Creamy, Healthy, and Easy Soup du Jour!

Hi friends! My second video blog is here for you today. I made a delicious, healthy, and easy soup that you will enjoy making almost as much as you’ll enjoy eating! Here’s the recipe:

Creamy Cauliflower Soup

4 cups chicken stock

1 cauliflower

1 brick cream cheese

1 tablespoon Dijon mustard

4 oz butter

Salt and pepper

1/2 lb bacon

Paprika

1/2 cup chopped walnuts

Chop the cauliflower into small florets, add to the stock and boil until tender. Cut the bacon into small pieces and fry until crispy. Drain and set aside. Add the mustard, cream cheese, and butter to the cauliflower in the stock. Use a hand mixer or a blender to combine until smooth. Add the bacon crumbles, paprika and walnuts as a garnish. It’s creamy and has so much flavor. You’ll love it! Eating low-carb soups like this will help you live a life of vitality- with Valerie!

Hello my friends! Life is pretty cool in Indiana, well actually it’s pretty cold to be honest but it is pretty with the sun, snow and ice.  Here’s what my backyard looks like right now.

Snowy but pretty, right? Anyway, when it’s cold and snowy outside I long for warm, comfortingly delicious but healthy food. My girls texted that they wanted to make dinner together in Jac’s apartment, and did I have any ideas for a good recipe for them? Did I ever! Danzy’s been a bit under the weather since going back to school, so I wanted to give them something that was healing and soothing too. A top priority though was something easy to make for them. I think we succeeded, so come and join me for another episode of “Cooking with Jac and Dan!”

Baked Chicken and Rice

  • 5-6 boneless, skinless chicken thighs
  • 1 tablespoon extra virgin olive oil (evoo)
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 stalks of celery, chopped
  • 1/2 of a large container of organic low sodium chicken broth
  • 2 cups brown rice
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First, make 2 cups of organic brown rice according to package instructions.

Preheat oven  to 375 degrees. Chop onion, carrots, and celery.

Add the evoo to a large frying pan and add the carrots, celery, and onions. Saute until softened. Then, salt and pepper each side of the chicken thighs and add them to the pan.

Brown for 5 minutes on each side. Add minced garlic and the remainder of the salt and pepper.

Add the rice to the pan and chicken broth. Stir until combined.

Pour that all into a baking dish and bake for approximately 45 minutes, or until the broth is absorbed. Enjoy with a salad of mixed greens lightly tossed in a vinaigrette.

IMG_6977That’s all there is to it! The chicken is loaded with protein, has 30% RDA for niacin, 15% of phosphorus, vitamin B6, and Zinc, and 10% of riboflavin. It’s high in healthy monounsaturated fats, and has 6% of your RDA for iron. The chicken and broth are known to have medicinal properties to help fight colds and infections, and the carrots, celery and onion have tons of vitamins as well. The brown rice is a great source of fiber, and protein, along with magnesium, phosphorus, thiamine, vitamin B6, niacin, iron and zinc.

If my college students can make this, I know you can too! It’s delicious, warm, comforting, and healthy. This dish has it all! Jac and Dan’s opinion was that it was easy to make, but they didn’t like how long the rice took to cook (45 minutes!). My suggestion for that is to make a double batch every time you’re making rice and put the extra in the fridge. It will keep for a week so when you need to make dishes that contain rice, it’s ready and waiting for you! They thought it was delicious which is the most important part! Eating food like this will help you live a life of vitalty- with Jac, Danz, and Valerie! 🙂

 

 

 

You should be doing these things right now!

Hello, friends! Tis the season to be… Stressed out, frantically busy, exhausted, out of gas, and definitely no time to recharge the batteries. I find this time of year to be the most difficult. I feel stressed because I want to get the perfect gifts for my loved ones that reflects how much I love them, frantically busy as I decorate the house, buy the gifts, wrap them, bake cookies, plan, shop for and make the Christmas Eve meal, spend meaningful time with the kids, go out of town to visit family, and all the holiday obligations. This year it’s even more difficult because we are going through renovations on our new house. Life in the “Reno Zone” is difficult and stressful, which adds to the holiday burnout. 

My college student readers are going through similar experiences with studying for finals, writing papers, completing projects, giving presentations and finishing their semesters strong. My conclusion is that we are all STRESSED OUT these days. 

My goal with this post is to help give you ideas about how to de-stress and take care of yourself during timeframes when you have precious little time in which to do this. You can do little things that don’t take long, but will help you recharge your batteries and give you the energy to finish this year strong. I’ve got so many ideas for you that I will split it into two posts. Here we go!

  

  
 1. Take a replenishing salt bath– my new passion is bathing. There is nothing more luxurious than laying in the bathtub with the lights dim and soothing music playing. Here’s a way to take it up a notch, add bath salts, in particular pink Himalayan sea salts. Salt baths have been utilized for thousands of years as a way to detoxify the body, and salt in the bath actually ADDS moisture to your skin. Himalayan salts are also high in minerals such as potassium, magnesium, iron, phosphorus, calcium and chloride which can be absorbed while in the salt bath. If buying pink Himalayan salt and adding it to your bath seems like too much work, there are ready made products out there that do the work for you. One product I like in particular is from a company called Me! Bath. They have “bath ice creams” that are all natural and contain oils, minerals, fragrances and salt, so you just have to drop one into your bath tub and get in for a nice, relaxing soak. Ahhhhh!

  
2. Glass of wine– This one works well in combination with number one, because having a glass of wine while soaking in the bath makes it even better. Wine (in moderation) is one of the healthiest ways to wind down after a long day. It contains potent antioxidants that are heart healthy and protect from many heinous diseases. Champagne is getting good press these days because it contains polyphenols that help lower blood pressure, natural trace elements that help boost your mood, and at 78 calories per 4 ounce pour it’s one of the least caloric alcoholic drinks in which you can indulge- in moderation of course. 

  
3. Listen to your favorite music– again works well in combination with the first two items on the list. Music helps you focus because it causes changes to the brain that help with attention and storing events into memory, makes you feel more cheerful due to the release of dopamine caused by listening to certain songs, and can calm you down by listening to soothing music during stressful events due to decreased cortisol levels . I can’t tell you how many times I’ve been stressed and listened to one of my favorite playlists on my iPod which cheered me up immediately. Music can also rev you up and give you the energy you need to complete a challenging paper or project, because listening to up tempo music actually helps you use oxygen more efficiently, which can also get you through a tough workout as well.

4. Cuddling with loved ones, furry and non– I’ve written about this in a previous post but think it bares repeating, physical touch, in particular hugging, is one of the best things we can do for good health. When you hug a loved one your body releases oxytocin, which is a neuropeptide which makes us feel warm and fuzzy inside. It promotes feelings of devotion, trust and bonding. Hugs can also lower blood pressure. This happens because sensory receptors on the skin trigger the vagus nerve which is responsible for lowering blood pressure among other things. Hugs can be a potent destresser because when we hug we immediately reduce the amount of stress hormone cortisol produced in our bodies, which releases tension and sends calming messages to the brain. There is nothing more soothing to me than cuddling up with my pups and loved ones. Truly one of the best things in life!

 This is a picture I took at my local nail salon that serves wine while getting a manicure or pedicure. That’s a win-win to me!

Brain Food- Really!

Hello friends! Are you busy with the hustle and bustle of the Christmas season? Are you attempting to juggle all of your various responsibilities? Afraid you will allow one of the MANY balls you keep in the air to drop because you’ve forgotten to do something, or buy that perfect present for Aunt Sally and therefore feel her wrath for the rest of your life? Or are you one of my many college student readers, and you’re trying to cram tons of knowledge into a brain that feels much too insufficient? Well, if you are feeling like this right now, (ME!!!!) take heart dear readers because I am going to impart some critical information that will help you deal. This post was written at the request of my stressed out college senior daughter, Jacqueline, who would love some nutritional help for her brain going into finals week. 

The answer to improving brain health lies in the food we eat. Yes, that’s what I said, plain and simple food. However, it’s not just any food that will help your brain, but some specific foods which I’m going to share with you right now. Come along for the ride, I promise this will help you!

Top Brain Foods

  

1. Blueberries– I researched many resources in coming up with this list, and blueberries were at or near the top of every one. One reason is that they contain an antioxidant called anthocyanin which is thought to cross the blood brain barrier, protect brain cells from oxidation and boost communication between brain neurons. A Harvard University study found that women over 70 who consumed 1/2 cup of blueberries twice a week remained sharper mentally than women who didn’t eat berries. Short term memory, navigational skills, balance and coordination are all improved by eating blueberries. 

  
2. Fatty fish-For two reasons, vitamin D and omega 3’s. Omega 3’s contain EPA and DHA which are highly concentrated in the brain and are critical for optimal brain function. Vitamin D, a nutrient plentiful in fatty fish like salmon, protects the brain. A Tufts University study found that people who ate fish like tuna, salmon and halibut 3 times a week reduced their risk of Alzheimer’s by 40%.

  
3. Avocados– are high in monounsaturated fatty acids which help promote healthy brain blood flow and benefits healthy brain function. And they’re good for your heart too because they’re loaded with potassium. That’s a win-win!

  
4. Nuts-Nuts are a good source of unsaturated fats and Vitamin E, both contributing to better brain function. Also, almonds, pecans, and walnuts are thought to prevent cognitive decline. 

  
5. Eggs-Saturated fat and choline are both contained in eggs. They help boost memory skills and overall brain health.

  
6. Olive oil, coconut oil-Both oils are healthy fats which contain polyphenols, powerful antioxidants that can help prevent or even reverse dementia and cognitive decline and help improve memory.  

  
7. Green leafy veggies-which are loaded with Vitamin K, like kale, collards and spinach, have been shown to slow cognitive decline. People who consume 1-2 servings a day have the cognitive ability of a person 11 years younger who consumed none.

So eat your healthy fats, like avocados, fatty fish, eggs, olive and coconut oils, your dark green leafy veggies like kale, collards and spinach, and your blueberries to help you get through finals, or for us older folk to get through the Christmas season (or life!). You’ll live a brain healthy life if you do, what could be better than that? Foods like this will help you live a life of vitality, with Valerie!

This post is credited completely to my wonderful daughters, Jacqueline and Danielle. It all started like this, the other day the girls were texting each other on the text group they created that includes me as well. Danielle asked Jacqueline if she could come over to her apartment for dinner the other night. Jac replied that she was just going to make a quick hot dog because she needed to work on a project that is due this week. I contributed to the conversation at that point (or butted in, depends on your perspective) and said that Jac should bring down some meat to defrost so they could have a proper dinner. Danz said she would cook for them because she really likes to cook. Jac put some chicken thighs in the fridge and off to class she went. I told Danzy to text me when she got to Jac’s apartment, and I would help her if she got stuck.

I know what ingredients Jac has available to cook with because I bought all her spices and herbs for her when she went to live in her apartment, so that was an advantage. I also know what my girls like to eat which made it easier to help them put things together. Jacqueline texted that she had spinach, white cannellini beans, and San Marzano canned tomatoes, so I knew with those ingredients a delicious meal could be made.

When Danielle got to Jacqueline’s apartment she texted me and said she didn’t know what to do with all these ingredients, so she waited her usual three seconds (she has her mother’s patience level), and when I hadn’t responded she called me and said HELP! Now it was Mom to the rescue, and I love to rescue people so I was in my element. I walked both she and Jacqueline through the recipe that I will share with you now, but the cool thing was that once I helped them get started, all the hours they’ve spent helping me in the kitchen kicked in. They knew exactly what to do, once they got over feeling overwhelmed. Here is what they created.

Jac and Danz’ version of chicken, tomatoes, and beans  

  • 6 boneless, skinless chicken thighs
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 1/2 teaspoon each salt/pepper/garlic powder/red pepper flakes to season chicken
  • 1 onion, chopped
  • 1 large can San Marzano crushed tomatoes
  • 1 15 ounce can white cannellini beans, drained
  • handful of organic baby spinach
  •  1 teaspoon each salt/pepper/minced garlic/ red pepper flakes/ Italian seasoning for sauce

First, Jacqueline chopped the onions, while Danielle was seasoning the chicken thighs on each side, and she warmed the EVOO in the pan too. Jac put her chopped onions into the EVOO and sautéed them for a few minutes until softened.

Next Danielle browned the thighs for five minutes on each side. Then she added the tomatoes, beans and seasonings to the chicken, and simmered it all on medium heat for 25 minutes, stirring occasionally. Last, Jac added the baby spinach and cooked it for another few minutes until the spinach was soft.

And that was all there was to it. The girls were ecstatic and said that it was one of the best meals they’d ever had. It tastes so good when you make something you didn’t think you could. Look at how healthy it was for them too, they had protein, vitamins, minerals and antioxidants in the chicken, beans, tomatoes, and spinach. Healthy, delicious and easy- what could be better than that?!!

Hello my friends! How have you been lately? As for me, it seems my girls have been home more often these days, and in two weeks they’ll be home for the summer which will make me the happiest Mom on the planet! There’s nothing I like better than to have my chickadees back in the nest. I also love to cook for them when they’re home, and they beg for me to cook as often as I can because they’re homemade meal deprived college students.

They are desperately grateful for anything I make them to eat, but we are especially happy sitting in our pajamas eating breakfast and sipping our coffee/tea together. I would have to say that breakfast is my favorite meal to make, no matter what it is I’m cooking. I guess because I have the best memories of my mom making pancakes and bacon on the weekends, and my dad making waffles, eggs, and bacon.

If you’ve read my blog in the past you know that I have pretty much cut sugar completely out of my diet because sugar is a toxic poison to the body, and since my youngest has a gluten allergy and the rest of us seem to do better without it too, I don’t use gluten in my cooking either. That makes sweet breakfast foods particularly challenging. I mean, I do lots of eggs, bacon and sausage which covers the protein end of the breakfast, but sometimes in the morning you just want a muffin, doughnut, waffle or pancake, ya know?!

I ran across a really cool recipe for a gluten free, no sugar muffin that sounded intriguing because it contained no flour or any weird ingredients. Sometimes with gluten free baking the recipes call for obscure flours or strange ingredients like xanthan gum. Who has that sitting around in their pantry? Not me for sure. Plus, I’m not much into baking so another reason I really like the recipe is that it was simple and I had all the ingredients. So I decided to give it a try and my family LOVED them! You can’t tell they are gluten free or sugar free, and I’m not even sure how they are actually muffins since they contain no flour, but they’re so good! I made some adjustments that work better for my family, and I think they’re easy and delicious so I’d like to share them with you now.

Easy Peasy Banana Nut “muffins”

  • 1/2 cup all natural almond butter
  • 1 large ripe banana
  • 1 egg
  • 1/4 cup organic honey
  • 1/2 cup gluten free oats
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 medium apple, peeled, cored and chopped
  • 1/3 cup walnuts or pecans

Preheat oven to 375 and spray a muffin tin with nonstick cooking spray.

Add all ingredients to a high speed blender and blend it up until batter is smooth and creamy. I had to use the tool that came with my blender to tamp all the ingredients down by opening the clear plastic part in the center of the blender lid and smushing everything down until it blended.

Now just pop them into the oven and wait to smell the amazing aromas that will begin to emanate!

Pour the batter into the muffin tins to about 3/4 full and bake for about 15 minutes or until the tines of a fork when inserted into the muffins come out clean.

The muffins are loaded with fiber from the oats, flaxseed, apple, banana, nuts and nut butter. They also have protein from the nuts, flaxseed, and nut butter, and tons of vitamins and antioxidants from the fruit. As far as I can calculate they have approximately 120 calories per muffin. That’s a great bang for my caloric buck!

When I’m serving these muffins or any other sweet baked good for breakfast I always make sure I serve plenty of protein with it. Usually I will make scrambled eggs and bacon with these muffins. If I’m making pancakes or waffles I make fried eggs and bacon or sausage (because I like to break my fried egg yolk all over my pancakes and waffles, and eat them all together). Protein is key to give you energy for your busy day!

Healthy, Easy, Delicious Christmas “Baking”!

Hi friends! I’ll admit something to you right now, I don’t really like to bake. As you know, I LOVE to cook, so it’s somewhat a conundrum that I don’t like to bake, but I don’t. I think it has something to do with the precision required to bake. I mean, you have to measure EVERYTHING because if you don’t, your cakes, cookies or breads will turn into flat, hard hockey pucks. When I cook I employ a more “free form” method, where I throw in a little of this and a little of that, depending on my mood and ingredient availability. You can’t do that with baking, which is one of the main reasons I don’t bake. Also, I don’t like to use sugar and I especially try not to eat sugar, and it seems that most baking is very sugar oriented. At Christmas time though I like to do a little baking with my girls. They like to do it and it’s a nice Christmas tradition, so I employ a method I like to call “faux baking” or “fake and bake”. It’s where I don’t actually do any traditional baking, but we manage to make something tasty and somewhat healthy, and have some fun in the process.

This year we made dark chocolate bark. It’s called bark because it resembles the bark of a tree, and it can be topped with any kind of toppings you’d like- there’s that free form thing that I enjoy so much. I used 60% dark chocolate which is a chocolate that is mostly cacao, therefore, it has less sugar than milk chocolate or other forms of dark chocolate with lower amounts of cacao. I don’t like to use more than 70% cacao because it is so bitter that it does not taste good to eat in my opinion. And remember dark chocolate contains lots of antioxidants, vitamins and minerals so eating this treat is actually protecting your body. It’s a dessert that is actually good for you- you can’t say that about too many other desserts! The toppings that we chose were coconut, chopped walnuts and pecans, and dried cherries, all healthy toppings too. The sky’s the limit as far as the toppings go, you can use peppermint candies, dried fruit of any kind, peanut butter, raisins, sliced almonds, etc etc etc. Just remember that the toppings should be healthy too so that you can keep the overall dessert healthy. You get the picture. Here are my step by step instructions for making the bark, it’s so easy you’ll be shocked!

1. I used 4 large bars of Ghirardelli dark chocolate with 60% cacao. The next step is to get someone to chop the chocolate into smallish pieces- Danielle was my somewhat willing volunteer for this endeavor. If you don’t want to chop, just break it into hunks and put it in a medium sized mixing bowl.

2. The next thing you need to do is to get the chocolate melted. There are two ways to do this. The harder way is to “temper” the chocolate by slowly melting it over a bowl of water heated to between 110-120 degrees. This prevents the chocolate from getting those whitish spots on it that you’ve probably seen on homemade chocolate baked goods. However, since this chocolate dish is covered with toppings you won’t notice the white spots so I say melt the chocolate in the microwave. Do this on low heat for 30 seconds at a time and stir in between times until it’s totally melted. Easy peasy!

3. Take a large piece of parchment paper and spread the chocolate with a rubber spatula to about 1/2 inch of thickness on it. I put a cutting board underneath it to hold the weight of the chocolate and enable me to move the chocolate to other areas of my kitchen.

4. Next is the fun part, adding the toppings! As I said we used coconut, chopped pecans and walnuts, and chopped dried cherries. Just add them right on top of the melted chocolate and put the entire thing into the fridge for an hour to cool and harden.

5. The easy and fun finish to this dessert is to break up the bark into bite sized pieces and enjoy or share with friends and family. We sure had fun making this dessert- and eating it!

By the way, there is very little bark left in my house at this moment, it was consumed by my hungry college students! So that’s it, folks, an easy, healthy and delicious cheater Christmas dessert that looks like you spent hours on it. In reality, though it took probably 30 minutes from beginning to end, which left us with lots of time to spend watching one of my favorite Christmas movies, “Christmas Vacation”! Let me know if you have a “fake and bake” healthy Christmas dessert that you enjoy making. You should definitely make this one though, because eating it won’t weigh you down, and it’s super speedy to make. Making this bark recipe will help you live a life of vitality- with Valerie!

The Easiest Roasted Chicken- I Promise!

I totally mean this too! This is the EASIEST recipe and you’ll impress everyone by making it because it’s delicious. It’s also CHEAP so college students if you live in a house or apartment you can make this and feed yourself and your roommates in an elegant way. It sure beats mac and cheese from a box! I promise you, this is the real deal. Actually making this easy recipe was an accident for me because I had intended to roast a whole chicken but I defrosted a cut up chicken mistakenly. I decided, what the heck, I’ll roast the cut up chicken and I’ll tell you it was just as wonderful as the whole chicken in half the time. I will always do it this way from now on for sure!

First get a big, cut up chicken from the store. Easy so far, right? You can get them on sale frequently, and just throw it in your freezer until you need it. Thaw it out first of course before you try to cook with it though. Preheat your oven to 450 degrees.

Next, cut up 4 potatoes, throw in a third of a bag of small carrots, and a whole onion chopped in large chunks. Cover all those with a quarter cup of extra virgin olive oil (EVOO), a sprinkle each of garlic powder, herbs de province, salt and pepper.

Now take the chicken pieces, put them in the baking pan, and cover it with the same stuff as above, a quarter cup of EVOO and a sprinkle of garlic powder, herbs de province, salt and pepper. Add a half cup of balsamic vinegar to the chicken and put it in the oven, skin side up for 50 minutes uncovered.

Here’s the great thing, at this point you could be absolutely done and serve it the way it is as a complete meal. I like to go a step further and make a gravy for the chicken because my family is saucy and always likes something to dip their food into. Don’t be afraid because gravy is really easy to make so if you have the time, take the next step.

Gravy is not difficult, believe me. You take a tablespoon of butter and melt it in a saucepan on medium heat. When it’s melted take 2 tablespoons of flour ( I use rice flour because it’s gluten free), and add it to the pan and stir until combined. It will suck up all the butter and make a sticky paste. That’s ok, don’t get nervous. I stir it around for another minute to brown the flour/butter paste a bit. Then, you add half of the drippings from your pan of roasted chicken and stir, stir, stir until combined. Next, you add the other half of the drippings and stir again. This is the point at which you make the decision, is it thick enough? Is it too thick? If it’s too thin, add more flour. If it’s too thick, add more pan drippings, and if you’re out of drippings, add chicken broth. I always add salt and pepper to my gravy and let it get a bit bubbly on the stove for a few minutes before serving. Then you pour it into a gravy boat (or just pour it from the pan onto your plates) and serve.

At this point, if you’ve made gravy, pour a little over your meat and veggies. If you haven’t then just serve it the way it is and it’s fantastic either way! The balsamic adds a nice flavor to the chicken and I’m not a big balsamic fan so believe me when I say that it really gives the chicken a lovely flavor. Plus, the balsamic gives the skin a nice dark color, and even if you take the skin off it still looks pretty to serve it that way.

So, that’s my quick, easy and delicious balsamic roasted chicken. Anyone can make it and look like a real chef to their husband, significant other, or roommates. It’s an elegant meal and a complete “one dish meal” too so that means not too much clean up which is always important to me since I can’t enjoy the rest of my evening until my kitchen is spic and span!
