Happy New Year readers! I hope you enjoyed your holiday season as much as I did, and your 2017 is off to a good start!

With the start of a new year comes many resolutions and goals to become the best version of yourself. I wanted my viewers to get a better glimpse into my past to learn more about me and my journey toward a better lifestyle. I hope this is something many of you can relate to because I want to assist you all on your health journeys as well. Everyone is different, but just recognizing the need for change is the hardest part in this process.

Hi friends! Tomorrow is Valentine’s Day, the day to celebrate your love of husband/wife/significant other/children/dogs etc etc etc. I personally think it’s kind of over hyped in the media (but what isn’t these days?!), however any excuse to show your loved ones how much you love them can’t be a bad thing, can it? But it’s a lot of pressure too, and from my perspective it’s difficult to stay on your healthy path of life when derailed by holidays, even a made up Hallmark holiday like this one. So, with that in mind I’ve got some ideas to keep your Valentine’s Day healthy AND happy. You know I’ve always got a list, right? Here’s my list of the top healthy things to do and eat!

1. Instead of the BIG box of chocolates, buy DARK chocolate covered strawberries, or any kind of fruit. Dark chocolate is full of antioxidants and lower in sugar than milk chocolate. The fruit gives you vitamins and fiber. AND the kicker is that you can eat FOUR OF THESE FOR 150 CALORIES! Wow! Healthy and delish!

2. Chose fish as your Valentine’s dinner meat instead of a big steak. If you have to have steak, order the filet which is a leaner cut of beef for sure. However, salmon and vegetables gives you vitamins, antioxidants, and tons of healthy fats. Plus it won’t overly stuff you so you have to unbutton the top button of your pants- not a good look!

3. Drinking wine instead of beer or mixed cocktails with dinner is definitely a healthier choice for your Valentine’s dinner- and it’s more festive too! See my previous post “A Healthy Way to drink in the New Year!” for further info on healthy alcoholic beverages. And remember, moderation is ALWAYS the healthiest way to go, any day, any time. If you do overindulge, see my post, “Holiday Overeating/Overdrinking? Healthy remedies for indigestion!” for information about ways to feel better quickly, though I hope you won’t need that tomorrow night!

4. Chose an activity that allows you to MOVE! We are going to make a blown glass piece of art together. It’s something we’ve never done and I think it will be fun and active too. Look at that woman’s arms- that’s incentive enough for me! And we will take home our mutually created piece of art and display it proudly in our home no matter what it looks like! 🙂

5. If you’re celebrating Valentine’s Day with your children, consider an activity like going to Sky Zone and jumping around TOGETHER. Don’t just drop the kids off and leave. They have special family times during holidays and it would definitely be an active thing to do. 30 minutes of moderate jumping BURNS 256 CALORIES! That’s healthy family fun!

These are my suggestions for a healthy Valentine’s Day that won’t derail you from your fitness goals. I will definitely be following my own suggestions this weekend, and I’ll have fun too! Having a healthy Valentine’s Day will help you to live a life of vitality- with Valerie!

Yikes it’s cold here in the Midwest! By cold, I mean 8 degrees below zero cold- and that’s not wind chill, that’s actual temperature, my friends. That was the temperature when I awakened this morning, and had to take my dogs out on leash because my little dog runs through the invisible fence. His wee paws froze after about 2 minutes and I had to bring him in to thaw before trying to take him out again so he could do his duty. That kind of cold is beyond description, you just have to experience it to know what I mean.

It’s worse because my daughters, sister and niece are currently in Florida experiencing their version of cold- 60 degrees, as I’m shivering here in Indiana. My house is pretty warm and cozy on a regular basis, but in this kind of cold even my house seems drafty and chilly. When it’s so disgustingly frigid out, I need peace more than ever, and I turn to my tried and true, sure fire ways to feel cozy and happy no matter what the temperature. In past posts, I mentioned ways I feel comforted when experiencing stress of any kind, reading my Kindle, listening to music, taking a bath, spending time spiritually, and a good meal/glass of wine. I thought today I’d share ways in which I help myself feel especially contented when it’s warm.

1. Watching a good movie– I love to watch movies when it’s cold out, or when I’m sad/stressed. My favorite movies to watch are the Star Wars series, and I admit I’m sort of a Star Wars freak. I have watched the series probably 50 times or more, and I never get tired of watching the movies. Something about the whole good versus evil thing, with good winning out just gets me every time.

The good thing is that I’ve infected my family with my Star Wars mania and they love Star Wars too. Jacqueline has a Han Solo frozen in carbonite phone case (watch the series for explanation), and the girls gifted me with a visit to the traveling Star Wars exhibition last year at the Indiana State Museum for Mother’s Day, and they enjoyed it almost as much as I did. My Honey gave me the light saber you see in the picture of Jac for Christmas this year, it is glass, and he chose the colors and sounds for it. What a guy! Anyway, watching any of the six Star Wars movies never fails to make me feel cozy and comforted, so whatever your favorite movies are- watch them with your family and you’ll feel all warm inside!

2. Dogs (or cats if that’s your preference)- My dogs have always comforted me in times of sadness. They’re also excellent at warming up my toes and lap by laying on me when I’m cold. Whenever my little guy, Chewie, sees a blanket come out on any member of our family, he comes running to share in the cuddle time. I can’t remember a time when they’ve failed to give me warmth and love. They give me so much more than I give them, and I love them so much!

3. A cozy blanket– When my daughters went away to college, I had a blanket made for each of them with different pictures of family and friends on it, hoping that it would comfort them by laying under all of the loving people in their lives. I wanted them to feel like we were all holding them in a warm embrace, even when they were far away from home. They both have told me that it is one of the best things they have at college, and it reminds them they are loved by lots of people. I had them made on Walmart.com and they are relatively inexpensive, $60ish. It’s pretty easy to download the pictures and create the collage of photos. I paid a little extra for the larger blanket with the thicker fleece and felt it was well worth it. Imagine my surprise when my girls had a blanket made for me last year with pictures of the three of us on it, so that I would feel comforted when they both went away to college for the first time last fall! I love my blanket and use it almost every day. When they left to go on their trip to Florida, the first thing I did after coming home from dropping them off at the airport was lay on the couch under my blanket of our faces. It’s soooo cozy and makes me happy to use it. I highly recommend having one made for your loved ones too! And have them make one for you!

4. Looking forward to a warm trip (or looking back fondly on a past one)- Another way I make myself feel better when it’s cold out or when I’m sad, is to either look forward to an upcoming warm trip or reminisce about a past one. I love to look at pictures from past trips we have taken, I can almost feel the sunshine jump out of the pictures and into my body!

I also love to plan future family trips to warm places. We are going to Florida over spring break, and it is such fun to spend time working out the details of our sunny trip to a warm location when it is so bleak and cold outside. It makes me feel like I’m there, at least for a short while.

5. Watching my favorite team (and my favorite cheerleaders)- Even before my daughters were cheerleaders I loved to watch my Boilers. We had season tickets to Purdue football for years when the girls were little, and went to many basketball games. We also liked watching the games on television when we couldn’t attend them. Now, it’s so much better when I can not only watch my Boilers, but I can watch my beloved daughters cheer for them too. It’s a definite win-win for me! I particularly love watching the NCAA basketball tournament in March. March Madness is so infectious, and jumping up and down to cheer on my team warms me up too! Go team go!

Well, that’s all I have time for today, Folks, but there are so many other things I love and that bring me comfort. They are dark chocolate, cooking, exercise, popcorn, cookbooks, coffee, spicy food, and writing my blog! I couldn’t live without these, along with all the others I mentioned above. They get me through bleak and cold times in my life, both outside and inside as well. I hope my list of favorites helps you and inspires you to surround yourself with love and serenity. You deserve it, my wonderful readers. It will help you lead a life of vitality- with Valerie!

In my last post, I mentioned that I’m not a big believer in New Year’s resolutions. So often, it seems a resolution is yet another thing on a much too long to do list, and when it is not followed through with, it leads to a sense of sadness and failure. Definitely not the way to go into a new year! Now that’s not to say that I don’t advocate eating healthily and exercising regularly, if you’ve read my past blog posts you know I am all about that. It’s just more about being good to myself, and setting aside regular time for ME! I’m definitely not very good at that. Are there any others out there who are the same? It seems I’m so good at being there for others, but not so good about that for myself. With that in mind I am trying to be better about doing things just for me, and I mentioned a few things on my list of things I love to do in my last post, “New Year’s resolution? Nah, just be good to you!”. Listening to music, reading my Kindle, and taking a luxurious bath were some of them, but there’s more, my friends, and I want to share some more with you now.

1. Spending spiritual time- In past posts, I have discussed my time spent each morning in meditation. I try to do that every morning without fail and most days I achieve that- at least 5-10 minutes worth. That’s only part of my spiritual time though. My favorite way to deepen my faith is by attending church services at my parish, Holy Spirit Geist (HSG).

It is a young, vibrant parish and has rejuvenated my faith. I especially like to attend with my daughters, but that isn’t always possible these days since they’re attending church in their college town now. Still, they come back to go to church with me as often as they can, because they find the atmosphere at HSG as uplifting and inspiring as I do. I especially love the Sunday 5 pm mass, because they have a band and they play contemporary Christian music which I really like. My advice would be that no matter what beliefs you have, spend time with other people who believe similarly because it really helps me feel in communion with humanity and with a higher power too.

Another thing that uplifts me is to pray a daily rosary. For those of you who aren’t Catholic, the rosary is a series of prayers to Mary. We do not WORSHIP Mary, which is a popular misconception about Catholics, we only worship God but we do hold Mary in reverence as the mother of God. We pray the rosary for her to intercede for us to God on our behalf. I use a rosary made of Swarovski crystals that my Mama gave me, and it gives me such a loving feeling to use this gorgeous rosary given to me by MY beloved Mom to pray to Jesus’s beloved Mom!

Anyway, I began praying a daily rosary about 10 years ago and I prayed it with my daughters on the way to school. It’s a rhythmic series of prayers (1 Our Father and 10 Hail Mary’s followed by a Glory Be and a Fatima prayer- 5 times), and each day corresponds to a different set of mysteries about Jesus. I truly love to pray my rosary, and now I usually do it as I first awaken and am laying in bed trying to wake my brain up. Praying the rosary brings me so much comfort and peace. There have been MANY times in which I awaken in the middle of the night, and all my fears and concerns keep me from going back to sleep. I pray my rosary, and before I know it I’m calm and comforted back to sleep. I also say my prayers every day. I used to pray with my girls, and now I pray by myself in the morning after my daily rosary. I pray for just about everyone I can think of, all my family members, friends, and all of the sick and suffering I know about. It’s my way of helping those I love, and it makes me feel really good about myself.

2. A good meal and glass of wine- As you know if you’ve read my past posts, I LOVE a good meal accompanied by a nice glass of wine. I love to make the meals usually, however I’m a sucker for a delicious dinner that someone else has made. Since I cook so much, it is the ultimate luxury to have someone else cook for me, or to go out for a nice meal. Now, I said go out for a nice meal, not fast food which I in no way consider a nice meal. However, it doesn’t have to be FANCY to be a nice meal. I also love Chinese, Mexican, Thai, Vietnamese, Sushi, etc, etc, etc which are more simple meals. The only requirement is that the food HAS to be delicious! One of my favorite meals in Indianapolis is at a Vietnamese restaurant called Sandra’s Rice and Noodles. My roommate from college, Terri, took me to this restaurant the first time, though now I’ve been there many times. Their Pho is one of the most delicious things I’ve ever eaten, granted everything there is wonderful and I’ve never ordered anything I haven’t loved! It’s a very simple restaurant in which you can enjoy the most amazing meals! Eating is one of my greatest pleasures and even though I eat mostly healthy food I find that I savor and enjoy my food more now than I did when I ate less healthily. I go more for flavor and quality rather than quantity, which means that I eat less than I did and I enjoy it more. That’s a win-win!

Also, the wine doesn’t have to be expensive to be delicious, and I’ve had many great $10 bottles of wine that I’ve really savored. One of my favorite $10 bottles of wine is Kris Pinot Grigio and if you like Pinot Grigio I think you’ll enjoy this brand. Plus you can’t beat the price!

My favorite Pinot Grigio however is Santa Margherita which my stepmom introduced me to. It’s more like $22 for a bottle so I don’t drink it every day, but when I do I’m in heaven! It is truly a fine glass of wine. And remember, when you’re eating or drinking the really good stuff a little bit goes a long way, so a glass or two is all you need to satisfy.

So these are some of my favorite things- my church Holy Spirit Geist, my Swarovski crystal rosary beads given to me by my mom, praying my daily rosary, a delicious meal like I’ve had at Sandra’s Rice and Noodles, and a good glass of wine like Santa Margherita Pinot Grigio. These are things that give me comfort and help me be good to myself. I’ve got more for you so tune in for my next post to see what else I have. I hope you are good to yourself today. Happy Halloween, my friends! Now you knew I’d have to write about healthy Halloween treats, didn’t you? Well, I do because that’s how I roll, but I also want to communicate the importance of having fun and not limiting yourself or your family tonight. I am not one of those people who give out raisins or toothbrushes. Oh, and I also never believed in only letting my kids have one treat and giving the rest of it away. I’d call my beliefs along those lines, “moderate indulgence”. That is, “I will indulge tonight but tomorrow I will get back on my healthy way of living.” Here are my tips for a moderately indulgent trick or (not too many) treat!

1. Go ahead and get your faves to hand out, but not TOO MANY- I always get my favorite candies to hand out. For me that is Snickers bars, Almond Joy, Reese’s peanut butter cups, Charms Blow Pops, Tootsie Pops, and Payday. I don’t open the bags of candy until Halloween afternoon that way I’m not tempted to start indulging two or three days before Halloween. I also don’t buy too many bags of candy. Since I’ve lived in this neighborhood for a few years I know how many bags I need to adequately serve the kids and I don’t buy more than that. That way there will be very little candy left over for me to be tempted by.

2. Get the miniature candy bars, not the big ones- The miniature candy bars allow for a moderate indulgence, as long as I don’t eat 20 of them! It’s better for the kids diets too. After all, if you have to open all those little candy wrappers it takes longer to ingest all the calories. But by all means, have three or four of them on Halloween night, just make sure to budget those calories a head so you won’t go over by too much.

3. Budget the leftover candy wisely- When my kids were trick or treating, I would have them choose 20 or so pieces of candy from the vast amount that they gathered. I would put them in a Ziploc bag and the rest I would donate to my daughters’ school. The teachers would use them as treats throughout the year so I didn’t feel too bad because I knew the girls would end up eating some of the donated candy anyway!

4. Hard candy may be the way to go- Here’s the thing about suckers like Charms Blow Pops (my personal fave as a kid, and you get gum to chew as an added bonus), Tootsie Pops, or hard candies like Jolly Ranchers, they take a LONG time to eat. Since it takes a while to consume, you won’t be as tempted to eat more candy after that! Plus they have few calories so it won’t totally “blow” (get it, Blow Pops?!!) your caloric budget.

5. Limit sugar in other ways- When you know you and/or your kids will be eating candy more than usual, like around Halloween, then limit the other kinds of sugar you’re eating. This is not the time to bake a batch of cookies or brownies. You’ll be getting enough sugar with the extra candy you’re eating.

So that’s my list of tips to enjoy a moderately indulgent Halloween. In addition, always make sure to brush your teeth after consuming all the sugar so that your teeth won’t suffer in the process. I also find it helpful if I eat plenty of protein before eating sugar to help balance the sugar spike that will result from the candy eating. I made a pot of chili tonight so all the meat and beans will help me not to go into sugar overload. I hope everyone enjoys Halloween tonight and by utilizing my tips for moderate indulgence you will live a life of vitality- like Valerie!

 

Healthy College Meals?!

Now some of you may see this topic and think that it doesn’t apply to you. After all you’re well removed from your college years and your children are a few years from being there. I guarantee you have a niece/nephew, a friend’s child, or just know someone who’s in college right now, and they could use some guidance on how to eat healthily while there. You can be very helpful to them, and believe me they need it.

I know from my four years on a college campus, and from the girls experiences, that eating in a healthy way is VERY difficult to do. However, it’s not impossible and I’m here to help you! Whether you’re in the dorm, a sorority or fraternity, or an apartment it is possible to make healthy choices that provide nutrition for your body to flourish while you’re there. The pictures that precede each section are taken by Jacqueline and Danielle from healthy meals they’ve had while at Purdue.

1. Always go for the protein- Now I know that protein is expensive which is why most college food choices are so carb heavy. The secret is to make choices that incorporate as much protein as possible. Here, Danielle had nachos, which are readily available on most college campuses. The key though, is that she had beans, chicken, bacon, cheese, and ground beef on them, all loaded with protein. She also had strawberry yogurt- another protein filled choice. She doesn’t like very many vegetables so instead she chose orange juice and added an Emergen-C packet to it for more vitamin C. Danielle has a gluten allergy so she has the additional challenge of trying to make healthy choices and avoid gluten. Very challenging endeavor on a college campus, believe me! If you live in an apartment, nachos are very easy and inexpensive to make and the clean up is a synch!

2. Veggies, veggies, veggies- If you have a choice, always choose the vegetables. This meal was Jacqueline’s, we knew that because it included vegetables, right? It includes half of a baked potato topped with chili, bacon bits, sour cream and green onions. She also has a spinach salad with eggs, chicken breast, sunflower seeds, and chick peas. Lots of protein and vegetables give you energy and make you feel full. She needs it with all of the cheer practices and morning workouts! Jacqueline lives in a sorority so unlike Danielle, who lives in a dorm and has the advantage of all the different dining courts on campus, Jac has a more limited set of options from which to choose. However, her sorority has many fresh and healthy meals so she has really enjoyed the food available. Apartment dwellers can utilize bagged salads for a quick meal. Also, the microwave is your best friend for quickly making a baked potato or reheating the leftovers from dinners out with your parents! 🙂

3. Whole grain carbs are a great choice- As I’ve said in past posts, carbs are essential for our diets. However, the problem with carbs is that all carbs are NOT created equal. College students eat too many empty carbs, and I say that from experience! Bread sticks, French fries, pizza, cheesy bread, cookies, soda pop, etc, etc, etc, are all examples of carbs that have little or no nutritional value. Not only that, but because they have very little fiber they do not fill you up and you’re hungry again a little while later. This is how the “freshman 15” is gained. Also, because of the lack of nutrients, this is not a healthy way to eat, and can lead to more frequent illnesses. What Danielle has on her plate is a chicken thigh, blackened Tilapia, brown rice, yogurt with strawberries, blueberries and honey, and water with a lime. I’m really glad that she chose brown rice because as a whole grain carbohydrate, it has fiber and nutrients which will fill her up and help her to be healthy. Other examples of whole grain carbs are WHOLE WHEAT bread and pasta, whole grain cereals, oatmeal, quinoa, couscous, popcorn, barley, wild rice, and bulgur to name a few.

4. Be flexible- To eat nutritiously you will have to be prepared to be a little more adventurous than you were when you lived at home. In the above plate, Danielle chose white fish, brown rice, stir fry veggies, yogurt with berries and water with lemon. She has only recently begun to eat fish, but because she knows she needs as much protein as possible she chose the fish and found that she really liked it. She also chose stir fry veggies which wouldn’t have been her first choice but she knows vegetables will give her nutrients and fill her up, and she does not want to fall victim to the freshman 15, so she made the healthy choice. She wants to keep looking good in that cheer uniform too! You may have to try new things, but you could find that you really like something you would’ve never tried!

So those are my healthy college eating tips. It goes without saying that everything in moderation, from late night cheesy bread fests to alcohol, make sure you balance that with healthy eating and living. Oh, and the mom in me says to make sure you do your homework, wash your hands, and go to bed at a reasonable time! My college years were such a wonderful time of fun and hard work, and I wouldn’t trade my experiences for the world. I want everyone to enjoy this time in their lives because believe me it goes by so fast, and soon you’ll be old like me. However, if you can follow my tips you’ll be an old person who is living a life of vitality- like Valerie!

It’s definitely apple time, isn’t it? Cooler days and crisp evenings make me think about fall, and fall makes me think about apples. Now we all know that apples are good for us, right? The saying, “An apple a day keeps the doctor away” came from the knowledge that apples are a healthy choice that we can enjoy every day for maximum benefits. However, I didn’t realize just how good apples are for us until I began to do research on the topic for this post. My research findings give me a new appreciation for apples that I want to share with you. I also want to show you a quick and easy applesauce recipe that was given to me by my dear friend and co-teacher Chris Dowling, who passed away too many years ago. I make her applesauce every fall in memory of her and because it’s DELICIOUS AND EASY.

So what’s in an apple that makes it good for us? Thanks for asking, I’ll tell you! Well first of all, apples are full of vitamin C, B complex vitamins, dietary fiber, phytonutrients, antioxidants, calcium, potassium and phosphorus. All of these important nutrients do some amazing things for us. One cool thing apples do for us is to help improve our neurological health thanks to an antioxidant called “quercetin” which helps our cells not to die off from oxidation and inflammation of neurons. Another thing apples do is to help prevent dementia because of that whole antioxidant keeping our cells from dying thing. That’s obviously a very good thing that apples do! Apples also help reduce our risk of stroke. In a study done over a 28 year period involving 9208 men and women, they found that people who ate the most apples over that period of time had the lowest risk for stroke. Wow! Would you like to reduce your risk of diabetes? Then eat three servings per week of apples! In a study of 187,382 people they found that people who ate apples had a 7% lower risk of developing type 2 diabetes than those who didn’t eat them. Another awesome thing about apples is they may help ward off breast cancer by eating one per day. Are all of these compelling reasons for you to eat an apple every day?! They are for me!

Every year Chris Dowling’s fourth grade classes made applesauce in the fall after a visit to the apple orchard. I was blessed to help in her classroom as she taught both of my daughters, to teach with her for 2 1/2 years, and to call her my friend and mentor. After she passed I made applesauce with my classes as well. This recipe is so easy even a fourth grader can follow it. I made some slight changes based on my feelings about sugar (remember sugar=bad!) which I’ll share with you now.

The first thing I do is wash the apples with Veggie Wash. I know we are peeling but I like to make sure no residue accidentally ends up in my applesauce. Oh, and I make sure that my apples are local and organically grown if possible. Then, I start peeling, and peeling, and peeling! I know some people have those fancy gadgets that peel and core apples at the same time and if you don’t want to peel then go for it. I don’t mind peeling apples though so that’s how I roll. I’ve also made this applesauce by not peeling the apples, just chopping them and throwing them in. I couldn’t tell the difference, but if you or your family is picky about peels (Like Danielle is) then get rid of them. What I do is peel 5 at a time, and while my hand is recovering from all of that peeling I chop the apples and add them to the crockpot. Then, I can make sure I don’t peel more than I need to. I also discard the core and seeds because no one wants to find hard core pieces and seeds in their applesauce!

After you’ve peeled and chopped a crockpot full of apples, then you can pat yourself on the back because the hard part is done! Peeling and chopping can be made easier by having helpers for that part of the chore. As they say, “many hands make light work” or in this case “many hands make yummy applesauce” but at any rate if you can browbeat, umm I mean convince your family to help you out with this activity, it will definitely be easier for you and go faster too.

Now is the time to add the other ingredients and this is where I’ve taken a slight detour in the recipe. I don’t add sugar and here’s why. I think the applesauce doesn’t need the sugar, the apples are sweet enough on their own, and I always try to save calories when I can. I add a tablespoon of honey instead of the sugar, but you really don’t need any sweetener in there. If you want to skip all sweeteners I promise you won’t be disappointed! I add a hefty amount of cinnamon though because I really like the flavor of it in the applesauce. And then, guess what? That’s it! Cook the applesauce on high for 5 or 6 hours and stir often. The reason I like to stir it is that when I lift the lid the most delicious aroma of cooking apples and cinnamon comes wafting out of the crockpot. It is a mouthwatering smell, let me tell you. Your entire house will smell like baking apples and cinnamon and it’s truly a wonderful thing.

Here’s the great thing about this applesauce, it’s so versatile. I use it as a warm sauce over vanilla frozen yogurt, as a chunky topping for pancakes, on top of oatmeal, or just by itself. It tastes good hot or cold, but I prefer it warm. I’ve sprinkled nuts on top of it which adds a crunchiness to it, and Danielle likes to top it with whipped cream. The possibilities are endless! Another great thing about this applesauce is that a half cup of unsweetened applesauce is only 50 calories! Wow, that’s great bang for your caloric buck! Hello friends! As I said in a previous post I’m a brand new empty nester and am still adjusting to this new phase of my life. It is very gratifying to see how well my daughters are doing, and in particular my first time college student! So it’s all good for them which definitely helps my adjustment process, but it’s a process and I have moments in which I kind of look around like something is missing. Well, in this case it’s two SOMEONE’S who are missing, and as I tell people it’s just WEIRD. That’s the word that best describes my feeling about this new phase.

So anyway, as I go through this process of getting used to life without my girls I find that I am getting a lot of comfort from my dogs. That’s not unusual for me, I’m a crazy dog lady after all, but I have been comforted by their presence even more than usual. Just looking at them helps me to feel better. I was surfing around on the internet the other day and I came across an article in Dr. Becker’s newsletter that talked about that very topic. Dr. Becker is a holistic veterinarian who has teamed up with Dr. Mercola (a holistic doctor) to dispense advice and sell products. In fact I highly recommend both doctor’s newsletters! Dr. Becker’s article talked about the emotional benefits of owning a dog and here they are!

1. Dogs relieve our stress- Dr. Becker mentions how many hospitals now have dogs come in to visit with patients, and schools that bring dogs in during finals to help relieve stress associated with both hospital stays and exams in schools. Last spring Purdue University had dogs and their handlers come in during finals week for students to come and pet/cuddle. Jacqueline went over and spent time with the dogs and she said it really helped her feel better and less stressed. She got straight A’s last semester so clearly the dog cuddling time helped her rock her exams!

2. They encourage us to exercise- Dogs need more exercise than just letting them out to do their business and wander your backyard. I don’t care how big or small they are, and how many other dogs or cats they have to run around with, they still need to exercise or they will become overweight and bored. Our little dog, Chewie, is a perfect example of that. He started to gain weight over the winter when I wasn’t walking him as much, but worse than that he got bored. Now, for Chewie boredom is NOT a good thing. He started to chew on things, get into things he wasn’t supposed to, and in general he became a nuisance. I learned that I HAD to take him on a walk each day to really wear him out so he wouldn’t get into trouble. The benefit of that was that I got out and walked with them, because they obviously can’t walk themselves. Now, if walking isn’t your thing you can throw a Frisbee with your dog, throw a ball, run, swim, and pretty much anything active that you like to do your dog would LOVE to do with you. If your dog moves and you move with him/her, it’s a win-win!

3. Dogs increase our “happy” hormone- Dr. Becker quoted a study in which they tested dog owner’s amount of oxytocin when they looked into their dog’s eyes. Oxytocin is the hormone that increases when we kiss or hug a loved one. It’s also stimulated during breast feeding, sex, and giving birth. What they found in this study was that the amount of oxytocin in dog owners continued to INCREASE the longer they gazed into their dog’s eyes. No wonder I like to look at my dogs all the time!

4. Dogs have the ability to heal us- Dogs are known to be helpful in those suffering from PTSD, depression, autism and various disabilities. Therapy dogs are utilized to aid those with various ailments. The number of illnesses that dogs can bring about healing for hasn’t been fully explored yet, and new ways dogs can help heal us are still to be discovered. The bond between human and dogs is very complex and in some ways deeper than the relationship between humans. I could’ve told you that!

5. Dogs help us in our relationship with other humans- A study showed that when you bring your dog along with you to different places, you are more appealing to others. It showed that 95% of study participants found people in the company of their dogs to be more approachable to members of the opposite sex. Guys did you hear that? Bring your dog along if you want to meet girls! I always meet people when I’m out walking with my dogs in the neighborhood. In fact, I just met a nice woman and her bichon this morning on our walk and we exchanged numbers to go on future walks together. I’m sure that wouldn’t have happened if I hadn’t had my dogs with me. Thanks Chewie and Delilah!

So anyway, the upshot is that dogs are a great source of comfort and love for us, especially when going through stressful events. If you’re going through some stress, gaze into your dog’s eyes and feel your oxytocin levels rising! Also, just a 10 minute walk with your dog can ease your stress and give you some exercise too! For those of you reading this who know me personally you know that I’ve just moved both of my daughters into their college and as such am a first time empty nester. Now some parents look upon that with a bit of relief, like “whew I did my job and I’m ready to move on!” That’s not me. I have truly enjoyed every second of my parenting job. Spending time with my daughters is a pleasure and I miss them a lot. The dogs even seem bummed!

Well anyway, I’ve noticed during my adjustment to this new phase of my life that I’ve been craving chocolate more than usual. I’ve mentioned in past blog posts that I love chocolate and that it is a regular part of my healthy way of eating- dark chocolate, that is. But I wanted to write a bit more about chocolate so you’d know how healthy it really is. Let’s call it “My Ode to Chocolate”.

Chocolate, oh chocolate, how do I love thee? Let me count the ways you are healthy and good for me!

1. Chocolate is heart healthy– According to an article in Women’s Health magazine, a study was done in Germany this year and it said that eating a square of dark chocolate a day lowers the risk for a heart attack or stroke by 39 percent and lowers blood pressure too! What a great deal! It’s because of the flavonoids dark chocolate contains, which are antioxidants that make your veins and arteries more flexible. Chocolate contains 5 times the flavonoids of an apple- wow! Now remember it has to be DARK CHOCOLATE NOT MILK CHOCOLATE because milk chocolate contains very little actual chocolate. The experts recommend not eating chocolate that contains any less than 70% cocoa so I eat the darkest chocolate I can because it makes me feel like I’m indulging in a healthy way! Also, chocolate contains sugar, milk, butter, etc so if you eat a lot of it you will gain weight. I eat ONE SQUARE OF DARK CHOCOLATE AND NO MORE!

2. Weight loss– Can you believe that if you eat chocolate you will lose weight? I didn’t believe it but a University of Copenhagen study showed that DARK CHOCOLATE makes you feel more full and satisfied than milk chocolate, and it lessened the craving for salty, fatty and sweet foods. Shut the front door, are you serious?!! That’s awesome! And a study out of Australia showed that people who eat chocolate high in antioxidants reduced the blood pressure raising effects of exercise in people that are overweight. So eat your dark chocolate and exercise safely, my friends!

3. A Stress Reducer– Swiss (of course, Swiss!) scientists found that people who ate an ounce and a half of dark chocolate after an emotional experience (like sending their youngest child off to college!) every day for two weeks, had their stress hormone levels reduced SIGNIFICANTLY, and the metabolic effects of stress on the body were partially reduced too. In addition, stress makes you gain weight because of the increased cortisol levels associated with it, so eating chocolate reduces stress which helps us stay slim and trim. Yay! I am almost required to eat dark chocolate now, right?! 😉

4. Chocolate prevents diabetes– Wait, so eating candy helps to prevent diabetes? Makes no sense, does it? But here’s the thing, in an Italian study people ate a candy bar’s worth of chocolate every day for 15 days and saw their potential for insulin resistance drop by nearly half. How, you ask? Flavonoids increase nitric oxide production which helps control insulin sensitivity. Mom, this one’s for you!

5. Higher intelligence– An Oxford University study of over 2,000 people looked at the long term effects on the brain of chocolate. They studied people over 70 years old and found that people who ate flavonol rich chocolate, wine, or tea scored higher on cognitive test than those who didn’t. I feel a lot smarter now that I eat dark chocolate almost every day!

Dark chocolate can also give you sun protection, cough relief and diarrhea relief as well. It’s truly incredible how something so delicious can be so good for you. Now remember to eat DARK CHOCOLATE with at least 70% cacao for maximum benefits, and don’t eat more than one square per day. Ok, let me make this very clear, I LOVE BACON! I’m a big breakfast lover and some of my best and earliest memories are of my mom making pancakes and bacon for our morning breakfast on the weekends. Sometimes we had scrambled eggs and bacon, other times fried eggs and bacon, and occasionally French toast and bacon. But almost always bacon was on the menu for breakfasts and I grew up adoring it. The delicious smell of bacon cooking on weekend mornings is one of my favorite childhood memories. Bacon is everything I like: salty, fatty, porky flavor. When I was a child I didn’t know if bacon was good or bad for you, I just knew I loved it. As I grew older, however, I began reading about how bad bacon was for me. It was full of saturated fat, sodium, chemicals that could cause cancer, raise cholesterol, and eventually kill me. That’s heavy stuff and I began to cut back on my bacon eating, though I missed it mightily. After a few miserable years of deprivation I entered what I call my guilty bacon eating phase, I ate bacon but I didn’t admit that I ate it. I was a closet bacon fanatic. My daughters have grown up eating bacon because I love to cook it for my girls too, and they are big bacon fans as well.

Imagine my surprise after all of the years of no bacon and then secret bacon eating, when I happened upon an article by Kaayla T. Daniel, PhD, CCN, that was featured in Dr. Mercola’s newsletter called, “Save Your Bacon! Sizzling bits about nitrites, dirty little secrets about celery salt, and other aporkalyptic news” January, 2013. She says that there are many studies out there saying that bacon leads to death, particularly a study by the Harvard School of Public Health that leads to the negative perception of bacon. However these studies show a minute increase in the risk of “death by bacon”. A 0.2 % increased risk at most. Dr. Daniel sets out to debunk these dire notions about bacon and says that bacon actually is 50% monounsaturated fat (MUFA!), 10% polyunsaturated fat (PUFA!), and 40%saturated fat. She also says that pork fat contains a form of phosphatidylcholine which contains more antioxidant activity than vitamin E. The fat also contains fat soluble vitamin D, which is good for us.

The most important aspect that makes bacon good for you, though, is the source of the bacon. Factory farmed pigs that are fed mostly grains will be low in vitamin D, but pigs allowed to freely roam and forage outdoors will be high in vitamin D. She also informs us that bacon fat can help diabetics stabilize their blood sugar because of the triglycerides in bacon fat. It’s also believed that bacon can lead to weight loss because a bacon and eggs breakfast is high fat, high protein, and low carb, which can reduce the hungry feeling and rev up the metabolism. Dr. Daniel informs us that though the “food police” warns us about the dangers of cholesterol and sodium, there is no proof that high cholesterol leads to heart disease and also no proof that eating sodium leads to heart disease, cancer and other dire diseases. She warns that eating “nitrite free” bacon isn’t healthier for us than bacon cured with nitrites, because the other methods used to cure the bacon can actually add more nitrites to the bacon than the traditional methods.

So the key to making bacon healthy is to buy bacon that uses traditional curing methods but not from bacon producers who use cheap, fast and unhealthy ways to cure the bacon. How do we know the methods a bacon manufacturer uses are healthy? First of all, supermarket bacon is mass produced using cheap and unhealthy processes so that type of bacon should be avoided. Dr. Daniel suggests contacting an organization called Weston Price, a group that connects people to farmers that are producing healthy food. They have hundreds of chapters throughout the United States, and she recommends contacting a chapter leader to find out the best sources for bacon in each area. I get my bacon at the Farmer’s Market or health food grocery store, and you can ask for information about the curing methods and processing of the bacon. The conclusion to all of this is that now not only do I still love bacon, but I don’t have to hide my love for the pig anymore. That’s progress!
