My Italian meatloaf is a family favorite!

Hello my friends! I know all of you have this either in your refrigerator or freezer at home, or you’ve gone out and eaten it in the last week, but you didn’t know that what you’re eating is so HEALTHY. What I’m talking about is the humble, but nutritious ground beef.  However, make sure the ground beef you choose is local, grass fed, and has no antibiotics or hormones. This will make it a GREAT choice for you and your family/friends. And let’s face it, ground beef is pretty inexpensive so I can purchase the grass fed type, which is a little more expensive than regular ground beef, and still not break the bank! Plus, I will give you my recipe for yummy, easy Italian meatloaf so you can put a delicious meal on the table. Come along with me now!

Here’s why ground beef is GOOD for you:

1. It’s loaded with nutrients and antioxidants, including zinc, vitamin B6, and alpha lipoic acid. These are responsible for creating antibodies and keeping blood sugar levels in check.

2. A 3 oz. serving of 95% lean ground beef has just 164 calories and 4.5 grams of fat, but offers up 24 grams of protein.

3. Ground beef is rich in iron, a multitasking mineral that boosts energy and keeps muscles working properly.

4. As I’ve stated in my past blog post, “fat doesn’t make you fat”, fat is important for maintaining the health of our bodies. Ground beef gets a bad rap for being too high in fat and cholesterol, but fat is actually good for you, and cholesterol is necessary for our bodies to function properly.

5. Of course as with all types of meat, make sure you choose GRASS FED beef that hasn’t been given antibiotics or hormones. I also recommend purchasing from a local farmer if at all possible so that you can see exactly how they manage their farm and animals. I purchase from Royer Farms, which is a farm in southern Indiana. They bring their offerings to my local farmers market which makes it super convenient for me. However, they also have an online store and will ship anywhere in the US. It’s the best beef, pork, chicken and lamb I’ve EVER HAD. I highly recommend them.

Yay for ground beef! So now that you know ground beef is good for you,  I would like to share one of my favorite recipes for Italian meatloaf. I make it all the time for my family and they never get tired of it. It’s delish and easy too as you’ll see, so here we go!

Valerie’s Italian Meatloaf

  • 2 lbs grass fed ground beef
  • 1 large can pureed tomatoes
  • 2 tablespoons bread crumbs
  • 1 egg
  • 2 teaspoons each minced garlic, red pepper flakes, Italian herbs, and salt
  • 3 tablespoons grated parmesan cheese
  • 2 teaspoons olive oil
  • ground pepper to taste

First, preheat the oven to 350 and prepare the meatloaf by combining the ground beef, breadcrumbs, egg, 1 tablespoon of the parmesan cheese, 1 teaspoon of the olive oil, minced garlic, red pepper flakes, Italian herbs and salt. Mix with your hands until combined and then form into a loaf. Don’t over work the meat or it will become tough and dry. Then, add pureed tomatoes, the rest of the minced garlic, red pepper flakes, Italian herbs and olive oil in a bowl and stir until combined. Pour over the meatloaf and add the rest of the parmesan cheese to the top.

Bake in a 350 oven for 50-60 minutes or until the ground beef is cooked to an internal temperature of 160 degrees. Let it rest for 5 minutes before serving and add extra parmesan cheese if it needs it. Bon Appetit!

That’s my wisdom for the day- ground beef is healthy and can be used in SO many different dishes so experiment and be creative. I hope you try my Italian meatloaf and that you enjoy it. This is EXACTLY the way I feel at the beginning of a new year. I am always very energized by the start of something new. There is so much hope looking forward to the unknown. It can be a little scary too, so for me, though I’m excited I am also in need of comfort. Especially after the end of the holidays which are so HECTIC and crazy, I’m definitely in need of some ME TIME. Let me tell you though that about five years ago, I was so stressed out and burned out that I sat down to make a list of the things I enjoyed and that give me comfort BECAUSE IT HAD BEEN SO LONG THAT I’D DONE ANYTHING FOR MYSELF THAT I HAD TO MAKE A LIST TO REMIND MYSELF OF WHAT I LIKED TO DO!.I don’t want that for any of you, so I’m going to share my list with you now. However, I urge you to make your own list, I’m just giving you a jump start with mine! As we begin a new year and a new chapter in our lives, I wish you a cozy new year! Here we go!

1. Music- My sister and I were talking on the phone this morning and she was mentioning how important music is to her, and she suggested I write about how HEALTHY music can be for you. Now you might think, “How is music healthy for you?”, but it really is. I always say that music soothes the savage beast in me, and I believe it to be true. There have been MANY days when I’m sad or upset, I turn on my music and feel SO much better. My Honey bought me my Bose Bluetooth speaker, which goes wherever I do because it’s cordless, and I link it to all the songs on my phone (over 2,000 at current count), and I have instant uplifting music. I make different song lists and depending on my mood I can “Pump Up”, listen to my “Faves”, or be inspired by my “Inspirational” list. I always say that I don’t collect things, that’s my Mama’s passion, not mine, but I do collect songs!

Another thing I really like to do associated with music is to attend concerts of my favorite singers/bands, and I’ve seen quite a few of them. As much as I enjoy listening to my music at home, I love hearing live music a hundred times more. There is an energy and electric feeling at a live music show, and it is awesome for me. Besides seeing famous bands, I also like to see local bands and musicians around Indy. My Honey and I share a love of classic rock music, and have spent many fun evenings rocking out near home. It’s great couple time too!

2. Baths- This is a newly acquired love for me. I’ve always been a showerer- you know, get in quickly, get out quickly. My older daughter, Jacqueline, loves to bathe and her enjoyment is so infectious that I was inspired to try it. I downloaded some classical music to my phone, lit some candles, put in some wonderful bath products and soaked. I LOVED IT! It was so relaxing and soothing!

Jac loves Lush bath products and when I got some for Christmas for her I also tried them myself. The bath bombs rule! You drop them into your bath and they sparkle and fizz. They are all natural and have different aromas too. They make bathing even more fun! I highly recommend them!

3. My Kindle- I’ve been a reader as long as I can remember. I don’t ever recall a time in my life in which I didn’t have a book in my hand. Reading gives me comfort, a sense of peace, and a satisfaction I don’t get from any other past time. Something else I collect besides songs are books on my Kindle. I got a Kindle about five years ago, after being VERY resistant to the idea of reading on an e-reader type device. I’m an avid reader, and rarely does a day go by that I don’t read something. I also read my morning mass readings and devotions each day. So when going out of town I’d be dragging around tons of books. That’s what convinced me to get a Kindle, for the ease and convenience of transporting and reading books. I read some pretty big books and instead of holding up a weighty book, I am using my very light Kindle.

This Christmas my Mama got me a new Kindle Paperwhite with the built in light and I LOVE IT even more than my old one. I can store tons of books on it and the battery lasts forever! I currently have around 120 books on my Kindle waiting to be read, and probably 300 in the archives that I’ve already read. I told you I collect books! I also save inspirational phrases and things that move me in some way by taking a picture and storing them on my phone like the two pictures above. Reading is life!

So, these are a few of my favorite things, and I’m going to share some more with you in the next few posts. I challenge you to think of some of your favorite things, and ENJOY THEM EVERY DAY! Life is too short to wait for time to do the things that comfort you and bring you peace. I’m going to be reading, listening to music, and taking baths because these things make me feel cozy and comforted. Try these things and you’ll be living a life of vitality- with Valerie!

Hello Friends! I hope you had a wonderful Christmas! I did and I’m really revving up for a healthful and fabulous 2015! One of the ways I’m doing that is by drinking Matcha green tea. Now, I’ve always known that green tea is good for me, though I’ve never really been a tea drinker (see my previous post “HEALTHY coffee is my favorite way to start the day!”), as coffee has always been my morning drink of choice. Lately, I’ve been doing some research on green tea, Matcha specifically, and I was intrigued enough to try it. I have become a believer about the health benefits of Matcha green tea and I’d like to share my findings with you today.

Here’s the thing, all tea (white, green, oolong, black, and pu-erh) comes from the same plant, camellia sinensis, which is a woody shrub native to southern China that is generally kept plucked to its picking height of 3-4 feet.  Now, Matcha is a high quality green tea that is covered before picking to accentuate the color, and then stone ground after being picked and before being sealed into small tins. In Japan, Matcha tea is a very important part of the tea ceremony. It has a somewhat grassy taste, but the type I drink enhances the green tea taste with other flavors like blood orange and peach. It’s definitely important to make sure you purchase high quality Matcha tea, as with all varieties, to ensure you are receiving the maximum benefits.

Matcha green tea is powdered which makes it easier to prepare. You just add hot water if you want to drink it warm, or cold water if you want it as a cold beverage, stir and you’re done! No steeping of tea leaves involved with Matcha tea. Next, I will discuss the health benefits of drinking it, and then I’ll let you know the type I’m currently drinking.

1. Matcha tea is high in antioxidants– Remember that antioxidants are the nutrients and enzymes responsible for fighting against the negative effects of UV radiation, giving us younger looking skin, and fighting off a number of life-threatening illnesses. We know that fruits, vegetables, red wine, and chocolate have antioxidants, but Matcha green tea has FIVE TIMES THE ANTIOXIDANTS AS ANY OTHER FOOD IN JUST ONE SERVING! That makes it worth it for me to drink it!

2. Tons of Catechin, EGCg– Green tea has a specific set of organic compounds called catechins. Catechins are among the most potent and beneficial antioxidants out there. One specific catechin, epigallocatechin gallate (EGCg), makes up 60% of the catechins in Matcha green tea. Out of all antioxidants EGCg is the one most widely recognized for its cancer fighting properties. Matcha contains over 100 times more EGCg than any other tea on the market.

3. Enhances calm but increases energy (What the what?!!)- Here’s how that works, the amino acid L-Theanine in Matcha tea leaves promotes the production of alpha waves in the brain which induces relaxation without the drowsiness caused by other “calming products” out there. It also contains a combination of nutrients that gives increased endurance and more energy which can last UP TO SIX HOURS. It doesn’t have the usual side effects of stimulants, like nervousness and hypertension. Samurai warriors drank Matcha green tea before going into battle because of the tea’s energizing properties, and Zen Buddhist monks and Chinese Daoists drank it as a way to relax and meditate while remaining alert. So it calms you, AND give you energy- naturally! That’s a win win!

4. Boosts memory and concentration– Another side effect of L-Theanine is that it produces dopamine and serotonin which enhance mood, promote better concentration, and improve memory. I need that so that’s yet another benefit for me!

5. Burns calories and detoxifies the body, yet is very low in calories– Drinking Matcha green tea has been shown to increase metabolism and help the body burn fat about four times faster than average, but unlike diet aids on the market does not have any negative side effects like increased heart rate and high blood pressure. Yay for me! Also, the Matcha leaves are covered to deprive them of sunlight during the last three weeks before tea leaves are harvested, which causes a huge increase in chlorophyll production. This not only gives the tea its vibrant green color, but it is also a powerful detoxifier capable of naturally removing heavy metals and chemical toxins from the body. It is very low in calories too. The Matcha I drink has 20 calories per packet and it makes 12-16 ounces of liquid. That’s amazing!

6. Fortifies the immune system and improves cholesterol– The catechins in Matcha tea have been shown to have antibiotic properties, which promotes overall health. Also, one serving provides substantial quantities of Potassium, Vitamins A and C, Iron, Protein, and Calcium. In addition, the nutrients in Matcha may have the ability to inhibit the attacks of HIV on human T-cells. Another cool thing is that people who drink Matcha on a regular basis have lower levels of LDL (bad) cholesterol and higher levels of HDL (good). Men in particular who drink Matcha tea are 11% less likely to develop heart disease than those who don’t drink it.

I am drinking Jade Monk Matcha green tea powder in the cranberry blood orange flavor right this instant and I’m loving it! It doesn’t have the bitter flavor that some teas do, and I don’t have to add any milk, or lemon, or sweeteners like sugar or honey to make it taste delicious. I’m drinking it cold right now, but I prefer it warm. And remember it’s low in calories- one packet contains 20 calories. It’s super easy to make too. If you prefer to drink it warm what I do is use a measuring cup and put 14 ounces of filtered drinking water into it, throw it into the microwave for three minutes and then add it to a drinking glass, pour in the packet, stir and drink. If you’d like it cold, you can add cold filtered water to a drinking glass, pour the packet in, and stir. It’s also really convenient if you’re running out the door to put a water bottle into the fridge to get it cold, pour the packet in, shake and you’re done!

So that’s why I’m loving Matcha green tea right now. The health benefits are numerous, AND NATURAL! I can’t think of any negatives either, which is rare for any product on the market. I purchased the Jade Monk Matcha tea from Whole Foods, but you can purchase it online too. Try it, you’ll like it! It will help you lead a life of vitality- with Valerie!

Hello, my amazing readers! How are you today? I hope all is going well for you! I’ve been great lately, my energy and vitality are at an all time high despite the fact that I’m getting closer to fifty every day, though thankfully that’s still a few years away. I have been trying to determine why I feel so great lately and I think one important reason is my workout regimen. I mix it up with my workouts, so as to work different muscle groups and not get bored with my fitness routine, however I have especially enjoyed the kickboxing portion of my week. I’ve mentioned kickboxing in a previous post but so great is my love for it that I decided it deserved its own post. Therefore, today it’s all about the benefits of kickboxing and why you should choose it as an exercise option.

Kickboxing is a form of exercise that developed from the separate disciplines of martial arts, boxing, and aerobics. Instead of a competitive sport, cardio kickboxing is a great workout that challenges body and mind. It’s a great calorie burner too, a 155 pound person burns on average 372 calories in a 30 minute workout, according to Harvard Medical school. If you’re heavier or workout for a longer period of time you’ll burn even more calories!

Another advantage to kickboxing is that because of the extended period of time spent punching and kicking, it really tones your arms and legs (as seen in the picture of me above). In addition, because of the intense punching and kicking, not only does it tone your arms and legs, but it is great cardio and conditions your heart. Also, because you have to follow a series of moves, kickboxing can improve coordination. Balance can also improve because of the time spent on one leg doing kicks.

My favorite advantage to kickboxing is that the time spent kicking and punching help release stress, anger and frustration. I happen to love all the punching and have been known to “punch out” my frustration, only during the workout of course, with people in the process. I emerge a more peaceful and joyous person so that’s a good thing! It also can help with confidence because I feel like if I ever needed to defend myself, at least I know how to kick and punch now. Of course, it doesn’t take the place of a self-defense class so maybe that’s next for me.

Additionally, kickboxing provides variety to treadmill workouts or other aerobic activity, and variety is the key to avoiding workout burnout, which causes many to stop working out entirely. I also like the fact that you can take a class at a gym if that is how you like to workout, or if you’re like me and prefer the flexibility of working out at home, there are a great many excellent kickboxing workouts on DVD or On Demand on Comcast to chose from.

So that’s one of the secrets to my workout success. Give kickboxing a try. It will help you to have more defined legs and arms, will improve your heart health, increase coordination and balance, it helps to release stress, anger and frustration, and improves confidence. Best of all it burns TONS of calories, 372 burned during a 30 minute workout for 155 pound person. It’s also a workout you can do either at home or in the gym. I like having that choice. And there are many great kickboxing workouts from which to choose, so you can keep on trying them until you find one that works for you. One thing I really love about Sensei Gomez’ workouts is that at the end he guides us through 10 minutes of yoga, so not only do you get your kicking and punching, but in the end you get your stretch and your peace.
