My Oh My, Healthy Pie!

Hi friends! Well, it’s almost Thanksgiving here, and in my third video blog I demonstrate how to make a super delish and healthy pie crust recipe that you have to try! There’s no flour, so it’s gluten free and low carb. In the video I show you how to make the crust, but I also am including my healthy pumpkin pie filling recipe that has NO SUGAR! Top it with some cinnamon whipped cream and you’ll have a wonderful Thanksgiving dessert that is easy to make! Here we go!

Gluten free, low carb pie crust

1 cup walnuts, ground

1 cup pecans, ground

4 tablespoons organic butter

2 teaspoons organic cinnamon

Preheat oven to 350 degrees. Grind the walnuts and pecans in the food processor, and add the cinnamon. Melt the butter in the microwave, then add it to the food processor and pulse for a few more seconds until combined. Bake for 10-15 minutes, or until the crust is a golden brown.

Pumpkin Pie Filling

2 cans organic pumpkin purée

3 eggs

1/2 cup heavy cream

1/2 cup REAL maple syrup

2 teaspoons cinnamon

1/2 teaspoon each of ginger, cloves and nutmeg

Preheat oven to 425 degrees. Whisk eggs together and then add the rest of the ingredients. Beat until combined and bake for 15 minutes at 425. Reduce temperature to 350 and bake for 45-60 minutes until toothpick inserted comes out clean. Let sit until cooled. Garnish with cinnamon whipped cream and enjoy!! Creamy, Healthy, and Easy Soup du Jour!

Hi friends! My second video blog is here for you today. I made a delicious, healthy, and easy soup that you will enjoy making almost as much as you’ll enjoy eating! Here’s the recipe:

Creamy Cauliflower Soup

4 cups chicken stock

1 cauliflower

1 brick cream cheese

1 tablespoon Dijon mustard

4 oz butter

Salt and pepper

1/2 lb bacon

Paprika

1/2 cup chopped walnuts

Chop the cauliflower into small florets, add to the stock and boil until tender. Cut the bacon into small pieces and fry until crispy. Drain and set aside. Add the mustard, cream cheese, and butter to the cauliflower in the stock. Use a hand mixer or a blender to combine until smooth. Add the bacon crumbles, paprika and walnuts as a garnish. It’s creamy and has so much flavor. You’ll love it! Eating low-carb soups like this will help you live a life of vitality- with Valerie!

Hi friends! It’s finally time to present my first video post on the blog. I’m so excited about this, and I hope you enjoy watching it. First, I want to give producing/directing credit to my baby, Danielle, and technical advising to my oldest, Jacqueline. I couldn’t do any of this without them. Next, I want to give a big thank you to all of my readers for your continued belief in me. I’ve included written versions of my recipes to make it easier when you’re making these delicious dishes.

Garlic Chicken

8 boneless, skinless chicken thighs

2 tablespoons extra virgin olive oil

5-10 sliced garlic cloves

Juice of 1 lemon

1/2 cup fresh, chopped parsley

1 teaspoon dried herbs

4 tablespoons butter

Preheat oven to 450 degrees. Salt and pepper the chicken on both sides and place in a buttered baking dish. Sprinkle the garlic cloves and parsley on top of the chicken, and pour the olive oil and lemon juice on top. Bake the chicken for 30-40 minutes, until the chicken is golden brown. So simple and soooo good!

Mashed cauliflower

1 head of cauliflower

4 oz grated Parmesan cheese

4 oz butter

1/2 lemon, juice and zest

Cut the cauliflower into florets and boil them in plenty of salted water for a few minutes. Drain and discard the water. Then put them into a food processor or blender until mashed. Add salt and pepper to taste, and add more butter to the top if you want. They are BETTER than mashed potatoes and so much healthier for you as well!

Hello my friends! Life is pretty cool in Indiana, well actually it’s pretty cold to be honest but it is pretty with the sun, snow and ice.  Here’s what my backyard looks like right now.

Snowy but pretty, right? Anyway, when it’s cold and snowy outside I long for warm, comfortingly delicious but healthy food. My girls texted that they wanted to make dinner together in Jac’s apartment, and did I have any ideas for a good recipe for them? Did I ever! Danzy’s been a bit under the weather since going back to school, so I wanted to give them something that was healing and soothing too. A top priority though was something easy to make for them. I think we succeeded, so come and join me for another episode of “Cooking with Jac and Dan!”

Baked Chicken and Rice

  • 5-6 boneless, skinless chicken thighs
  • 1 tablespoon extra virgin olive oil (evoo)
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 stalks of celery, chopped
  • 1/2 of a large container of organic low sodium chicken broth
  • 2 cups brown rice
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First, make 2 cups of organic brown rice according to package instructions.

Preheat oven  to 375 degrees. Chop onion, carrots, and celery.

Add the evoo to a large frying pan and add the carrots, celery, and onions. Saute until softened. Then, salt and pepper each side of the chicken thighs and add them to the pan.

Brown for 5 minutes on each side. Add minced garlic and the remainder of the salt and pepper.

Add the rice to the pan and chicken broth. Stir until combined.

Pour that all into a baking dish and bake for approximately 45 minutes, or until the broth is absorbed. Enjoy with a salad of mixed greens lightly tossed in a vinaigrette.

IMG_6977That’s all there is to it! The chicken is loaded with protein, has 30% RDA for niacin, 15% of phosphorus, vitamin B6, and Zinc, and 10% of riboflavin. It’s high in healthy monounsaturated fats, and has 6% of your RDA for iron. The chicken and broth are known to have medicinal properties to help fight colds and infections, and the carrots, celery and onion have tons of vitamins as well. The brown rice is a great source of fiber, and protein, along with magnesium, phosphorus, thiamine, vitamin B6, niacin, iron and zinc.

If my college students can make this, I know you can too! It’s delicious, warm, comforting, and healthy. This dish has it all! Jac and Dan’s opinion was that it was easy to make, but they didn’t like how long the rice took to cook (45 minutes!). My suggestion for that is to make a double batch every time you’re making rice and put the extra in the fridge. It will keep for a week so when you need to make dishes that contain rice, it’s ready and waiting for you! They thought it was delicious which is the most important part! One of the healthiest things you can eat!

Hello, friends! Well I have an abundance of tomatoes and peppers in my garden right now, and I’m always trying to think of ways to use the bounty of my garden before it goes bad. One of my absolute favorite ways to use my tomatoes and peppers is to make salsa. I make a delicious and easy salsa that my family raves about. In fact, they fight over it when I make it and it certainly doesn’t last very long in my house. The other day Jacqueline’s boyfriend texted me to ask if I had made any salsa and if so, could he come over and have some. He has eaten an entire bowl of my salsa at one sitting quite a few times! I have made it for years, and in doing so I’ve tweaked my recipe and now I think it’s perfect, but you can be the judge of that.

I have discussed the health benefits of tomatoes and peppers numerous times this summer but let’s review this. 

  
Tomatoes have fiber, potassium, choline, folic acid, vitamin C, lycopene and beta-caratine all of which help prevent heart disease, cancer, and high blood pressure. They lower blood glucose levels, improve overall skin texture, help with depression, etc etc etc. 

  
Peppers are full of vitamin C, capsaicin, B6, Folate, and carotenoids, which help with weight loss, controlling cholesterol, fighting against inflammatory disorders like arthritis, and lowering your risk for breast cancer and heart disease. The benefits are enormous!

  
Salsa also contains onions which have vitamin C and B6, folate, potassium, iron, and flavonoids quercetin and allyl disulphide.  They’re anti-allergic, anti-histaminic, anti-inflammatory and antioxidant all rolled into one! 
Now are you convinced that salsa is good for you? Here’s the bonus- it also TASTES GOOD! It is one of my favorite things to eat and it’s so versatile. You can put it on tacos, eggs, chicken, and steak. You’re really only limited by your imagination. Without further ado, here we go!

Valerie’s kick butt salsa

  • 7-8 tomatoes chopped
  • 1/2 onion chopped
  • 4 jalapeño peppers
  • 1/3 cup cilantro chopped
  • 2 tablespoons minced garlic
  • Juice of 1/2 lime
  • 4 teaspoons white vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

  

First chop the tomatoes, peppers, onions and cilantro. Add them to a large bowl. If you want a mild salsa remove the seeds and ribs from the jalapeños, but I left them in because we like a medium salsa. 

  

Add the garlic to the bowl with the tomatoes, peppers, onions and cilantro. Squeeze half a lime into the bowl. Add the garlic, vinegar and olive oil. Finally, add the salt and pepper and mix to combine all the ingredients. Taste and add more salt and pepper as needed.

I like a rough chopped salsa, but if you life a smoother salsa you can always give it a quick mix in the blender to smooth it out a bit.

Hi friends! I’m going to share with you one of my favorite recipes that I’ve simplified to make my life easier. Now it will make yours easier too! 

Who doesn’t like arroz con pollo? No one I know. It’s flavorful, with juicy chicken and delicious rice. But have you ever seen a recipe? So many ingredients and steps- it’s overwhelming and I haven’t got time for that! So, I simplified the recipe to get all the flavor but not as many ingredients or steps. 

It’s a healthy recipe too, first due to the inclusion of chicken thighs, which I love because they are juicier and more flavorful than chicken breasts. Chicken thighs are an excellent source of protein, zinc and iron compared to chicken breasts. There is only one more gram of saturated fat in thighs, however the additional fat helps keep you more full and satisfied. Good deal! Next, this recipe utilizes tomatoes, peppers and onions which are full of antioxidants and vitamins- healthy stuff! In addition, I also used organic brown rice. If you’re going to eat rice it should be brown rice because it is a whole grain and thus healthier for you- more fiber and nutrients than white rice. 

Now we know that we are putting something good, both for you and tasting, into our bodies let’s get cooking, shall we?!!!

Arroz Con Pollo- my way!

  • 1/4 cup EVOO
  • 2 lbs boneless skinless chicken thighs
  • 1 onion
  • 2 jalapeños
  • 2 teaspoons minced garlic
  • 1/2 cup cilantro
  • 3 tomatoes
  • 1 bell pepper
  • 1 teaspoon cumin
  • 1/4 cup chopped green olives
  • 2 cups organic brown rice
  • 4 cups chicken broth
  • Salt and pepper

  
First salt and pepper the chicken and then use the oil to brown it a few minutes on each side. Remove the chicken and put it aside on a plate for the moment. 

  
Next, take the onions, jalapeños, garlic, cilantro, bell pepper and tomatoes, rough chop them and place them in a blender. Blend on medium until they are liquified. Pour the liquid into the pan the chicken previously occupied and cook it down for a few minutes, until it thickens a bit.

  
Next add the rice and chicken broth to the pan with the thickened liquid in it, bring to a boil and reduce heat to medium. 

  
Add the chicken, cumin, and olives to the pan and simmer for 30 minutes until the rice and chicken are cooked through. Season with salt and pepper to taste.

  
And that’s all there is to it! It really is delicious and tastes like you spent hours working on it, even though you didn’t, but I won’t tell! Also, your clean up is minimal because there’s just the one pan and blender to wash. It’s healthy and easy and delicious, oh my! 🙂

Spice up your meals with my secret ingredients!

Hi friends! I hope you are well today. It’s been a crazy week around here but today is fairly calm and peaceful, thus I have a moment to share my favorite meal saviors with you. 

  
 
Ok so yesterday was a frantic day. I had to take Chewie (my little dog) to the vet for tooth cleaning, mouth x rays and eventual removal of his two main chewing teeth on the top at 7 am (one hour round trip). Then I rushed back home to get Danielle’s breakfast before she went to her nannying job, did laundry, straightened the house, took care of Delilah (my golden) and went back to pick up Chewie after his procedure (one hour round trip). Came home, fed both dogs and took them out, gave Chewie his meds, and then thought, “What the heck are we having for dinner?”  

Now my first instinct was that I definitely wasn’t cooking, I mean, I was tired and stressed from worrying about my little dog and all the running around. But I immediately reversed my thinking because I’m trying not to eat out as much these days. Eating out, even when you make healthy choices, results in higher caloric intake from larger portions and things like a basket of bread on the table than eating at home. So, I pulled my secret ingredients out of my back pocket (or out of my pantry and fridge), and put them together for an easy, tasty and healthy meal which I’m going to share with you right now. I made this recipe up one day out of desperation, and it has become one of my family’s favorite meals. It’s easy enough for my college aged readers to make in their apartments too. Come on and follow me, here we go!

  
Valerie’s Chicken, Chorizo and Black Bean Tacos

  • 1 chopped onion
  • 5 boneless skinless chicken thighs and 2 boneless skinless breasts
  • 2 cans organic black beans
  • 1 jar of Herdez Verde Sauce
  • 1 lb Mexican Chorizo sausage
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First, sauté an onion in a bit of oil in a big pot on the stove over medium heat until softened and translucent. Next, add the chicken, cumin, salt and pepper, and cook until it’s no longer pink. Take the chicken out of the pot and chop it into small pieces. (This step is optional, if you want large pieces of chicken and have no time to chop, skip this step.) 

  

Next, add the chorizo and cook until it is browned. Add the chicken back into the pot.

  
Last, add the entire jar of verde sauce, drain the black beans, and add them to the pot. Heat for a minute or so until warmed. 

  
And that’s it! This is such a flavorful and versatile mixture. It can be served on tortillas, tortilla chips or in burritos. You can eat it by itself too, as I usually do with a little shredded cheese on top. The chicken, chorizo, and beans are an excellent source of protein, and the verde sauce is full of vitamin C. It’s flavorful without being too spicy and it’s SO EASY! Plus I always enjoy a one pot meal because the clean up is a snap. Actually, the pot is chilling in my second fridge right now, just waiting for me to use the leftovers for a few more meals because it makes about 10 servings. AND, all of those ingredients are pretty inexpensive too. I love to save a buck where I can.

   

Since I always have chicken and chorizo in my freezer, and cans of black beans and jars of verde sauce in my pantry, this meal is always on hand for me to make at the last minute, like last night. Chocolate Caramel Popcorn- It’s Delicious, but is it Healthy?

Hi friends! So here’s my challenge, while I’m not a big sweets eater I must admit there are times when I long for a sweet treat. However, it’s pretty tough to find one that’s not full of sugar and other bad things, as well as highly caloric. If you’ve read my posts in the past you know that I LOVE popcorn, and I wanted to find an easy way to make a dessert that incorporates popcorn and nuts, which are another favorite of mine.

I started thinking about chocolate caramel popcorn, like the kind you get from Garrett’s and other popcorn stores, and I thought that really it’s a fairly healthy sweet treat because popcorn has so much fiber and the nuts have protein. However, popcorn shops usually coat the popcorn so heavily with the sugary ingredients that you can’t even see white anymore, so I set out to find a recipe in which the sugary coatings are drizzled instead of completely coated onto the popcorn.

I meandered through the internet trying to find a recipe that had all of these things in them, and found quite a few for caramel/chocolate popcorn. I synthesized numerous recipes into one that I think is healthy, pretty easy and very delicious. Danielle and I had a lot of fun making it, and I know the fam had a ton of fun eating it. In fact, it went over so well I made a second batch two days later, which was immediately scarfed up. I’d like to share it with you now.

Caramel Chocolate Popcorn

  • 5 cups popping corn popped with canola oil
  • 1/2 cup Karo syrup
  • 1/2 cup organic sugar
  • 1/2 cup any kind of nut butter
  • 6 oz dark chocolate
  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1 teaspoon popcorn salt (or regular salt)

First, you need to pop your corn. I use my whirly pop, canola oil and good ole Orville Redenbacher popcorn. I’ve tried MANY other kinds of popping corn but it’s by far the best. I get the non gmo version now though so it makes me feel less guilty. After the popcorn is done, get two big trays, cover them with parchment paper, and spread the popcorn on the trays. Sprinkle the nuts on the tray with the popcorn.

Next, prepare the caramel. Put the Karo syrup and the sugar in a pot on the stove and bring it to a boil, and then turn down to simmer for TWO MINUTES (make sure to time it), stirring the ENTIRE time. Stir in the nut butter when it’s done and immediately pour over the popcorn.

This is my preferred chocolate- Ghirardelli 60% dark chocolate. It's so good, and good for you!

Then, melt the chocolate by breaking the big bar into small pieces and placing it in a big bowl. Put the big bowl over a smaller pot with 2 inches of water in it. Turn the heat onto medium and stir the chocolate until it is melted. This is called a double boiler method and I like it better than melting it in the microwave, as I think it changes the texture and taste of the chocolate. Pour the melted chocolate immediately over the popcorn and caramel mixture on the trays.

Last, take your spatula and stir all the ingredients on the trays until they’re completely combined and then sprinkle the salt over the top of it all.

It is really so yummy, and at 140 calories per 1 and 1/2 cups you can indulge and still feel good that you haven’t totally derailed your healthy eating plan! Herbaceous, Wondrous Herbs! DRY THEM, YOU’LL LIKE THEM!

Hi All! Well I’m super excited today because spring is here and it’s almost time to plant my herbs and veggies for the year. But, I get super frustrated because it seems to take FOREVER for them to grow enough so that I can pick the leaves to use in my cooking. So, you know what I did this past fall? I dried my own herbs and used them in my cooking all fall and winter long. In fact, I’m still using them as I have plenty to last me until my fresh ones are ready this summer! And here’s the thing, my friends, it’s SO EASY TO DO- otherwise I wouldn’t do it :). I wanted to share with you today how I dried my own herbs so that as you’re planning your spring gardens you can think about growing enough herbs to dry for your families. Even if you don’t grow herbs, you can use the organic dried herbs from the grocery store and that’s just fine, but the taste of the ones you dry yourself is SO SUPERIOR to the taste of the grocery store version, it’s not even close. Again I reiterate that It’s super simple, in fact, read on and see!

1. Pull the plants out of the ground BEFORE THE FIRST FROST and store them in a cool, dry place. I used my basement and I laid down paper grocery sacks so the plants wouldn’t make a mess on the counters while they were drying.

2. This is the easiest step- leave the plants alone for about 2-4 weeks until the leaves are completely dry and brittle to the touch. I would check them every week until I felt they were dry enough.

3. Next take the plant and pick all the leaves off of it. I did green and purple basil, rosemary, sage, oregano and thyme. Make sure to keep the sticks and dirt out of the dried herbs. I picked VERY GENTLY so as not to add stuff into my herbs that wouldn’t taste good. Then, you discard all the sticks, dirt and things you don’t need anymore.

4. Take the herbs and bag them up, putting the date and type of herb on the baggie, because believe me they all start to look alike after a while and you’ll be glad you did. Now just use them in your cooking where the recipes call for dried herbs and you won’t believe how much more flavor you will get from these herbs.

Each plant yielded about 2 cups of dried herbs which has been more than enough for my fall, winter and spring cooking. Since this was my first time doing this and I didn’t realize how much each plant produced, next year I’ll definitely have enough to share so if you want some, let me know! But really, if you grow your own herbs, you should try drying the plants in the fall, it’s just so easy and the taste is far superior to anything you can buy. In addition, because I grew and dried them myself I know there are no pesticides or herbicides used on my herbs ever, which helps promote the health and welfare of my family. Hello friends! It’s been a while, hasn’t it? I took a brief hiatus in order to go on vacation with my family, and I feel rested, renewed, rejuvenated, and ready to share more healthy living tips with you, my wonderful readers!

I love a beautiful, juicy baked chicken. One of my favorite foods on this earth!

Today’s tip, besides to go on vacation to feel more rested renewed and rejuvenated, is to eat more chicken this spring. Chicken is one of the best non-vegetarian sources of protein out there, one chicken thigh contains 17 grams of the good stuff, which really helps build muscles. Chicken is also rich in phosphorus and calcium which helps our bones to stay strong, and selenium too which is thought to reduce the risk of arthritis. It contains magnesium which help soothe PMS symptoms (yay for us ladies!), is rich in zinc which regulates testosterone levels (yay for you men too), and is full of vitamin B6 which plays an important role in preventing heart attacks.

I always use chicken thighs in my cooking because I feel they are more flavorful than chicken breasts, and despite getting a bad rap for being less healthy than chicken breasts, are now thought to be healthier for us than breasts. Chicken breasts are lower in fat than thighs, which is why they were previously thought to be healthier. However as you can read in one of my past blog posts, “Fat doesn’t make you fat”, fat is not what causes us to gain weight, carbs cause that. Therefore, fattier thighs will help you feel more full and SATISFIED. Satiety is one of the keys to weight loss or weight maintenance. Personally, when I eat a chicken breast, I am so turned off by the lack of flavor and fat that I can hardly eat it.  However if that is what you like I’m not going to tell you not to eat it, so eat whatever floats your boat, so to speak. If you do cook with chicken breasts instead of thighs, please cook them with skin and bones on to maintain what little flavor they have. The WORST thing possible  in my humble opinion is a boneless, skinless chicken breast- absolutely no flavor or fat at all.

With that being said, I want to share a recipe for a really yummy chicken dish I made right before I left on vacation. It is easy and quick too, and I hope you’ll enjoy it!

Baked Chicken Thighs with Thin Potato Slices

Chicken:

  • 2 LB chicken thighs
  • 1 TSP salt
  • 1 TSP extra virgin olive oil
  • 3 large Yukon Gold potatoes, peeled and THINLY sliced (1/8 inch or less)
  • 1 cup sliced onions
  • 1 TSP minced garlic

Vinaigrette:

  • 2 TBS red wine vinegar
  • 1 TBS extra virgin olive oil
  • 1-2 TSP Dijon mustard
  • 1 TSP dried herbs de province (thyme, tarragon, rosemary)

Preheat oven to 375, sprinkle chicken thighs with a thick salt like kosher or sea salt. Then, make the vinaigrette by whisking all the ingredients together.

Spread a teaspoon of EVOO in the bottom of a large (9×13) casserole pan. Then cover that with the thinly sliced potatoes. Sprinkle them with salt and pepper. Put the onions over the potatoes, then place the chicken thighs, skin side up if you’re using the ones with skin, on top of the onions. Sprinkle the minced garlic over the chicken, pour the whisked vinaigrette over the top of the chicken, and spread it around a little to make sure all pieces are well coated.

After it comes out of the oven all bubbly and delicious! The smell in the kitchen is to die for!

Bake uncovered in a 375 degree oven for 50 minutes for bone in skin on thighs, about 30 minutes for boneless skinless thighs. Remove from oven and let rest for 10 minutes before serving to allow the vinaigrette to thicken.
