!

I thought I would give you a sample of a day of eating for me, so you can see how to do this low/no carb thing, and then I will share a recipe for a delicious low carb chicken stew that you will love! Now obviously the amount of calories each person needs to consume in order to lose weight will vary from person to person, depending on your weight and how much you want to lose. With my size, I needed to eat approximately 1400 calories per day to lose weight. In my past post, “My Fitness Pal is my favorite Fitness Pal” I discussed my use of the app as a way to journal the foods I eat in order to better control my eating. In my post I relayed the information that journaling is known to be one of the most effective ways to lose weight and maintain that loss over the long haul. So I can look back at what I’m eating to see where I need to improve.

For instance, on Tuesday of this week I started the day with my typical cup of coffee with coconut creamer and cinnamon. For lunch I had chicken salad with mayonnaise, celery and onion on lettuce and a half cup of steamed cauliflower, broccoli and carrots with a teaspoon of butter. For dinner I had a slice of meatloaf, made with no breadcrumbs, 2 glasses of Pinot Grigio (it’s a must), a salad with cucumbers, tomatoes and a homemade vinaigrette, and caprese tomatoes made with extra virgin olive oil, slices of mozzarella, and basil. That day I consumed 1503 calories but burned 201 calories with exercise, so I had 258 calories remaining. I left those calories on the table, so to speak. My Fitness Pal app tells me that I consumed 53% of my calories from fat, 29% from protein, and 18% from carbohydrates. That’s a really good nutritional breakdown for a day of eating, especially if weight loss is the goal.

The best part is that because I’ve pretty much replaced the carbs with vegetables I find that I feel more full after I eat, because vegetables are full of fiber and fiber fills you up. Plus vegetables are also full of vitamins and antioxidants so I’m getting a big bang for my nutritional buck! That’s a win-win!

With that in mind, I made a chicken stoup (Rachel Ray term for a dish that’s somewhere between a stew and a soup) that I really like. It’s low carb and full of flavor. I had it for lunch yesterday and it was so delicious and satisfying. I think you’ll really like it and I’d love to share it with you now.

Ingredients

  • 2 tablespoons olive oil
  • 1 carrot, peeled, cut into bite sized pieces
  • 1 small onion, chopped
  • salt and pepper
  • 1 14 oz can chopped tomatoes
  • 1 14 oz can chicken broth
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 1/2 teaspoon dried thyme leaves
  • 2 chicken leg quarters (about 1 1/2 lbs total)
  • 1 15 oz can organic kidney beans, drained

First, heat the oil in a large pot over medium heat and add the celery, onion and carrot. Saute the vegetables until the onion is transluscent. Season with salt and pepper to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf and thyme. Add the chicken leg quarters and press to submerge them into the broth.

Next, bring the cooking liquid to simmer, then reduce the heat to medium low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chickien to a plate and let it cool for a few minutes. Discard the bay leaf from the broth. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.

When I returned most of the chicken had disappeared, including the bones and skin, and there were two very guilty looking but satisfied dogs sitting nearby. Luckily, they left me enough to finish the stoup with!

Discard the skin and bones from the chicken. Shred or cut the chicken into bite sized pieces and return the chicken meat to the stoup. Bring it back to a simmer, hit it with a little salt and pepper, and you’re ready to serve it.

Reach for the Stars-choose healthy drinks at Starbucks!

This post is in honor of my daughter, Danielle, who has asked me a few times to write about making healthy drink choices at Starbucks. So, I did a little research, some based on my own experience, and compiled a list of what I consider to be the healthiest drink options. Now, remember that for me a healthy drink isn’t only a beverage that is low in calories, after all if that was the only criteria you could just order non fat, skinny everything and you wouldn’t need my help at all. No, for me a healthy drink contains little or no sugar, no artificial sweeteners, and has little or no syrups which often times contain chemicals and other yucky additives. I tried to consider a variety of tastes in putting together my list too, not just coffee (Jacqueline’s favorite), but tea choices too (Danielle’s fave) among others. There is even a smoothie on the list. Obviously you can order black coffee or a tea bag and hot water at any time as well, but remember it’s what you add to it that can turn that relatively healthy beverage quickly to a highly caloric, chemically laden danger zone. With that in mind, I included drinks that give you a little more to start with so that you don’t have to add many extras to it to get it to taste delish. So get ready friends, here it is!

1. Cappuccino- Tall, 2% milk, 90 calories, 3.5 g of fat, 9g carbs, 6g protein, 75 mg caffeine. Here’s why I like this one, first, because the milk gives you 6 grams of protein per tall sized (12 ounce) portion, second because there is NO SUGAR in this drink, but you can add Truvia (natural sweetener from the Stevia plant) which they have available at all Starbucks locations, and third because Starbucks always has cinnamon on their condiment bar. Cinnamon is a powerful spice that contains Manganese, calcium and antimicrobial properties, it’s a super spice so any time you can use it, definitely make that healthy choice. But besides that, it tastes really warming and flavorful so it will add deliciousness and health to your beverages, instead of using the syrups that add calories and chemicals. I love the foam of a cappuccino, and because of that foam this drink contains less milk than a latte thus saving you calories in the process. Cappuccino is my favor drink to order at Starbucks by far.

2. Teavana Shaken Iced Passion Tango Tea- Tall, 60 calories (sweetened), 0 calories (unsweetened), 15 g carbs (sweetened), 0 g carbs (unsweetened). I met a friend at Starbucks a few months ago and wanted an iced drink without caffeine (because I already had enough for the day that morning), I studied the menu carefully, utilized My Fitness Pal app on my iphone to check the calorie content of this drink, and then ordered it unsweetened. I figured if it had no flavor I would just add honey to it after I gave it a taste, but it didn’t need it because it was delicious unsweeted. It is a hibiscus, apple, lemongrass and passion fruit tea, and it’s as good as it sounds. The ice makes it so refreshing, and I just enjoyed the heck out of this drink. Definitely a great choice!

3. Chai Tea Latte- Tall, 190 calories, 2.5 g fat, 34 g carbs, 6 g protein, 20 % RDA for calcium. I included this one as a healthy option, even though it’s high in calories and carbs because the spices give it such a warm flavor and the milk adds a good bit of protein. I always recommend getting only a tall size of this drink since it’s fairly high in calories; a little bit goes a long way with this one. I always order 2% milk instead of non-fat because though I’d save calories with the non-fat milk, the additional fat in 2% milk allows the nutrients in the milk to be better digested. I also do not EVER order a skinny beverage at Starbucks because they use an artificial sweetener which is more dangerous than the sugar this one contains.

4. Caffe Americano- Grande, 15 calories, 3 g carbs, 1 g protein, 225 mg caffeine. This drink packs a caffeine punch with 225 mg, which is why it’s Jacqueline’s favorite! The Americano is an espresso that has hot water added to it, which gives it the caffeine of an espresso in a more generous portion size. She orders it plain and then goes to the condiment bar to add a bit of milk and honey, and a generous sprinkle of cinnamon. Delicioso!

5. Chocolate Smoothie- tall, 250 calories, 45 g carbs, 40 g protein, 8 g fiber, 20% RDA of Calcium and Iron, 15% RDA of Vitamin C, and 8% RDA of Vitamin A. This smoothie is made with mocha sauce, banana, milk, protein powder, fiber powder, and ice. The original version of this smoothie is actually 320 calories, but I saved you 70 calories because you’re going to request for it to be made with a half a banana instead of a whole one, and double the protein powder (they’ll have to put it in a larger cup because the extra protein will make the amount of this smoothie grow a lot!) I included this one on my list even though there are a lot of calories and carbs because for a smoothie it has relatively few calories and it has LOADS of protein which makes it a possible meal replacement. You can request a shot of espresso to add caffeine to it if you need a pick me up also.

6. Teavana Shaken Iced Green Tea- tall, 60 calories sweetened, 0 calories sweetened, 15 g carbs (sweetened), 0 g carbs (unsweetened), 30-35 mg caffeine. This is a similar drink to the Passion Tango tea, but I included it because it has green tea in it which has antioxidants in it, plus it contains mint, lemongrass and lemon verbena. It also has a bit of caffeine in it due to the green tea so if you want caffeine this would be a good choice. Yum!

Brutally cold but I’m still smiling!

Yikes it’s cold here in the Midwest! By cold, I mean 8 degrees below zero cold- and that’s not wind chill, that’s actual temperature, my friends. That was the temperature when I awakened this morning, and had to take my dogs out on leash because my little dog runs through the invisible fence. His wee paws froze after about 2 minutes and I had to bring him in to thaw before trying to take him out again so he could do his duty. That kind of cold is beyond description, you just have to experience it to know what I mean.

It’s worse because my daughters, sister and niece are currently in Florida experiencing their version of cold- 60 degrees, as I’m shivering here in Indiana. My house is pretty warm and cozy on a regular basis, but in this kind of cold even my house seems drafty and chilly. When it’s so disgustingly frigid out, I need peace more than ever, and I turn to my tried and true, sure fire ways to feel cozy and happy no matter what the temperature. In past posts, I mentioned ways I feel comforted when experiencing stress of any kind, reading my Kindle, listening to music, taking a bath, spending time spiritually, and a good meal/glass of wine. I thought today I’d share ways in which I help myself feel especially contented when it’s warm.

1. Watching a good movie– I love to watch movies when it’s cold out, or when I’m sad/stressed. My favorite movies to watch are the Star Wars series, and I admit I’m sort of a Star Wars freak. I have watched the series probably 50 times or more, and I never get tired of watching the movies. Something about the whole good versus evil thing, with good winning out just gets me every time.

The good thing is that I’ve infected my family with my Star Wars mania and they love Star Wars too. Jacqueline has a Han Solo frozen in carbonite phone case (watch the series for explanation), and the girls gifted me with a visit to the traveling Star Wars exhibition last year at the Indiana State Museum for Mother’s Day, and they enjoyed it almost as much as I did. My Honey gave me the light saber you see in the picture of Jac for Christmas this year, it is glass, and he chose the colors and sounds for it. What a guy! Anyway, watching any of the six Star Wars movies never fails to make me feel cozy and comforted, so whatever your favorite movies are- watch them with your family and you’ll feel all warm inside!

2. Dogs (or cats if that’s your preference)- My dogs have always comforted me in times of sadness. They’re also excellent at warming up my toes and lap by laying on me when I’m cold. Whenever my little guy, Chewie, sees a blanket come out on any member of our family, he comes running to share in the cuddle time. I can’t remember a time when they’ve failed to give me warmth and love. They give me so much more than I give them, and I love them so much!

3. A cozy blanket– When my daughters went away to college, I had a blanket made for each of them with different pictures of family and friends on it, hoping that it would comfort them by laying under all of the loving people in their lives. I wanted them to feel like we were all holding them in a warm embrace, even when they were far away from home. They both have told me that it is one of the best things they have at college, and it reminds them they are loved by lots of people. I had them made on Walmart.com and they are relatively inexpensive, $60ish. It’s pretty easy to download the pictures and create the collage of photos. I paid a little extra for the larger blanket with the thicker fleece and felt it was well worth it. Imagine my surprise when my girls had a blanket made for me last year with pictures of the three of us on it, so that I would feel comforted when they both went away to college for the first time last fall! I love my blanket and use it almost every day. When they left to go on their trip to Florida, the first thing I did after coming home from dropping them off at the airport was lay on the couch under my blanket of our faces. It’s soooo cozy and makes me happy to use it. I highly recommend having one made for your loved ones too! And have them make one for you!

4. Looking forward to a warm trip (or looking back fondly on a past one)- Another way I make myself feel better when it’s cold out or when I’m sad, is to either look forward to an upcoming warm trip or reminisce about a past one. I love to look at pictures from past trips we have taken, I can almost feel the sunshine jump out of the pictures and into my body!

I also love to plan future family trips to warm places. We are going to Florida over spring break, and it is such fun to spend time working out the details of our sunny trip to a warm location when it is so bleak and cold outside. It makes me feel like I’m there, at least for a short while.

5. Watching my favorite team (and my favorite cheerleaders)- Even before my daughters were cheerleaders I loved to watch my Boilers. We had season tickets to Purdue football for years when the girls were little, and went to many basketball games. We also liked watching the games on television when we couldn’t attend them. Now, it’s so much better when I can not only watch my Boilers, but I can watch my beloved daughters cheer for them too. It’s a definite win-win for me! I particularly love watching the NCAA basketball tournament in March. March Madness is so infectious, and jumping up and down to cheer on my team warms me up too! Go team go!

Well, that’s all I have time for today, Folks, but there are so many other things I love and that bring me comfort. They are dark chocolate, cooking, exercise, popcorn, cookbooks, coffee, spicy food, and writing my blog! I couldn’t live without these, along with all the others I mentioned above. They get me through bleak and cold times in my life, both outside and inside as well. Hello Friends! I hope you had a wonderful Christmas! I did and I’m really revving up for a healthful and fabulous 2015! One of the ways I’m doing that is by drinking Matcha green tea. Now, I’ve always known that green tea is good for me, though I’ve never really been a tea drinker (see my previous post “HEALTHY coffee is my favorite way to start the day!”), as coffee has always been my morning drink of choice. Lately, I’ve been doing some research on green tea, Matcha specifically, and I was intrigued enough to try it. I have become a believer about the health benefits of Matcha green tea and I’d like to share my findings with you today.

Here’s the thing, all tea (white, green, oolong, black, and pu-erh) comes from the same plant, camellia sinensis, which is a woody shrub native to southern China that is generally kept plucked to its picking height of 3-4 feet.  Now, Matcha is a high quality green tea that is covered before picking to accentuate the color, and then stone ground after being picked and before being sealed into small tins. In Japan, Matcha tea is a very important part of the tea ceremony. It has a somewhat grassy taste, but the type I drink enhances the green tea taste with other flavors like blood orange and peach. It’s definitely important to make sure you purchase high quality Matcha tea, as with all varieties, to ensure you are receiving the maximum benefits.

Matcha green tea is powdered which makes it easier to prepare. You just add hot water if you want to drink it warm, or cold water if you want it as a cold beverage, stir and you’re done! No steeping of tea leaves involved with Matcha tea. Next, I will discuss the health benefits of drinking it, and then I’ll let you know the type I’m currently drinking.

1. Matcha tea is high in antioxidants– Remember that antioxidants are the nutrients and enzymes responsible for fighting against the negative effects of UV radiation, giving us younger looking skin, and fighting off a number of life-threatening illnesses. We know that fruits, vegetables, red wine, and chocolate have antioxidants, but Matcha green tea has FIVE TIMES THE ANTIOXIDANTS AS ANY OTHER FOOD IN JUST ONE SERVING! That makes it worth it for me to drink it!

2. Tons of Catechin, EGCg– Green tea has a specific set of organic compounds called catechins. Catechins are among the most potent and beneficial antioxidants out there. One specific catechin, epigallocatechin gallate (EGCg), makes up 60% of the catechins in Matcha green tea. Out of all antioxidants EGCg is the one most widely recognized for its cancer fighting properties. Matcha contains over 100 times more EGCg than any other tea on the market.

3. Enhances calm but increases energy (What the what?!!)- Here’s how that works, the amino acid L-Theanine in Matcha tea leaves promotes the production of alpha waves in the brain which induces relaxation without the drowsiness caused by other “calming products” out there. It also contains a combination of nutrients that gives increased endurance and more energy which can last UP TO SIX HOURS. It doesn’t have the usual side effects of stimulants, like nervousness and hypertension. Samurai warriors drank Matcha green tea before going into battle because of the tea’s energizing properties, and Zen Buddhist monks and Chinese Daoists drank it as a way to relax and meditate while remaining alert. So it calms you, AND give you energy- naturally! That’s a win win!

4. Boosts memory and concentration– Another side effect of L-Theanine is that it produces dopamine and serotonin which enhance mood, promote better concentration, and improve memory. I need that so that’s yet another benefit for me!

Burns calories and detoxifies the body, yet is very low in calories– Drinking Matcha green tea has been shown to increase metabolism and help the body burn fat about four times faster than average, but unlike diet aids on the market does not have any negative side effects like increased heart rate and high blood pressure. Yay for me! Also, the Matcha leaves are covered to deprive them of sunlight during the last three weeks before tea leaves are harvested, which causes a huge increase in chlorophyll production. This not only gives the tea its vibrant green color, but it is also a powerful detoxifier capable of naturally removing heavy metals and chemical toxins from the body. It is very low in calories too. The Matcha I drink has 20 calories per packet and it makes 12-16 ounces of liquid. That’s amazing!

6. Fortifies the immune system and improves cholesterol– The catechins in Matcha tea have been shown to have antibiotic properties, which promotes overall health. Also, one serving provides substantial quantities of Potassium, Vitamins A and C, Iron, Protein, and Calcium. I am drinking Jade Monk Matcha green tea powder in the cranberry blood orange flavor right this instant and I’m loving it! It doesn’t have the bitter flavor that some teas do, and I don’t have to add any milk, or lemon, or sweeteners like sugar or honey to make it taste delicious. I’m drinking it cold right now, but I prefer it warm. And remember it’s low in calories- one packet contains 20 calories. It’s super easy to make too. If you prefer to drink it warm what I do is use a measuring cup and put 14 ounces of filtered drinking water into it, throw it into the microwave for three minutes and then add it to a drinking glass, pour in the packet, stir and drink. If you’d like it cold, you can add cold filtered water to a drinking glass, pour the packet in, and stir. It’s also really convenient if you’re running out the door to put a water bottle into the fridge to get it cold, pour the packet in, shake and you’re done!

So that’s why I’m loving Matcha green tea right now. The health benefits are numerous, AND NATURAL! I can’t think of any negatives either, which is rare for any product on the market. HEALTHY coffee is my favorite way to start the day!

Coffee11This morning after a late night at the Fleetwood Mac concert, which was such fun by the way, I really needed my morning coffee. My coffee is a necessity to give me a much needed boost of energy in the morning. It’s also warm, homey and comforting to me. It really is a hug in a mug! I have previously spoken of my love for coffee and it’s benefits but today I want to talk about the stuff that goes into your coffee and how important it is to keep those things healthy. Otherwise, you can add HUNDREDS of calories to your coffee, and it can easily go from a healthy start to your day to a caloric wasteland. Besides being high in calories, some of the things you can add to your coffee can be downright BAD for your health, full of chemicals that can’t even be pronounced. I wanted to use this opportunity to save you all the calories and chemicals, and show you what I use so that you can benefit from my experience and drink delicious, HEALTHY coffee.

1. Start with high quality coffee- If you can find organic coffee, by all means use that. I have an espresso machine that I’ve used for the last few years. I really enjoy espresso but I recognize that many people don’t like the intensity of it, so use whatever works for you. But for me the first step is to use really good coffee/espresso that doesn’t have any artificial flavors or additives in it (artificial flavors=chemicals). Nespresso sells high quality, sustainably raised coffee in their espresso cubes. You put the cube into the machine and it makes delicious espresso.

2. Add REAL cream- I don’t use artificial creamers in my coffee. I will only use half and half, but the cool thing is that I use a milk frother. I pour the half and half into the frother, press the button, and it whips the milk up into a foamy deliciousness that makes me feel like I’m getting my coffee from a professional barrista! Of course I only use organic half and half also. I use an organic hazelnut half and half and add a splash of that to the regular half and half and whip them together so I get a bit of sweetness into the cream.

3. NO FAKE SUGARS- As I’ve said in previous posts, artificial sweeteners are bad for your health in MANY ways. They are full of chemicals and are NOT a component of a healthy lifestyle. In an effort to keep the calories down and impart sweetness to my coffee, I use a small splash of hazelnut half and half as I said above, and I also shave a small amount of Mexican hot chocolate into my coffee. I use a very small grater and shave no more than a half teaspoon of it into the coffee before adding the cream. I let the chocolate melt into the coffee, and then I add the cream and stir a few times to combine everything without adding too much air to take the fluffiness out of the foam.

4. Add different flavors to enhance your coffee- Spices like cinnamon, nutmeg, and cardamom can really jazz up your coffee, adding a lot of flavor without adding calories. I add organic cinnamon to my coffee whenever I make it. Cinnamon is a healthful spice and has been said to help prevent diabetes, Alzheimer’s, and blood sugar spikes. It also is very warm and flavorful, and really complements the flavor of coffee. It’s a must for me!

Well, that’s how I make a perfectly delicious and healthy cup of coffee. The idea is to add layers of flavor so that you get an amazing taste without adding a lot of chemicals or calories. Coffee can help enhance your memory and workouts, as well as preventing liver damage, helping to lessen the symptoms of Parkinson’s disease, lessen our stress, and add antioxidants to our bodies. So I am perfectly justified in indulging in my morning cup of Joe, and I know it’s good for me too. Drinking coffee with healthy additions to it can help you live a life of vitality- like Valerie!

First let me say that breakfast is my favorite meal that I don’t eat! What? That makes no sense! Well, the truth is that I don’t eat breakfast most days. I know, I know, many doctors and nutritionists say that breakfast is the most important meal of the day and I’m going to be nutritionally deficient if I don’t eat it, but I haven’t eaten breakfast for 10 years and I don’t miss it. I came across an article in Dr. Mercola’s newsletter 6 months ago about a concept he believes in called “Intermittent Fasting”, and I realize that is what I have done for years and it really works for me. The deal is this, you eat moderately for say, 7 hours a day- like noon to 7 pm, and before and after that time you eat nothing. That’s 17 hours without eating and your body starts to burn more calories and fat than it would if you ate for a longer period of time during the day. He explains it all scientifically, so google “Mercola Intermittent Fasting” and read all about it. I didn’t know anything about Dr. Mercola or intermittent fasting when I began to skip breakfast, I just wasn’t hungry in the morning and since I’m an avid calorie counter I could save up my calories for later in the day when I was really hungry. I also don’t like to eat late at night so once again I would save calories by not eating at that time. It works for me!

Anyway, you might be thinking, “Then how can you say that breakfast is your favorite meal?” Good question, my wonderful readers! The reason is that I eat breakfast foods ALL the time, I just don’t eat them during normal breakfast hours. My first meal of the day is never before noon-1:00 pm, but it often contains traditional breakfast foods because I love them best of all! I guess that makes it more bad a%& brunch than breakfast! Now, many of you may have to eat as soon as you awaken, I know my significant other does, and that’s ok it’s whatever works for you. Some days I have to eat right away too, though that doesn’t happen to me very often. When I feel the need to eat in the morning I will eat a half banana and a tablespoon of peanut butter. My significant other has a carton of yogurt and a spoonful of almond or cashew butter. Of course I always begin my day with my cup of coffee, and I can’t live without it. Dr. Mercola says if you have coffee in the morning with intermittent fasting, the coffee should be without cream or sugar. I have a bit of half and half and a teaspoon of honey so I guess I don’t follow his rules exactly, but I can’t drink my coffee black!

So back to my bad a@% breakfast, I call it egg, potato and chorizo skillet. I have made some form of this breakfast for 15 years and my family loves it! Chorizo is a Mexican spiced pork sausage that my family really enjoys but if that isn’t a favorite for your family, you can substitute breakfast sausage or bacon, or both! Here’s how it’s done: first take a half cup of diced onion, half cup of any kind of peppers you like, and sweat them in a teaspoon of extra virgin olive oil. While that’s happening, wash 4 medium sized potatoes and throw them in the microwave for 5 or 6 minutes until they are softened but not all the way cooked. Let them cool a bit and then dice them. Once the onion and peppers are softened, take a pound of chorizo and throw it in the pan where the onion and peppers are, and cook until browned. Drain the grease and add the diced potatoes, salt, pepper, garlic and any other herbs and spices you like. Cook the potatoes for 5 minutes until lightly browned.

While that’s all going on, crack 6 eggs into a bowl, add a 1/4 cup of milk, and beat with a fork until blended. When the potatoes are browned, add the egg mixture to all the other ingredients in the pan and turn the heat onto medium low. Add a half cup of shredded cheese (any kind you want) to the top of the mixture in the pan and let it all sit in there for about a minute. After that, stir the mixture around in the pan until the eggs are light and fluffy. DON’T LET THE EGGS GET HARD AND TOUGH! That’s why the heat under the pan needs to be medium low and you need to stir constantly so the eggs don’t cook too quickly. Nobody likes hard eggs! Salt and pepper the eggs at the very end before serving because if you salt the eggs too soon the salt could also harden the eggs. I also love this recipe because everything cooks in one skillet which makes clean up much easier. I HATE to clean up the kitchen as anyone who lives with me knows very well!

I topped the breakfast skillet with my homemade guacamole and sliced up some tomatoes on the side. I’ve got a lot of tomatoes right now and I serve them for all meals! You can also serve with salsa as well. I had a little bacon left over from the other day and I crumbled that over the top too. It’s really whatever you want to add to it that makes it yummy. If you have some of the skillet left over just cover it and store it in the fridge. Believe it or not it tastes delicious heated in the microwave the next day too! A Honey Of A Cure!

I have mentioned my love of honey in previous posts. I use honey in my tea and coffee, and I use it in place of sugar in most everything. It’s my sweet go-to every time! However, did you know that honey can actually be used as medicine?! Yes, indeedy! Today I wanted to expand on that to discuss the medicinal uses of honey, in particular Manuka honey. Now, honey has been used since ancient times to treat many different conditions. It contains antibacterial and anti-inflammatory qualities, and is even thought to stimulate production of special cells in our body that can repair tissue damaged by infection- pretty cool! However, not all honey is created equally, so to speak, and the type of honey that you use matters. The honey thought to be the best for medicinal use is Manuka honey. It is produced in New Zealand by bees that pollinate the Manuka bush.

Now here’s the thing, the reason Manuka honey is thought to have more antiviral and antibacterial properties than other types of honey is the higher levels of Methylglyoxal than regular honey has. What is Methylglyoxal (known as MG), you ask? Good question, I asked the same thing! It comes from the conversion of another compound- dihydroxyacetone- that is found in high concentration in the nectar of Manuka flowers. So the higher the concentration of MG, the stronger the antibiotic effect, and Manuka honey has the highest MG amount of any type of honey. Some Manuka honey that you buy in the stores doesn’t have a high level of MG, I call that “cheater Manuka honey”,  so honey producers developed a rating system called UMF or Unique Manuka Factor. To be therapeutic, it has to be rated at least 10 UMF and then is marketed as “UMF Manuka Honey”, or “Active Manuka Honey”. Whew, I threw a lot of terms at you there but I’m done with that so keep on reading for the good stuff!

So what are Manuka honey’s medicinal uses? Because it has antiviral and antibacterial properties its primary use is on wounds. It is very effective at healing wounds and cuts. BUT MAKE SURE IF YOU USE IT ON YOUR WOUNDS THAT IT IS IN A STERILIZED CONTAINER AND IT IS NOT USED FOR ANY OTHER PURPOSE. In other words, don’t put a spoonful of it in your morning coffee, and then dip out of the same container to slather it on a cut.

Other medicinal uses for Manuka honey are treating and preventing cancer (!), reducing systemic inflammation, treating diabetes, treating eye, ear and sinus infections, preventing gingivitis and other periodontal disease, and treating gastrointestinal problems.Wow, that’s quite a powerful medicine! The way we use it in my house for the most part is for treating cold symptoms. When anyone feels a cold coming on I get out the Manuka honey and give them a teaspoon three times a day. It can sometimes even stave off the cold from coming on entirely. If I do actually catch a cold which is very seldom, Manuka honey is so effective in reducing sore throats and coughs. I will take a teaspoon of it, let it melt in my mouth and trickle down my throat. it really soothes the pain of a sore throat and calms my cough. It also is very helpful if I have some gastrointestinal upset. I do the same thing, one teaspoon three times a day and my stomach pain is eliminated. It’s really so amazing!

Manuka honey can be purchased at healthy food grocery stores anywhere and though it’s a bit pricey ($15- $20), a jar lasts for at least 2 months so it’s totally worth it. In fact, Jacqueline called on Wednesday because she caught a cold at school and she went to a health food store to get Manuka honey! I was so proud! She got other healthy cold symptom reducers and now she’s fine! That’s $15 well spent!
