This post is credited completely to my wonderful daughters, Jacqueline and Danielle. It all started like this, the other day the girls were texting each other on the text group they created that includes me as well. Danielle asked Jacqueline if she could come over to her apartment for dinner the other night. Jac replied that she was just going to make a quick hot dog because she needed to work on a project that is due this week. I contributed to the conversation at that point (or butted in, depends on your perspective) and said that Jac should bring down some meat to defrost so they could have a proper dinner. Danz said she would cook for them because she really likes to cook. Jac put some chicken thighs in the fridge and off to class she went. I told Danzy to text me when she got to Jac’s apartment, and I would help her if she got stuck.

I know what ingredients Jac has available to cook with because I bought all her spices and herbs for her when she went to live in her apartment, so that was an advantage. I also know what my girls like to eat which made it easier to help them put things together. Jacqueline texted that she had spinach, white cannellini beans, and San Marzano canned tomatoes, so I knew with those ingredients a delicious meal could be made.

When Danielle got to Jacqueline’s apartment she texted me and said she didn’t know what to do with all these ingredients, so she waited her usual three seconds (she has her mother’s patience level), and when I hadn’t responded she called me and said HELP! Now it was Mom to the rescue, and I love to rescue people so I was in my element. I walked both she and Jacqueline through the recipe that I will share with you now, but the cool thing was that once I helped them get started, all the hours they’ve spent helping me in the kitchen kicked in. They knew exactly what to do, once they got over feeling overwhelmed. Here is what they created.

Jac and Danz’ version of chicken, tomatoes, and beans  

  • 6 boneless, skinless chicken thighs
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 1/2 teaspoon each salt/pepper/garlic powder/red pepper flakes to season chicken
  • 1 onion, chopped
  • 1 large can San Marzano crushed tomatoes
  • 1 15 ounce can white cannellini beans, drained
  • handful of organic baby spinach
  •  1 teaspoon each salt/pepper/minced garlic/ red pepper flakes/ Italian seasoning for sauce

First, Jacqueline chopped the onions, while Danielle was seasoning the chicken thighs on each side, and she warmed the EVOO in the pan too. Jac put her chopped onions into the EVOO and sautéed them for a few minutes until softened.

Next Danielle browned the thighs for five minutes on each side. Then she added the tomatoes, beans and seasonings to the chicken, and simmered it all on medium heat for 25 minutes, stirring occasionally. Last, Jac added the baby spinach and cooked it for another few minutes until the spinach was soft.

And that was all there was to it. The girls were ecstatic and said that it was one of the best meals they’d ever had. It tastes so good when you make something you didn’t think you could. Look at how healthy it was for them too, they had protein, vitamins, minerals and antioxidants in the chicken, beans, tomatoes, and spinach. Healthy, delicious and easy- what could be better than that?!!

Now when I speak of our good friend, Peter Piper, I’m not talking about the part where he PICKED the peck of pickled peppers. Though how do you pick pickled peppers anyway? Wouldn’t you have to pick regular peppers and then pickle them? So confusing,  those old tongue twisters. No it’s the PICKLED part of the peppers that I want to focus on today.

You may be thinking, why should I care about pickled peppers or pickled anything else? Here’s why you should care- pickled or fermented vegetables are SO GOOD for you! And we’re talking ANYTHING pickled- like cucumbers (most common vegetable pickled), radishes, green beans, cabbage (think sauerkraut), and the Korean fermented vegetable dish called Kim chi. Did you know that pickled foods contain probiotics (good bacteria that helps your gut health)? Yes, that’s true. Let me explain this a bit.

Pickling is a form of fermentation, and when vegetables and fruits are fermented, healthy bacteria help break down the hard to digest cellulose in foods, as well as some of the natural sugar. These healthy bacteria help keep fermented food safe and less likely to spoil, and can also help increase the good bacteria in your gut when eaten. That’s not just good for your gut, my friends, it also affects your immune and nervous systems. Almost 80% of our immune system exists in the gut, which contains about 100 trillion bacteria. In other words, we have 10 times more gut bacteria than the number of cells in our entire bodies! The gut also has the second nervous system in our bodies. We have the same amount of neurotransmitters in our gut as our brain! I know, crazy right?!!

Here’s the thing you’re probably thinking, ok so the gut is important, but why do we need pickled or fermented vegetables and fruits? The reason is because bad diets, antibiotics, stress and numerous other factors can create an imbalance of bad bacteria, creating bloating, fatigue, diarrhea, inflammation, headaches, and sugar cravings. Probiotics in fermented foods can help rebalance your good bacteria and ELIMINATE THESE SYMPTOMS!

Another reason we need more pickled or fermented fruits and vegetables is that overweight people have different intestinal bacteria than lean people. In addition to other health problems, an imbalance of bad bacteria can create inflammation and fat gain. A study in the European Journal of Clinical Nutrition showed obese people reduced abdominal fat nearly 5% simply by drinking probiotic rich fermented milk for 12 weeks. Probiotics also reduce the risk for metabolic syndrome, which is an unpleasant condition that includes high blood pressure, insulin resistance, cardiovascular disease and type 2 diabetes. Clearly, probiotics are the way to help prevent numerous diseases!

The recommendation is to eat 1-3 servings of pickled or fermented vegetables each day to get the optimal gut benefits. Now, don’t go rush out to the grocery store and buy 10 jars of processed pickles. If you’re going to buy your pickled vegetables please buy them from the refrigerated section and try to get them without added sugar and organic if possible. If you don’t like pickles, refrigerated, non-pasteurized high quality sauerkraut is a delicious and healthy way to get your probiotics and vitamins, minerals, and phytochemicals too. Kim chi, the Korean fermented vegetable dish, is another way to get your probiotics. My daughter’s boyfriend is of Korean descent and his mom brought us Kim chi. I have been OBSESSED with it since she sent it, and have eaten the garlicky, spicy vegetables with almost every meat I’ve eaten. If you don’t know someone Korean, go visit your local Korean restaurant and try it! Truly unique and delicious!

Last and most important, I’m here to give you an easy and quick recipe for pickling vegetables so you can do it at home. You will be stunned at how easy and delish this is. Then, you can make some more when you run out instead of buying more from the grocery store. It’s also convenient to make your own because you can pickle whatever vegetables and fruits you have available at home. Check it out, you’ll be impressed!

Valerie’s Easy, Quick Pickled Vegetables

  • One cup chopped vegetables ( I used cucumbers and of course, peppers- both sweet and jalapenos)
  • 1/2 cup vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Stir the vegetables into the vinegar, sugar and salt. Let sit for 30 minutes, stirring occasionally. THAT’S IT!

You can put the pickles on a burger, hot dog, any sandwich, mix them into scrambled eggs, serve them alongside pork chops or steaks, or stir them into soups or top them on salads- they are versatile and delicious. I made a batch before I wrote this post, and Danielle is trying to eat them all before I’m even done writing! They’re addictive, and they’ll help give your gut the healthy flora it needs to boost immunity, fight disease, and get rid of that extra weight! Sounds great to me!

Reach for the Stars-choose healthy drinks at Starbucks!

This post is in honor of my daughter, Danielle, who has asked me a few times to write about making healthy drink choices at Starbucks. So, I did a little research, some based on my own experience, and compiled a list of what I consider to be the healthiest drink options. Now, remember that for me a healthy drink isn’t only a beverage that is low in calories, after all if that was the only criteria you could just order non fat, skinny everything and you wouldn’t need my help at all. No, for me a healthy drink contains little or no sugar, no artificial sweeteners, and has little or no syrups which often times contain chemicals and other yucky additives. I tried to consider a variety of tastes in putting together my list too, not just coffee (Jacqueline’s favorite), but tea choices too (Danielle’s fave) among others. There is even a smoothie on the list. Obviously you can order black coffee or a tea bag and hot water at any time as well, but remember it’s what you add to it that can turn that relatively healthy beverage quickly to a highly caloric, chemically laden danger zone. With that in mind, I included drinks that give you a little more to start with so that you don’t have to add many extras to it to get it to taste delish. So get ready friends, here it is!

1. Cappuccino- Tall, 2% milk, 90 calories, 3.5 g of fat, 9g carbs, 6g protein, 75 mg caffeine. Here’s why I like this one, first, because the milk gives you 6 grams of protein per tall sized (12 ounce) portion, second because there is NO SUGAR in this drink, but you can add Truvia (natural sweetener from the Stevia plant) which they have available at all Starbucks locations, and third because Starbucks always has cinnamon on their condiment bar. Cinnamon is a powerful spice that contains Manganese, calcium and antimicrobial properties, it’s a super spice so any time you can use it, definitely make that healthy choice. But besides that, it tastes really warming and flavorful so it will add deliciousness and health to your beverages, instead of using the syrups that add calories and chemicals. I love the foam of a cappuccino, and because of that foam this drink contains less milk than a latte thus saving you calories in the process. Cappuccino is my favor drink to order at Starbucks by far.

2. Teavana Shaken Iced Passion Tango Tea- Tall, 60 calories (sweetened), 0 calories (unsweetened), 15 g carbs (sweetened), 0 g carbs (unsweetened). I met a friend at Starbucks a few months ago and wanted an iced drink without caffeine (because I already had enough for the day that morning), I studied the menu carefully, utilized My Fitness Pal app on my iphone to check the calorie content of this drink, and then ordered it unsweetened. I figured if it had no flavor I would just add honey to it after I gave it a taste, but it didn’t need it because it was delicious unsweeted. It is a hibiscus, apple, lemongrass and passion fruit tea, and it’s as good as it sounds. The ice makes it so refreshing, and I just enjoyed the heck out of this drink. Definitely a great choice!

3. Chai Tea Latte- Tall, 190 calories, 2.5 g fat, 34 g carbs, 6 g protein, 20 % RDA for calcium. I included this one as a healthy option, even though it’s high in calories and carbs because the spices give it such a warm flavor and the milk adds a good bit of protein. I always recommend getting only a tall size of this drink since it’s fairly high in calories; a little bit goes a long way with this one. I always order 2% milk instead of non-fat because though I’d save calories with the non-fat milk, the additional fat in 2% milk allows the nutrients in the milk to be better digested. I also do not EVER order a skinny beverage at Starbucks because they use an artificial sweetener which is more dangerous than the sugar this one contains.

4. Caffe Americano- Grande, 15 calories, 3 g carbs, 1 g protein, 225 mg caffeine. This drink packs a caffeine punch with 225 mg, which is why it’s Jacqueline’s favorite! The Americano is an espresso that has hot water added to it, which gives it the caffeine of an espresso in a more generous portion size. She orders it plain and then goes to the condiment bar to add a bit of milk and honey, and a generous sprinkle of cinnamon. Delicioso!

5. Chocolate Smoothie- tall, 250 calories, 45 g carbs, 40 g protein, 8 g fiber, 20% RDA of Calcium and Iron, 15% RDA of Vitamin C, and 8% RDA of Vitamin A. This smoothie is made with mocha sauce, banana, milk, protein powder, fiber powder, and ice. The original version of this smoothie is actually 320 calories, but I saved you 70 calories because you’re going to request for it to be made with a half a banana instead of a whole one, and double the protein powder (they’ll have to put it in a larger cup because the extra protein will make the amount of this smoothie grow a lot!) I included this one on my list even though there are a lot of calories and carbs because for a smoothie it has relatively few calories and it has LOADS of protein which makes it a possible meal replacement. You can request a shot of espresso to add caffeine to it if you need a pick me up also.

6. Teavana Shaken Iced Green Tea- tall, 60 calories sweetened, 0 calories sweetened, 15 g carbs (sweetened), 0 g carbs (unsweetened), 30-35 mg caffeine. This is a similar drink to the Passion Tango tea, but I included it because it has green tea in it which has antioxidants in it, plus it contains mint, lemongrass and lemon verbena. It also has a bit of caffeine in it due to the green tea so if you want caffeine this would be a good choice. Yum!

Now you’ve seen my choices for healthy drinks at Starbucks, in honor of my Danielle, but I hope it helps you too. There are healthier choices available if you’re careful and know where to look.
