Colds or Flu? This is for you!

Hello, my friends! Anyone feel like I do today? I have cold symptoms- runny nose, scratchy throat, aches, exhaustion, along with stomach virus symptoms as well. I won’t fill you in on those, just suffice to say I feel pretty miserable today! However, I’m planning to feel much better tomorrow because I have too many things to do to let this slow me down for long. How am I planning to feel better in one day, you ask? Good question, my wonderful readers! I am utilizing all of my home remedies, along with my healthy eating habits to make a (close to) full recovery. Then I thought that I probably have readers who are suffering right along side of me now who could use this advice to feel better too. Obviously check with your own physician before using these or any homeopathies or medications. I’m going to share my remedies with you so you can be up and running soon. Read on, here we go!

The strategy is 3 fold, first treat the immune system, second treat the symptoms, and third use food for minimization of symptoms and for comfort. I will discuss each area individually. I always try to choose the healthiest, most natural remedies that I can find to put in my body, because I feel it speeds up the healing time. Sometimes when using cold medicines, you can have more disturbing side effects than the symptoms you are trying to treat! So for me, natural is the best strategy, and that’s what I’m sharing with you today.

First, to treat the immune system I utilize four really important products, Transfer Factor, Reboost (sometimes called oscillococcinum), 100% raw Manuka honey, and Imu-Max. All of these products help boost the immune system so that your body can heal itself. See my previous post entitled “Healing Cold Remedies” for more information about how to utilize these super amazing products.

Second, I treat my symptoms. Now, obviously it depends upon the symptom as to how it is treated. Right now I’m taking Cocculus compositum, which is a homeopathic, for my nausea and dizziness, nux vomica, also a homeopathic, for nausea, and Mucalyxir for my runny nose. If I had a stuffy nose I’d also take a nasal decongestant. The Manuka honey also helps the scratchy throat as well as the immune system so it does double duty! Follow the directions on the packaging for instructions about how to take these products. You can get any of the products listed in number one and two at a good health food grocery store, as well as some wonderful organic fruits, vegetables, and proteins for number three.

SOUP finished

Now on to the third phase of treatment, which is food. My main healthy food remedy for colds and the flu is chicken soup. I have a great recipe for chicken soup and you can see it in my past blog post entitled, “From Soup to Nuts, Soup’s Got It All!”

Chicken soup is hot, which acts as a natural nasal decongestant, it’s full of chicken and vegetables, so it’s got protein and antioxidants that help with healing, and it’s gentle on the stomach for those with flu or stomach symptoms. It’s the thing I CRAVE when I am sick, and right now I’m definitely having a chicken soup craving. If you don’t have the energy to make your own, check out your local Vietnamese restaurant. I have one near my house called Sandra’s Rice and Noodles and they have really good chicken and rice soup. It’s almost as good as mine. 🙂 If you don’t have a Vietnamese restaurant near you, canned chicken soup has been found to be almost as good for you as homemade. Just make sure it’s organic and has minimal ingredients and processing.

Another food I really like when I’m sick is eggs. They are full of protein and vitamins so they help boost the immune system, and they’re pretty bland so they’re gentle on the tummy. I prefer scrambled or soft boiled eggs when I’m sick. I’ll make some scrambled eggs as soon as I am done writing. Read more about eggs in my post entitled, “An Eggceptional Protein!”

Of course vitamin C is critical to the immune system, so if you can tolerate it eat foods like red bell peppers, broccoli and kiwi. Read my previous post, “Beyond the Orange, Better Sources of C!” for more information. I won’t be eating those foods yet because my stomach is not ready for it. However, if yours feels good then go for it!

Finally, and this isn’t a food source but something you definitely shouldn’t neglect, and that’s to get plenty of rest when you’re feeling flulike symptoms. As soon as I eat my scrambled eggs I’m going to lay down because rest allows the body to heal more quickly. So when you’re feeling flulike symptoms make sure to first treat your immune system, second treat your symptoms, and third use healthy foods to minimize yucky cold and flu symptoms. The MOST important thing you can eat!

Hello friends! As the summer has progressed I realized that I’ve slowly transformed the way I eat. As a result,  I have more energy and feel the best I ever have in my life. My skin is glowing and my body feels stronger- and I’m almost 50 years old! 

  
 Wow, this must be quite a radical change to my diet that involves eating gross foods, making weird complicated recipes, or buying expensive products, you might think. That is not the case at all, and I would bet you have the answer right in your own kitchens. It’s really quite simple, I EAT MORE VEGETABLES! Let me correct that, EAT MORE ORGANIC VEGETABLES- it is essential to eat organic whenever possible and vegetables are no exception. 

  
I sound like your mom used to, right, “eat your vegetables and you’ll grow big and strong!” But it is true, and there is compelling evidence for this way of eating. Now I’m not talking about becoming a vegan or vegetarian here. After all, I am a girl who LOVES her beef, pork, chicken-yum! I’m talking about changing the proportions of your plates at meal times. Let me take a moment to explain why vegetables are so good for you, and then I’ll talk about plate proportions. 

  
You might say, “this isn’t rocket science, Vital Val, I know vegetables are good for me.” Of course you do, but do you know just how critical they are for your continuing good health? According to the Centers for Disease Control, “Consuming a diet high in fruits and vegetables is associated with lower risks for numerous chronic diseases, including cancer and cardiovascular disease.”  Well here’s why that is true. Vegetables are good sources of vitamins and minerals, are low in calories, rich in dietary fiber, and contain substances found in plants that help prevent cardiovascular disease and cancer.

  
I just read about a study done recently that showed women who ate 7-8 servings of vegetables and fruits high in flavonoids had a 21% lower risk of ovarian cancer. Flavanoids are super antioxidants found in many fruits and vegetables that support cell formation and suppress poor cellular growth to have an anti-cancer effect. They also support heart health and combat atherosclerosis and Alzheimer’s disease. 

Here’s the cool thing, flavonoids complement vitamin C, which is an essential nutrient for the body, enhancing its effect. It’s like buy two get one free, a super deal! High flavonoid fruits and vegetables: red and orange bell peppers (raw is best for absorption of nutrients, I love to dip them in hummus), strawberries, citrus fruits, broccoli, Brussels sprouts, garlic, spinach, green tea and RED WINE- yay! 

  
And that’s just flavonoids, my friends. Vegetables contain many, many other vitamins, minerals and antioxidants to help support your body. Now, I know I’m not discussing fruit as much as vegetables, however I feel vegetables get a bad rap compared to fruits. Plus, fruits contain sugar, albeit in a natural form, and I try to limit my sugar intake. I usual eat fruit once a day only, and get my other 7 servings required with vegetables. 

BUT, don’t eat french fries and say that you’re eating vegetables. What I do is try to keep the vegetables as close to their original state as possible, and still make them tasty. Here’s an example from the other night’s dinner, which is typical of the way I eat these days. We had pork chops which I marinated in garlic, extra virgin olive oil (EVOO), salt, pepper and herbs from my garden, and my significant other grilled them to perfection.

I boiled 6 ears of corn from the farmer’s market, allowed it to cool and then cut it off the cob and added a little organic butter. Danielle had corn shucking duty that night- her favorite! 🙂

  
Earlier in the day I boiled beets that I bought at the farmer’s market for an hour, cooled them a bit and peeled the skin off which slides off easily in your hands after boiling them. Then I chopped them and added a small amount of butter, salt and pepper. They can be warmed right before dinner which is what I did. I hope you don’t say, “Ew, beets are gross”, because they’re not! Beets are delicious and so good for you- see my past post “And the Beet goes on!”, for more info.

  
I’m really into these tiny potatoes that I bought from Fresh Market because they cook quickly and they’re so tender. I took them, a bunch of asparagus, a whole onion, chopped them, added garlic, EVOO, red pepper flakes, herbs, salt and pepper, and roasted them on a big tray in the oven at 375 for 30 minutes. 

  
So, I had tomatoes, beets, corn, potatoes, asparagus, and onions in addition to my protein. I almost got my 7 veggies a day in ONE MEAL. And as you can see the vegetables dominate my plate which is as it should be for maximum health. Here’s the thing though, it was SO GOOD! The meal was full of flavor and all my eaters loved the meal. I felt full, but not too full, and SATISFIED. These are not dry, boring, tasteless vegetables, folks, but vibrant and delicious additions to your meal. 

Enjoy your vegetables because they’re full of vitamins, minerals, antioxidants and fiber. They’ll fill you up, keep you satisfied, and protect you from all kinds of heinous diseases. Plus they are tasty when prepared properly. When winter comes to the Midwest, I can’t utilize the farmers markets or my garden as the source for my veggies, but health food grocery stores have a great variety of organic fresh and frozen ones to choose from. So get your 7-8 servings of fruits and veggies my friends, but try to make sure most of those are vegetables. Eating vegetables will help you live a life of vitality- with Valerie!

 

Gluten Free by Necessity!

A year ago my younger daughter, Danielle, began experiencing significant stomach aches and gastrointestinal distress. She was losing a lot of weight and was absolutely miserable so our doctor tested her for food allergies and found that she has an allergy to gluten and yeast, among other things. This has necessitated a complete change in the way our entire family eats. When one person has a food allergy it’s very difficult and can be dangerous for the person who is allergic if I’m cooking the things they’re allergic to right next to the gluten free items. Also, I have to be extremely careful not to use the same cooking utensils, for example, when I’m making gluten free and regular pasta side by side I have to be careful not to use the same spoon to stir the two pastas. In addition, I have to be careful not to confuse the non-gluten free item with the one that contains gluten, and often they look exactly the same.

I found that it was easier just to switch the entire family and for the most part we all eat gluten free now. Many gluten free substitutions are available now and they taste very good to us. Most of the time the family can’t tell the difference and don’t even ask what they’re eating, although sometimes Danielle will clarify that what she’s eating is in fact gluten free because it tastes so good that she’s sure I accidentally gave her gluten by mistake! Many delicious gluten free options exist on the market now, especially when I go to a health food grocery store, although the traditional grocery stores now have more gluten free options as well. Health food grocery stores are a better fit for my family so that’s where I shop most of the time. I now use gluten free bread, pasta, bread crumbs, flour,etc, and I carefully read the ingredient list at the store before purchasing items, because I have come to find that MANY things contain gluten that were surprising to me, like tea bags and salad dressing. In fact, quite a few prepared foods contain gluten so I am a very careful ingredient reader in the store, but I don’t use many prepared foods anyway because I prefer to make food from scratch whenever possible.

What’s really convenient is that at my local health food grocery store, Earth Fare, the shelves containing gluten free items are wooden and the ones containing gluten items are metal so I can quickly go down an aisle and visually scan for the gluten free items without having to read every ingredient on every product. My daughter has an app on her iphone called scan avert app in which she enters her dietary restrictions, for her it would be gluten free of course, and then she can scan the barcodes of products and it will inform her whether it complies with her diet. It’s a very cool way to keep her safe!

Another danger for her is when it comes to eating out at restaurants. Restaurants hide gluten in lots of food items so I always make sure she asks for a gluten free menu (which most restaurants have readily available) as soon as we sit down so that she can peruse her choices. She has another useful app on her iphone called “find me gf” which shows her gluten free restaurants around our area. Of course eating gluten free is not just for those with gluten allergies; in fact many people are forgoing gluten these days and feel much better for the absence of gluten in their lives. In fact, I read that 70% of people have some kind of undiagnosed gluten sensitivity so many of us could go without gluten and will probably find that we feel better.

I began to have some gastrointestinal issues this past winter and on the advice of my doctor I began eating gluten free as well. I found that my stomach feels better now and I actually have more energy too! Danielle and I both take probiotics, which helps to aid our digestive tracts to function more effectively, but for both of us the biggest difference has been achieved by cutting out gluten in our diets.
