Hello, friends! It’s a gloomy day in Indiana, and looking at the forecast for the coming week fall weather has returned! I LOVE fall. There are so many wonderful things about fall. Warm days, crisp evenings, apples, bonfires, sweatshirts and jeans are just some of the many things I enjoy about fall. Another thing I like about fall is the return of comfort food to my menus. Don’t get me wrong, I love homegrown produce and grilling in the summer. However, after a while I’m ready for soups, stews and pot roast.

Pot roast is the focus of my blog today, but not just any old pot roast, my yummy, warm, comforting Mexican pot roast. I used my homegrown tomatoes, onions, and peppers, as well as my homemade Mexican tomato sauce to make it. See my previous post, “Roast These For Optimal Nutrition!” to make my delicious sauce, read to the end for the Mexican version!  https://vitalvaldecap.com/2016/08/12/roast-these-for-optimal-nutrition/ If you don’t grow your own veggies, you can easily use produce from the grocery store or farmer’s market. Just make sure to use organic products whenever possible.

When I made my pot roast the other day, it was so delicious that I forgot to take pictures of the finished product; I was busy shoveling it into my mouth! Because Danielle is now in her own apartment, I’ve been diligently freezing leftovers for her to take with her for days when she doesn’t have time to cook. I  froze the leftovers and sent them with Danielle to her apartment, and she was kind enough to take pictures of the plating for me. This roast is EASY to make, just use your crockpot and assemble the ingredients in the morning, and by the time you’re ready to eat it will be done. The smell in your house/apartment by the time you return will be to-die for!

Crockpot Mexican Pot Roast

  • 2.5-3 lb chuck roast
  • 2 tablespoons extra virgin olive oil
  • 1 large onion rough chopped
  • 2 bell peppers, any color
  • 1 large tomato, chopped
  • 2 jalapeno peppers (ribs and seeds removed)
  • 2 cups Mexican flavored tomato sauce or red enchilada sauce
  • 1 teaspoon chile powder
  • 1 teaspoon cumin
  • 2 tablespoons minced garlic
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Place the chuck roast into your crockpot. I used one of these cool crockpot liners that I found at Target, you just line your crockpot with one, add the ingredients, cook, and after you serve your meal you can just throw away the liner. No clean up- fab! 🙂 Add half of the chile powder, cumin, garlic, oregano, salt and pepper directly to the meat. Next, include the extra virgin olive oil.  Pour the sauce on top of the meat. Sprinkle the rest of the chile powder, cumin, garlic, oregano, salt and pepper on the sauce.

Chop onions, peppers and tomatoes, and then place them on top of the meat and sauce. Cook on low for 8-10 hours, or 4-5 hours on high. Serve with green beans, potatoes, or tortillas. Olé!

Wild and crazy garden!

 

Hello, friends! Happy late summer to you! We had some MUCH NEEDED rain this week, and my garden is growing like crazy with the added moisture. The herbs, tomatoes, onions and peppers are even more plentiful than they were! Another thing in my garden that is exploding right now is my tomatillo plant. I’ve never grown tomatillos before, but we found a plant when we were looking at tomatoes. I decided to get one to see what I thought about it. Now, I’m so glad I did! They are a delicious change from tomatoes, and I’ve made some great meals including them. I want to share what I’ve learned about tomatillos, and two different ways to utilize them in dishes.

The tomatillo is actually not a tomato, it is a vegetable from the nightshade family, and is actually related more closely to cape gooseberries. Their scientific name is Physalis philadelphica and they are a staple in Central and South America. They have a light brown husk that will eventually break off when the tomatillo is ripe. The tomatillo has a tart flavor, rather than a sweet flavor like tomatoes.

Tomatillos have high levels of dietary fiber, very few calories (approximately 11), moderate levels of vitamin C, A, K, niacin, potassium, manganese, and magnesium. They also have withanolides and flavonoids like lutein, zeaxanthin, and beta carotene.

Because tomatillos have high levels of fiber they are excellent for digestive health, as fiber can help add bulk to foods and speed their transit through the digestive tract, thereby eliminating constipation, excess gas, bloating, cramping, and even colon and gastric cancers. Fiber is also good at regulating the release of carbohydrates into the bloodstream, thereby regulating blood sugar levels, which is important for people with diabetes.

They also contain phytochemicals called withanolides, which have been directly linked to anti-cancer and antibacterial functions. Antioxidants help combat the effects of free radicals, which are the dangerous byproducts of cellular reproduction, that can kill or mutate healthy cells and turn them into cancerous cells. In addition, the vitamin A, C, and other flavonoids within tomatillos provide other cancer-protective effects, particularly lung and oral cancers.

The vitamin C in tomatillos is good for the immune system and collagen production, and the vitamin A and beta carotene helps with our vision and eye health. The high nutrient, low calorie and low fat in them also help with weight loss, because they help us feel full, acquire the necessary nutrients, and reduce the chances of overeating. The niacin helps us to increase energy, and the potassium is heart healthy. Did I convince you to try them?!!

I made two sauces with my tomatillos, one in which I roasted the tomatillos, and one with raw tomatillos. They’re both easy to make, but the raw tomatillos give the sauce a bright and vibrant flavor, and the roasted tomatillos make the sauce deeper and more intensely flavored. I loved them both, and I can’t decide which one I like better so I’m sharing them both with you.

Roasted Tomatillo Sauce

  • 10 tomatillos, peeled, rinsed and cut in half
  • 5 jalapenos, seeds and ribs removed for a milder sauce
  • 1/2 cup of chopped onion
  • 1/2 cup chopped cilantro
  • 1/4 cup of water
  • tablespoon minced garlic
  • 1 teaspoon salt

Preheat broiler in oven. Peel tomatillos and MAKE SURE TO RINSE THEM AFTER PEELING. Tomatillos are very sticky and must be rinsed to remove the stickiness.

Chop them in half and put them on a baking sheet with the chiles. Roast them 4 inches below a very hot broiler until darkly roasted, even blackened, about 5 minutes. Flip them over and roast the other side, 4-5 minutes more. They will be splotchy and blistered, and that’s perfect.

In a blender or food processor, combine the tomatillos, chiles, juice from the baking sheet, cilantro, water, onion, and salt until it’s a rough puree. Serve immediately or store it in the fridge.

I served the sauce over a pork tenderloin I made in the crockpot. I added shredded Mexican cheese, and served with corn tortillas. It was smoky and yummy!

To make the sauce without roasting the tomatillos, just throw all the ingredients into the blender or food processor, and blend until coarsely pureed.

The sauce is a brighter green when the tomatillos are left raw, and it has a more tart, mild vinegar flavor, but it’s still really, really good. I served it over ribeyes we had made, and added black beans on the side.

That’s all there is to it! It’s a versatile sauce, whether raw or roasted, and can be used on tacos, nachos, burritos or enchiladas, on pork, chicken, beef or seafood; really any way you can think to use it. A cornucopia of tomatoes!

 

Hello friends! These are the “dog days” of summer, aren’t they? At least they are in Indiana. According to dictionary.com, dog days are “the sultry part of the summer, supposed to occur during the period that Sirius, the dog star, rises at the same time as the sun: now often reckoned from July 3 to August 11. A period marked by lethargy, inactivity, or indolence.” Well since most of the children are back in school, I’d say the inactivity part has passed, but the heat certainly causes me to feel a bit lethargic!

However, I have no time for lethargy because my garden is producing in full abundance right now. It is certainly not lethargic either! I have more tomatoes, peppers and onions than I know what to do with, and I am very determined not to waste one thing that comes from my garden.

So, I’ve gotten creative at different ways to utilize all of my fruits and veggies, because there are only so many sliced tomatoes you can eat before you get tired of them. I started thinking about making my own tomato sauce. However, I wanted to roast them because I thought it would add a depth of flavor that non-roasted tomato sauce would not have. I began to look around for recipes and combined a few to create my own version of roasted tomato sauce.

But here is another benefit to roasting the tomatoes to make a sauce besides taste, they are MORE NUTRITIOUS than an unroasted tomato! I’m totally serious! I didn’t know that, I only knew I liked the taste better. When tomatoes are roasted or cooked in a sauce, it helps to break down the plant cell walls, allowing us to better absorb the antioxidant lycopene. This nutrient helps safeguard our cells from environmental damage, may protect us from certain cancers, and is heart-friendly. Tomatoes do lose about 10% of their vitamin C from the cooking process, however the benefits of the increased absorption of lycopene far outweigh the loss of vitamin C. Some vegetables like peppers and broccoli are healthier when eaten raw, because cooking causes them to lose essential nutrients. This is not the case with tomatoes, as they are best for you when eaten roasted or cooked.

Now that you know how good roasted tomatoes are for you, I’m going to share my roasted tomato sauce recipe with you. It is SO AMAZING, if I do say so myself. I’m eating it right now over an Italian sausage with a piece of Colby Jack cheese melted on it. The sauce is creamy and it’s flavor can best be described as spunky! Please enjoy!

Valerie’s Roasted Tomato Sauce

  • 30 tomatoes, halved
  • 1 cup extra virgin olive oil (EVOO)
  • 1/2 cup chopped onions
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons basil, chopped
  • 1 tablespoon oregano, chopped
  • 1 tablespoon rosemary, chopped
  • 1/2 cup balsamic vinegar

Preheat the oven to 325 degrees. Take the halved tomatoes, core them, remove the seeds, and place them on 2 large sheet pans halved side up. Coring and removing the seeds is optional, and makes a more concentrated sauce. If you’re short on time, just halve the tomatoes and place them on the sheet tray. Make sure you add a half hour more to the cooking time because the tomatoes with the seeds and cores will have A LOT more juice to them, and therefore will need to cook a half hour longer. I sprayed my trays with organic olive oil cooking spray so the tomatoes wouldn’t stick, which would aid in my clean up.

Next, get a big bowl and add the rest of the ingredients to it. Microwave the bowl for 2 minutes and pour the contents equally over the tomatoes. Use your hands to make sure the oil mixture gets all over the tomatoes.

Bake the tomatoes for 2 hours (2 1/2 hours if you didn’t remove the seeds and cores). Rotate the pans halfway through the baking process. Then, turn the oven up to 400 degrees and roast them for another 30 minutes. They will turn kind of blackened but that is PERFECT. You won’t believe how wonderful your house will smell while you’re doing this.

Now you have two options, you can either use a food mill and pulverize the tomatoes that way, or use a blender or food processor to beat up the tomatoes. I started using my food mill, but I felt it was leaving too many tasty bits unused, so I switched to using my trusty Vitamix. What I did was pour all the tomatoes into my blender, and blend on medium for about 20 seconds. Then, I poured the blended tomatoes into a pot, and cooked the roasted tomato sauce until thickened, about 15 minutes. I tasted it, added a 1/2 cup of red wine, and another 1/2 teaspoon each of salt and pepper.

Here’s a cool thing, the trays will have all kinds of bits on them and you may think, “oh my goodness, clean-up will be a huge ordeal!” but fear not, dear readers, I have a great and easy clean-up method that adds to the flavor of the sauce too. Take a cup of water and microwave it for 2 minutes, pour it onto the sheet pan, and wait a minute. Then, take a spatula, scrape off the bits, and pour the water/tasty bits into the sauce. It definitely adds flavor and makes clean-up easier too! That’s a win-win, my friends!

This sauce is so versatile, you can use it on pasta, to make Italian sausage sandwiches, as a sauce for steaks, or the way I used it the other night, over my healthy chicken Italiano. I took chicken thighs, salted and peppered them, and cooked them on the stove in a little EVOO. After they were cooked through, I added a piece of prosciutto and provolone cheese to the top and cooked for another minute until the cheese melted. Then, I poured the sauce over the top and served with fresh green beans- DELIZIOSO!

You can also turn this sauce into a Mexican sauce by adding chili powder, cumin, and jalapenos, and use it on enchiladas or in a taco sauce. Another variation is that you could add croutons, and turn it into a tomato soup. This sauce is so amazing, the sky’s the limit with it. You should definitely make this sauce, and if you make something super cool with it, let me know! It’s Lent for me, and many other Christians in the world. Lots of us follow the Lenten custom of not eating meat on Fridays until Easter. Now, not eating meat does not mean fish, because fish is not meat, even though fish is meaty. I get many questions about this from  people who don’t follow this custom, and I know it has a biblical foundation, though I’m not sure what it is exactly. Anyway, I think it’s a healthy habit to get into regardless of your religious affiliation, and I try to eat fish at least 2 or 3 times a week. In today’s post I wanted to let you know why fish is so great for you and then give you a REALLY SUPER EASY RECIPE FOR A SUPER DELISH FISH DISH- I’m so rhymey today, aren’t I?!

Ok, so why is fish so good for us you ask? Great question, my friends! Well, first it’s low in calories and high in protein, which is always a good thing. Mostly, though, the reason fish is so good for us is because of Omega 3’s. Omega 3’s are fatty acids that improves the immune system, and helps prevent blindness, depression, rheumatoid arthritis, asthma, lupus, kidney disease and cancer.

The fish with the highest amounts of Omega 3’s are farmed Atlantic salmon, tinned anchovies, sardines, Pollock, oysters, Albacore tuna, wild caught Salmon, farmed rainbow trout, and my old friend canned light tuna. However, even white fish has a significant amount of Omega 3’s, so if that’s the only kind of fish you like, eat it and enjoy the Omega 3’s! The recipe I’m going to share with you next can be made with any kind of fish that you would like to use. I just always say to use the freshest fish available in your area and don’t be afraid to ask the butcher which fish is most fresh. He/she will lead you in the right direction. Here we go!

Easy Peasy Fish and Salsa

  • 1/4 cup chopped, pitted green olives
  • 2 Tbsp capers
  • 1 pint cherry tomatoes
  • 1 handful parsley or cilantro, roughly chopped
  •  Juice of one lime
  • 1/4 cup extra virgin olive oil
  • Fresh or pickled jalapenos chopped (optional)
  • 4 fish filets 4-6 oz each
  • Salt and pepper to taste
  • 4 large sheets aluminum foil

1. Make the salsa first- Preheat the oven to 400 degrees or heat your grill to medium low. In a mixing bowl, combine the olives, capers, cherry tomatoes, parsley or cilantro (cilantro is my personal choice), lime juice, olive oil and jalapenos if using.

2. Assemble the packets- Fold four sheets of aluminum foil in half lengthwise, and then unfold and lay them on the counter. Season each fish fillet with salt and place it on one side of the foil, parallel to the crease. Top each fillet with one quarter of the salsa. Fold the foil over so it covers the fish completely and then roll the edges tightly to seal the package.

3. Cook the fish- Place the packets on the grill or in the oven. cook the fillets until their done all the way through, about 8-10 minutes on the grill, 20 minutes in the oven. Slash the packets open just before eating.

This is flavorful and simple, however it will definitely impress whoever you’re serving. It seems like a much more complex dish because of the flavors, but because of the quick prep and cook time you can seriously be ready to eat in 25 minutes, no joke. Make some brown rice to go along with this, serve with guacamole and you’re done!

So there you go, my friends, a little info about fish and one super tasty recipe for a simple fish dish. Remember to eat fish at least once or twice a week, and not just because it’s Lent. Super Healthy Superbowl Sunday? It’s Super Easy!

Ok, here’s the deal, did you know that Superbowl Sunday is the NUMBER ONE EATING DAY OF THE YEAR? Yes, that’s right! More food is eaten on this upcoming Sunday than any other day of the year! Even Thanksgiving is a distant second to Superbowl Sunday in terms of calories. And get this, OVER 6,000 CALORIES ARE CONSUMED!!! When I read that statistic I was stunned. I also read that the week before Superbowl Sunday is also at the top of the list in terms of calories. I guess anticipating the gorge fest brings on early pre-gorge fests.

I read this morning that the most popular food item served at Superbowl parties is vegetables! What?!!  I guarantee you that people aren’t eating 6,000 calories of veggies on Sunday! Though, vegetables are the most popular food item, we finally get to the root of the problem when you hear the most consumed food items on this day, which are chicken wings and pizza. According to Fox Sports, Pizza Hut will deliver 2 MILLION PIZZAS with 1,700 orders per minute occurring shortly before kickoff. One slice of pepperoni and sausage pizza is 350 calories and three chicken wings are approximately 255 calories so you can see how this meal is problematic calorically. That’s before the beer or margaritas are consumed, and the chips, dips, and desserts too! Can you see now how you can easily get to 6,000 calories with a four hour plus game?!!

So you see the concern that I have, don’t you? And you should be concerned too! With all of this in mind I began to think about my wonderful readers and how I could advise you to make good choices on Sunday (and every day, of course!). The first scenario is the easiest one, which is if you are the one hosting the Superbowl party. Then you can control the menu and preparations. You can also control what your guests bring, that is if they call to ask you.

The second scenario is more difficult- if you are someone else’s party guest. Then, you have MUCH less control over what is served and your choices will be more limited to what is available. However, I have a solution for you that I hope you’ll like (and it’s not to starve yourself by the way, I’d never say that!). The solution is CHILI!! Specifically, you call host of said party and ask him/her if you can bring something to contribute to the party and when he/she says yes then you offer to bring a pot of chili. It won’t be turned down because EVERYBODY loves chili! This is how you will eat safely and healthily on Sunday.

Why is chili such a good solution you ask? Well I’ll tell you, it’s because chili is healthy and filling! The beans and meat provide a nice serving of protein, the tomatoes and tomato sauce a great serving of vegetables, and the beans give you a nice punch of fiber which fills you up and helps you stay full. Calorie wise you’re better off with chili too because one serving (one cup) is only 259 calories and you will feel FULL after you eat it. If you have a cup of chili, one (only one!) beer, a handful of tortilla chips and guacamole you will only have consumed about 600 calories. That’s a FAR CRY FROM 6,000!! Plus all of the nutrition you will have gained from this meal is light years away from the nutritional wasteland of greasy pizza and fried chicken wings!

I’m going to share my recipe for chili, which I think is simple and fabulous. I’m also including the MOST DELICIOUS SALAD RECIPE EVER which I just made up the other night when I was in the mood for something different. I served the salad with my chili and I think the Mexican flavors in the salad really complemented the similar flavors in the chili. Bring the salad and the chili to the gathering and you will make some friends I promise you! If it’s your own gathering make my salad and chili, add some salsa, guacamole and tortilla chips and you’ve got a HEALTHY, DELICIOUS PARTAY!

  • 2 lbs ground beef
  • 1 large can (28 oz) pureed tomatoes
  • 1 large can diced tomatoes
  • 1 onion diced
  • 2 cups water
  • 2 tablespoons minced garlic
  • 2 big cans (28 oz) kidney beans
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First, sauté onions and minced garlic in a dash of extra virgin olive oil, then after about 3 minutes, add the ground beef and cook until no longer pink. Next add all the rest of the ingredients and either put that into a crockpot and cook on low for 6 hours, or leave it on the stove on low heat, stirring frequently until thick and bubbly. You may need to add more spices as it cooks so taste it every once in a while. And that’s all there is to it! Done!

The most delicious salad ever

  • 1 bag of organic lettuce greens of your choice
  • 1 jalapeno pepper, deseeded and with insides removed, chopped
  • 1 stalk of green onion chopped
  • 1 medium tomato chopped
  • 1 handful of fresh cilantro leaves, rough chopped
  • 1/2 avocado chopped
  • 1 lime
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Take the first 6 ingredients and add them to a large bowl. Then in a smaller bowl take the next four ingredients and make the vinaigrette by squeezing one lime into the bowl and then whisking in the olive oil until the two ingredients are combined. Then add the salt and pepper, stir, add the vinaigrette to the salad and toss. This one’s done too! The creaminess of the avocado makes the salad so rich and the jalapenos, since they’ve been deseeded and the insides removed, are no longer really spicy, just fruity and flavorful. The cilantro adds that delicious freshness too. And the lime makes the vinaigrette really pop with flavor! It’s just really good!

And that’s how you avoid consuming 6,000 calories on Sunday, my friends! If you make a pot of chili and a delicious salad you will feel satisfied and know you’ve eaten something really good for your body. I know you can do it! In my last post, I mentioned that I’m not a big believer in New Year’s resolutions. So often, it seems a resolution is yet another thing on a much too long to do list, and when it is not followed through with, it leads to a sense of sadness and failure. Definitely not the way to go into a new year! Now that’s not to say that I don’t advocate eating healthily and exercising regularly, if you’ve read my past blog posts you know I am all about that. It’s just more about being good to myself, and setting aside regular time for ME! I’m definitely not very good at that. Are there any others out there who are the same? It seems I’m so good at being there for others, but not so good about that for myself. With that in mind I am trying to be better about doing things just for me, and I mentioned a few things on my list of things I love to do in my last post, “New Year’s resolution? Nah, just be good to you!”. Listening to music, reading my Kindle, and taking a luxurious bath were some of them, but there’s more, my friends, and I want to share some more with you now.

1. Spending spiritual time- In past posts, I have discussed my time spent each morning in meditation. I try to do that every morning without fail and most days I achieve that- at least 5-10 minutes worth. That’s only part of my spiritual time though. My favorite way to deepen my faith is by attending church services at my parish, Holy Spirit Geist (HSG).

It is a young, vibrant parish and has rejuvenated my faith. I especially like to attend with my daughters, but that isn’t always possible these days since they’re attending church in their college town now. Still, they come back to go to church with me as often as they can, because they find the atmosphere at HSG as uplifting and inspiring as I do. I especially love the Sunday 5 pm mass, because they have a band and they play contemporary Christian music which I really like. My advice would be that no matter what beliefs you have, spend time with other people who believe similarly because it really helps me feel in communion with humanity and with a higher power too.

Another thing that uplifts me is to pray a daily rosary. For those of you who aren’t Catholic, the rosary is a series of prayers to Mary. We do not WORSHIP Mary, which is a popular misconception about Catholics, we only worship God but we do hold Mary in reverence as the mother of God. We pray the rosary for her to intercede for us to God on our behalf. I use a rosary made of Swarovski crystals that my Mama gave me, and it gives me such a loving feeling to use this gorgeous rosary given to me by MY beloved Mom to pray to Jesus’s beloved Mom!

Anyway, I began praying a daily rosary about 10 years ago and I prayed it with my daughters on the way to school. It’s a rhythmic series of prayers (1 Our Father and 10 Hail Mary’s followed by a Glory Be and a Fatima prayer- 5 times), and each day corresponds to a different set of mysteries about Jesus. I truly love to pray my rosary, and now I usually do it as I first awaken and am laying in bed trying to wake my brain up. Praying the rosary brings me so much comfort and peace. There have been MANY times in which I awaken in the middle of the night, and all my fears and concerns keep me from going back to sleep. I pray my rosary, and before I know it I’m calm and comforted back to sleep. I also say my prayers every day. I used to pray with my girls, and now I pray by myself in the morning after my daily rosary. I pray for just about everyone I can think of, all my family members, friends, and all of the sick and suffering I know about. It’s my way of helping those I love, and it makes me feel really good about myself.

2. A good meal and glass of wine- As you know if you’ve read my past posts, I LOVE a good meal accompanied by a nice glass of wine. I love to make the meals usually, however I’m a sucker for a delicious dinner that someone else has made. Since I cook so much, it is the ultimate luxury to have someone else cook for me, or to go out for a nice meal. Now, I said go out for a nice meal, not fast food which I in no way consider a nice meal. However, it doesn’t have to be FANCY to be a nice meal. I also love Chinese, Mexican, Thai, Vietnamese, Sushi, etc, etc, etc which are more simple meals. The only requirement is that the food HAS to be delicious! One of my favorite meals in Indianapolis is at a Vietnamese restaurant called Sandra’s Rice and Noodles. My roommate from college, Terri, took me to this restaurant the first time, though now I’ve been there many times. Their Pho is one of the most delicious things I’ve ever eaten, granted everything there is wonderful and I’ve never ordered anything I haven’t loved! It’s a very simple restaurant in which you can enjoy the most amazing meals! Eating is one of my greatest pleasures and even though I eat mostly healthy food I find that I savor and enjoy my food more now than I did when I ate less healthily. I go more for flavor and quality rather than quantity, which means that I eat less than I did and I enjoy it more. That’s a win-win!

Also, the wine doesn’t have to be expensive to be delicious, and I’ve had many great $10 bottles of wine that I’ve really savored. One of my favorite $10 bottles of wine is Kris Pinot Grigio and if you like Pinot Grigio I think you’ll enjoy this brand. Plus you can’t beat the price!

My favorite Pinot Grigio however is Santa Margherita which my stepmom introduced me to. It’s more like $22 for a bottle so I don’t drink it every day, but when I do I’m in heaven! It is truly a fine glass of wine. And remember, when you’re eating or drinking the really good stuff a little bit goes a long way, so a glass or two is all you need to satisfy.

So these are some of my favorite things- my church Holy Spirit Geist, my Swarovski crystal rosary beads given to me by my mom, praying my daily rosary, a delicious meal like I’ve had at Sandra’s Rice and Noodles, and a good glass of wine like Santa Margherita Pinot Grigio. These are things that give me comfort and help me be good to myself. I’ve got more for you so tune in for my next post to see what else I have. I hope you are good to yourself today. So the holidays are upon us, aren’t they? 9 more days until Christmas and a little over two weeks from the big drinking holiday, New Year’s Eve. Pretty much every adult I know over 21 will ring in the new year with a cocktail or two. Being an advocate for healthy living, I wanted to let you know what I feel are the five healthiest alcoholic beverages to drink, not just on New Year’s Eve, but any time of the year. Now, healthy to me means that not only is the cocktail low in calories, but it also has positive health benefits, and it tastes good too. That’s why you won’t see VODKA TONIC on my list. Yes, it is low in calories, but other than that it basically has no nutritional value and no flavor. Hence it is not a healthy cocktail in my book.

Here’s the thing though, QUALITY IS BETTER THAN QUANTITY when it comes to the healthiness of an alcoholic beverage. No cocktail is healthy if you have more than 2 of them, and if you get to four or more than it becomes toxic to your body. So my advice to you is, BE A MODERATE DRINKER. That’s the best thing you can do for your health. With that in mind, I will share my healthy cocktail list with you.

1. Red or White Wine- This one is one of the healthiest and my favorite so I’m going to call it the number one on the healthiest cocktail scale. First, it contains 5% of your daily nutritional requirements for iron, 9% potassium, 5% magnesium, and antioxidants like flavonoids and nonflavanoids. Resveratrol, which is a nonflavanoid, reduces blood clots and lowers bad cholesterol. Calories range from 110-130 per glass so it’s not a highly caloric option. Taste wise you have many options in flavor. Whether you like dry or sweet, red or white, you can find a flavor that pleases your palate.

2. Michelada- I recently tried one of these cocktails at a delicious Mexican restaurant near my daughters’ university and I loved it. It’s a much more interesting and flavorful twist on a Bloody Mary (which is also a healthy cocktail option for you!). It’s spicy, salty, and so refreshing! The ingredients are beer, limes, Worcestershire sauce, Valentina hot sauce, black pepper, sea salt, and ice. Now, beer is not the healthiest ingredient in a cocktail (beer= carbs), but if a light beer is used it’s not too bad since most come in at under 100 calories. The Michelada I had was made with Modelo Especial which though it isn’t a light beer is really delicious, and I only had one cocktail. I don’t even like beer but I really liked this alcoholic beverage. It also contains lime juice which has tons of vitamin C. Vitamin C helps your immune system and neutralizes free radicals that damage our tissues. The hot sauce in this cocktail is made from chili peppers, which contain capsaicin (helps in fighting certain cancers). Chilis are used to aid digestion, reduce appetite, and increase metabolism. The sea salt in the drink helps replenish electrolytes, and the Worcestershire sauce has vitamin B6 (builds red blood cells and maintains nervous system function) in it from the molasses, garlic, cloves and chili pepper extract contained within the sauce. It also has antioxidants, vitamin C, vitamin K (protects against hemorrhaging and bone loss), and niacin, which aids in digestion. Try it, you’ll like it!

3. Manhattan- I’m not much of a mixed drink girl, but I know many of you are out there so in honor of all of you mixed drink fans, I’ve included the Manhattan as one of the best tasting and healthiest mixed cocktails. The ingredients are bourbon, sweet vermouth and Angostura Bitters. Bourbon is flavorful and only 97-110 calories per 1.5 ounces, vermouth is a wine fortified with herbs and contains 45 calories per ounce, and bitters are alleged to have restorative properties and are used to calm an upset stomach. It’s strong so only one cocktail will be plenty in this case. If you like a mixed drink, this is the one for you!

4. Mimosa/Bellini- Mimosas are champagne and orange juice, and Bellinis are champagne and peach juice. Now these are not particularly low cal drinks because of the juices, but they are delicious and satisfying, therefore one cocktail will be plenty. I had a cocktail while in Las Vegas that contained an Italian champagne called Prosecco, berry puree, and lemon juice that was delicious and so pretty. it was called Berry Prosecco Fizz so I’m including that drink in this category too. All of these drinks contain champagne, which is sweet and slightly caloric at 90-110 calories per glass, but champagne is a wine so it contains a ton of antioxidants. Orange juice and peach juice contain many vitamins and minerals that are great for you. One tip I got was to make the Mimosa with grapefruit juice instead of orange, because grapefruits have more fat burning properties than oranges do. Sounds delish to me!

5. Guinness- I’m not much of a beer fan as I said above, but I know many beer fans, so folks this one’s for you! Guinness is low in calories despite how thick it is, 128 calories for 12 ounces. Also, Guinness is made from more whole grains than most regular beers so it’s full of nutrients. Guinness is shown to have similar antioxidant properties to red wine, and a University of Wisconsin study showed that drinking it helps reduce blood clots and heart problems. Good deal!

Some others healthy alcoholic beverages that could’ve made my list are Sangria (wine and fruit), Bloody Mary (vodka, tomato juice, horseradish, Worcestershire sauce, Tabasco, celery, salt, pepper), and bourbon/whiskey and soda, all healthy drink choices. Remember though, that moderation is the way to go here, and please don’t excessively drink on New Year’s Eve or at any time. 2 drinks or less is the way to go, and the drinks that are on my list are so flavorful that you don’t need to drink a lot to get a delicious flavor and be satisfied. Ok, so once Thanksgiving is over and you have mountains of turkey left- or you’re a college student and your mom has sent you back with piles of turkey- what do you do with it? I mean, there are only so many days you can eat turkey, mashed potatoes and gravy before you get truly sick of it! Well, I am here to help you! I will be sharing my favorite turkey leftover recipes with you this week so you can mix it up with some different meals you will enjoy. They are easy too, so you can spend time with family and friends without toiling for hours in the kitchen, we already did that on Thanksgiving and we need a break! The great thing about these recipes that I’m sharing is that you can use any leftover meat to make these recipes great, so if you made a ham, steaks, or any meat they’ll taste delish!

Easy Turkey Enchiladas

1. Preheat oven to 350 degrees. Then, warm up leftover turkey (or any meat) in the microwave to get it warm.

2. Take a can of crushed tomatoes and a can of diced tomatoes, add a teaspoon of cumin, chili powder, salt and pepper and simmer until thickened and bubbly- 10 minutes.

3. Take half of the tomato sauce mixture and a cup of shredded cheese, and add it to the warmed meat- I also added some black beans to it but if you don’t like them, they are optional. Give this a quick stir to combine the ingredients.

4. Prepare the pan by swiping a little tomato sauce across the bottom. I do this so that the enchiladas won’t stick to the bottom of the pan when I try to remove them after baking.

5. Next, take tortillas, put 1/4 cup of meat mixture into them, and place them with the opening side down into the pan. Fill them until the pan is full, as you can see the meat I had made 6 enchiladas.

6. Cover the enchiladas with the rest of the tomato sauce and a half bag of shredded cheese, whichever kind you like the best. Bake the enchiladas for 30-40 minutes, or until the cheese is melted and bubbly. When they’re done, take them out and let them cool for a few minutes so you can lift them from the pan without the cheese sliding all over. There’ s nothing worse than an enchilada with no cheese on it- no fun!

7. I topped the enchiladas with a sprinkle of chopped cilantro for freshness before serving but that is also optional. Add a salad to get your veggies in and you’re good to go!

So that’s it. A super easy and delicious enchilada recipe for you to enjoy with your leftover turkey, or any leftover meat. HEALTHY coffee is my favorite way to start the day!

Coffee11This morning after a late night at the Fleetwood Mac concert, which was such fun by the way, I really needed my morning coffee. My coffee is a necessity to give me a much needed boost of energy in the morning. It’s also warm, homey and comforting to me. It really is a hug in a mug! I have previously spoken of my love for coffee and it’s benefits but today I want to talk about the stuff that goes into your coffee and how important it is to keep those things healthy. Otherwise, you can add HUNDREDS of calories to your coffee, and it can easily go from a healthy start to your day to a caloric wasteland. Besides being high in calories, some of the things you can add to your coffee can be downright BAD for your health, full of chemicals that can’t even be pronounced. I wanted to use this opportunity to save you all the calories and chemicals, and show you what I use so that you can benefit from my experience and drink delicious, HEALTHY coffee.

1. Start with high quality coffee- If you can find organic coffee, by all means use that. I have an espresso machine that I’ve used for the last few years. I really enjoy espresso but I recognize that many people don’t like the intensity of it, so use whatever works for you. But for me the first step is to use really good coffee/espresso that doesn’t have any artificial flavors or additives in it (artificial flavors=chemicals). Nespresso sells high quality, sustainably raised coffee in their espresso cubes. You put the cube into the machine and it makes delicious espresso.

2. Add REAL cream- I don’t use artificial creamers in my coffee. I will only use half and half, but the cool thing is that I use a milk frother. I pour the half and half into the frother, press the button, and it whips the milk up into a foamy deliciousness that makes me feel like I’m getting my coffee from a professional barrista! Of course I only use organic half and half also. I use an organic hazelnut half and half and add a splash of that to the regular half and half and whip them together so I get a bit of sweetness into the cream.

3. NO FAKE SUGARS- As I’ve said in previous posts, artificial sweeteners are bad for your health in MANY ways. They are full of chemicals and are NOT a component of a healthy lifestyle. In an effort to keep the calories down and impart sweetness to my coffee, I use a small splash of hazelnut half and half as I said above, and I also shave a small amount of Mexican hot chocolate into my coffee. I use a very small grater and shave no more than a half teaspoon of it into the coffee before adding the cream. I let the chocolate melt into the coffee, and then I add the cream and stir a few times to combine everything without adding too much air to take the fluffiness out of the foam.

4. Add different flavors to enhance your coffee- Spices like cinnamon, nutmeg, and cardamom can really jazz up your coffee, adding a lot of flavor without adding calories. I add organic cinnamon to my coffee whenever I make it. Cinnamon is a healthful spice and has been said to help prevent diabetes, Alzheimer’s, and blood sugar spikes. It also is very warm and flavorful, and really complements the flavor of coffee. It’s a must for me!

Well, that’s how I make a perfectly delicious and healthy cup of coffee. The idea is to add layers of flavor so that you get an amazing taste without adding a lot of chemicals or calories. Coffee can help enhance your memory and workouts, as well as preventing liver damage, helping to lessen the symptoms of Parkinson’s disease, lessen our stress, and add antioxidants to our bodies. So I am perfectly justified in indulging in my morning cup of Joe, and I know it’s good for me too. Drinking coffee with healthy additions to it can help you live a life of vitality- like Valerie!

It’s that time of year, isn’t it? The weather, though beautiful here in Indiana, is starting to get crispy, the leaves are changing, and we are already in October! Time flies for sure. This is the time of year when I begin using my crockpot again. Now some of you may think that crockpots are old fashioned and everything you make gets all mushy, but I’m here to tell you that is not true. Crockpot cooking is my favorite way to cook because it’s so easy, convenient, and versatile. You can pretty much use any kind of meat, spices, and sauces to make whatever you want. I’ve gotten really creative with it and had a lot of fun making Italian, Mexican, and Mediterranean style meals. There is literally no limit to what I can make! The crockpot is convenient because you can throw your ingredients in there in the morning, and when you return home from work you have a delicious meal waiting for you. And the smell in the house when you get home is to die for! It’s easy too, 6 hours on high cooks most any meat thoroughly, or if you’re going to be gone all day put it on low and it will be perfectly cooked when you get back home. Easy Peasy!

Though there are many different meals I make with my crockpot, I have one favorite that I make most often. It’s my family’s favorite too, and it’s very homey and comforting. especially when the weather starts to get cold. The recipe follows and I hope you’ll enjoy making it as much as I did!

VALERIE’S VERSATILE AND VERY DELICIOUS BEEF ROAST IN THE CROCKPOT

Ingredients:

  • At least 3 lb chuck roast
  • 1 tablespoon olive oil
  • 1 16 oz can chopped tomatoes
  • 32 oz can crushed tomatoes (or tomato sauce)
  • Onion (chopped roughly)
  • 1/2 roasted red pepper- chopped
  • tablespoon minced garlic
  • teaspoon better than bouillon
  • tablespoon salt
  • teaspoon pepper
  • teaspoon red pepper flakes
  • teaspoon granulated garlic
  • 1/2 teaspoon dried oregano
  • 2 bay leaves (must be removed before serving)
  • tablespoon of chopped fresh basil- I picked mine from my garden
  • 1/2 cup of good red wine

The first thing you do is rub the roast on both sides with the olive oil and the following dry ingredients- salt, pepper, red pepper flakes, garlic, and oregano, use half of the amounts I listed in the recipe above and reserve the rest for the sauce. Put the roast in the crockpot and then add the onion, crushed tomatoes, roasted red pepper, and chopped tomatoes. Add to that the better than bouillon, red wine, and remaining salt, pepper, red pepper flakes, garlic, oregano, and the bay leaves and fresh basil.

The picture above is what it looks like when all the ingredients have been added to the crockpot and it’s ready to cook. Depending on how much time I have I either put it on high for 6 hours or put it on low all day. When I made the roast yesterday I cooked it on high for 6 hours, and then switched it to low for another half hour because we weren’t ready to eat yet. I also have a “warm” setting on my crockpot so when I was getting ready to serve it I changed the setting to warm so it would cool down enough to eat the roast without burning us, but it wouldn’t get cold.

The thing I really love about this recipe is its versatility. Last night when I served it I made baked potatoes, sliced the roast and poured the “gravy” on top of the meat. I’ve also served it with quinoa or mashed potatoes on the side. However, my favorite way to serve it is to shred the meat and mix the “gravy” into the meat, then make pasta (gluten free of course) and combine the meat, gravy and pasta together to make the most delicious crockpot pasta meal ever! It is just so good I can’t even tell you in words. You’ll have to make it and see for yourself!

The roast brings a richness to the sauce and because the meat has been slow cooked it falls apart. It is truly a wonderful meal, my Honey calls it comfort food, and he said it made his day yesterday. What could be better than that?! I will be sharing other crockpot meal recipes throughout the winter months, but I started with my favorite.
