Hello my friends! How have you been lately? As for me, it seems my girls have been home more often these days, and in two weeks they’ll be home for the summer which will make me the happiest Mom on the planet! There’s nothing I like better than to have my chickadees back in the nest. I also love to cook for them when they’re home, and they beg for me to cook as often as I can because they’re homemade meal deprived college students.

They are desperately grateful for anything I make them to eat, but we are especially happy sitting in our pajamas eating breakfast and sipping our coffee/tea together. I would have to say that breakfast is my favorite meal to make, no matter what it is I’m cooking. I guess because I have the best memories of my mom making pancakes and bacon on the weekends, and my dad making waffles, eggs, and bacon.

If you’ve read my blog in the past you know that I have pretty much cut sugar completely out of my diet because sugar is a toxic poison to the body, and since my youngest has a gluten allergy and the rest of us seem to do better without it too, I don’t use gluten in my cooking either. That makes sweet breakfast foods particularly challenging. I mean, I do lots of eggs, bacon and sausage which covers the protein end of the breakfast, but sometimes in the morning you just want a muffin, doughnut, waffle or pancake, ya know?!

I ran across a really cool recipe for a gluten free, no sugar muffin that sounded intriguing because it contained no flour or any weird ingredients. Sometimes with gluten free baking the recipes call for obscure flours or strange ingredients like xanthan gum. Who has that sitting around in their pantry? Not me for sure. Plus, I’m not much into baking so another reason I really like the recipe is that it was simple and I had all the ingredients. So I decided to give it a try and my family LOVED them! You can’t tell they are gluten free or sugar free, and I’m not even sure how they are actually muffins since they contain no flour, but they’re so good! I made some adjustments that work better for my family, and I think they’re easy and delicious so I’d like to share them with you now.

Easy Peasy Banana Nut “muffins”

  • 1/2 cup all natural almond butter
  • 1 large ripe banana
  • 1 egg
  • 1/4 cup organic honey
  • 1/2 cup gluten free oats
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 medium apple, peeled, cored and chopped
  • 1/3 cup walnuts or pecans

Preheat oven to 375 and spray a muffin tin with nonstick cooking spray.

Add all ingredients to a high speed blender and blend it up until batter is smooth and creamy. I had to use the tool that came with my blender to tamp all the ingredients down by opening the clear plastic part in the center of the blender lid and smushing everything down until it blended.

Now just pop them into the oven and wait to smell the amazing aromas that will begin to emanate!

Pour the batter into the muffin tins to about 3/4 full and bake for about 15 minutes or until the tines of a fork when inserted into the muffins come out clean.

The muffins are loaded with fiber from the oats, flaxseed, apple, banana, nuts and nut butter. They also have protein from the nuts, flaxseed, and nut butter, and tons of vitamins and antioxidants from the fruit. As far as I can calculate they have approximately 120 calories per muffin. That’s a great bang for my caloric buck!

When I’m serving these muffins or any other sweet baked good for breakfast I always make sure I serve plenty of protein with it. Usually I will make scrambled eggs and bacon with these muffins. If I’m making pancakes or waffles I make fried eggs and bacon or sausage (because I like to break my fried egg yolk all over my pancakes and waffles, and eat them all together). Protein is key to give you energy for your busy day!

I admit it, I wore braces for over two years, from July of 2012 to December 2014. I still wear my retainer most of the day now. You might think, wow what a vain woman to wear braces at almost 50 years old! Well, first you have to hear my story and then you’ll understand.

It all started about 10 years ago, I was washing my face one night before bed and I felt this strange tingling on the right side, around my eye. It was the weirdest sensation, like the tingling you get when a limb that fell asleep is waking up. It kept doing that every time I touched it. It didn’t really hurt (at the time) but it felt so odd. I didn’t really think anything of it, but I noticed over the next few months that it kept coming back from time to time and felt about the same.

Over the next year, it got worse and worse. The pain felt like zapping and prickling, what I would imagine it would feel like if you stuck your fingers in an electrical outlet. And it HURT! Anything would start up the pain, from the wind blowing on my face, to smiling, laughing, and even eating would cause this unimaginable pain. Sometimes it would come upon me while I was talking and it would literally render me speechless. I would have to stop and wait until the pain passed to finish speaking. I didn’t know when it would happen either, there seemed to be no pattern to it, sometimes I could eat and not have pain and then the next meal it would be so excruciating that I couldn’t even eat. I would go months without experiencing it, and then out of nowhere it would come roaring back to life. It was a hellish nightmare and I endured it for a while before going to my doctor about it.

I went to my long time doctor and he told me I had Trigeminal Neuralgia. It’s like a migraine that has gone rogue, attacking the trigeminal nerve that runs all over your face and forehead. This is sort of a complication from the Chronic Fatigue Syndrome I’ve suffered from for the last 18 years. It’s considered one of the most painful conditions you can suffer from because of the extreme zapping, tingling sensations you experience. I can definitely say that is true!

This condition really flared up in January of 2011 and I had to leave my teaching job because the pain was unimaginable. I could not speak, eat, even move my head. I went back to the doctor. We had some strategies for treating it that definitely helped, which included special pain cream, drops, and a nasal spray which have improved my ability to manage the pain once it begins, and nutritional IV’s to help build up my adrenal and immune systems. We also do a special type of injection called neural therapy which is a focused pain treatment, along with Botox to freeze the nerves in my forehead. All of these strategies got me to 90% of my pre Trigeminal Neuralgia self over a course of a year, which was a definite relief. It would flare up but the pain was lesser and the flare ups fewer in number.

My doctor also suggested I go to a dentist with a more holistic approach to dentistry, Dr. Gary Walton, in Indianapolis. I didn’t understand then how a dentist could help my head, but I agreed to give it a try. When I saw him and told him my story, to my relief he said he could help me with a three step approach. First, he removed all of the mercury fillings in my mouth that were leaking poison into my body, and replaced them with a composite material that is non toxic. I went straight to my doctor after that for chelation therapy, which is an IV to remove metals from the body.

The next step was to get braces. He really had to talk me into this one. I had never worn braces in my life and couldn’t imagine wearing them at 46 years old. I said the only way I would do it was to wear the clear braces, called Clear Correct or Invisiline. He said the braces would properly align my jaw and bite, which were so crooked and not at all in alignment, and that would put less pressure on the trigeminal nerve which would cure my Trigeminal Neuralgia.

The takeaway from all of this is that not only did it cure my Trigeminal Neuralgia, but braces are now an acceptable treatment for migraine headaches. The improper alignment of the jaw and teeth, and TMJ or temporomandibular joint syndrome are a common cause of migraines. Here’s why, if the cranial bones are distorted for any reason, like misalignment of the teeth and jaw, then changes in pressure from weather fronts, ascending and descending in an airplane, hormonal changes, etc can trigger the migraine pain, along with nausea, diarrhea and vomiting.

So that’s why I wore braces for over two years and I’m happy to say that I haven’t had a Trigeminal Neuralgia flare up since I got about a year into wearing braces. It’s no less than a miracle to me. The reason I’m writing this though, is that even if you’ve worn braces when you were younger, you could still have misalignment of your jaw and teeth. If you’re experiencing migraines it would be a great idea to find a dentist who is knowledgeable about these kind of issues, and have your mouth evaluated. It’s been life changing for me. The third part of the three steps for me included wearing a mouth guard at night to prevent grinding of the teeth, which can also cause the bite and jaw to be knocked out of whack. Since I’m wearing a retainer at night for the braces, it also serves as a bite guard as well.

Another positive outcome is that my teeth are so nice and straight. I never noticed how crooked they were. My dentist said, “You always had a pretty smile, but now your teeth make your smile even prettier.” That’s so sweet! I find that I smile more now because I love my teeth. I also smile more because I know that smile will not cause a horrible zap of pain to run up my face anymore. It’s been a blessing for me, and I’m so glad I did it even though I was very apprehensive about it. It cost around $4,000, which is not cheap believe me, but it was money very well spent in terms of my health. I was a fairly advanced case because my teeth and jaw were so out of alignment, and I know of people who have worn them for more mild corrections that have cost a lot less. Now when you see me smile, know that there is no pain hiding behind that smile anymore. If you don’t have head pain, consider yourself very blessed because the pain is so debilitating, and if you do, consider visiting the dentist to talk about teeth and jaw alignment. It will help you live a life of vitality- with Valerie!

Whew, what a busy long holiday weekend! I had the kids come back from college, I hosted and cooked Thanksgiving on Thursday, and then went to my sister’s for a big family celebration over the weekend! I ate a lot of food and, by the time I returned home, ended up with a case of indigestion. I used my favorite remedies and feel better now, but then I thought, “Wait! I need to share these remedies with my wonderful readers!” So that’s what I’m going to do today. Especially with two more big “stomach ache” holidays coming up, Christmas and New Year’s Eve, I thought it particularly timely to help you avoid stomach discomfort in a healthy way! These remedies are particularly helpful when we occasionally over imbibe in food and drink. So without further ado, here are my top 5 healthy stomachache remedies.

1. Nux Vomica- This is a homeopathic remedy made from the seeds of the strychnos tree and it’s mainly used for nausea, indigestion, and hangovers. It works really well for all of those digestive issues. Use as recommended on the package instructions and DON’T TAKE MORE THAN THE RECOMMENDED DOSAGE AS IT CAN BE TOXIC IF TAKEN AT EXTREMELY HIGH LEVELS. Nux Vomica can be purchased at any health food store. It’s my favorite stomach remedy and has saved my life a number of times! They are tiny pellets that are held under the tongue until dissolved, and they have no flavor which is very helpful when your stomach is upset.

2. Sunmark Anti-nausea liquid- The active ingredients in my second favorite stomach remedy are glucose, fructose and phosphoric acid, and it’s effective for “nausea due to stomach upset from flu, food or drink indiscretions”, according to the label and I agree with their assessment of that. You just take one to two tablespoons and don’t drink any liquids before or after because it could dilute the effectiveness of the medicine. It has a pleasant cherry flavor, which goes down well when you’re stomach hurts. I love this anti-nausea liquid and I find it very successful at eliminating my symptoms. This product can be purchased at health food stores.

3. Little Remedies Gripe Water- Don’t be fooled by the label, it’s not just for children but works on people of any age. One day I had a really bad case of indigestion and the only place we had time to stop at was a CVS because we were in a hurry to go somewhere, and there was no health food store near. So I ran in and looked at the stomach remedies and tried to find something that wasn’t full of chemicals, which was very difficult to be honest. I picked up this one on the advice of my significant other (who is a doctor).  I was doubtful since it’s for babies, but it REALLY WORKED WELL! It’s used for colicky babies, but it worked for my tummy too. It works by breaking down the bubbles that cause gas naturally. I have to admit I take a few swigs of it right out of the bottle instead of measuring when I need it so I’d say taking a tablespoon or two would be about right. It’s great!

4. Peppermint Capsules- This is one I particularly love and here’s why. These are pure peppermint capsules from Guyer Institute, however you can purchase other brands from health food stores. The EC stands for enteric coated, which is advisable because it helps keep the peppermint oil from being released in the stomach which could cause heartburn and indigestion. Instead it goes to the digestive system where it is released and helps relieve symptoms of gas, bloating, irritable bowel syndrome, colds, and flu. This remedy works very well and as a pleasant side benefit it makes your bowel movements smell like peppermint. In other words you will have minty smelling doo doo! That’s definitely not a bad thing! Another way I like to use it is to break a capsule open, squeeze it into my water, and drink my peppermint water. It tastes really great and soothes my stomach too. Now don’t take it this way if you have reflux or esophagus issues because it could upset those conditions. A super healthy remedy!

5. Sea-Band Anti-Nausea Ginger Gum- Ginger is a long time remedy for gastrointestinal upset- I remember my Mama giving me ginger ale when I was a child with a flu bug. This ginger gum (can be purchased at health food stores) is a healthy way to deliver ginger in a more effective way than drinking an entire can of pop. It definitely has a strong ginger taste, so if you like ginger you’ll love this gum. I’m not a real fan of ginger so I only chew it for a few minutes before spitting it out, but it really helps calm the stomach in a natural way!

So these are some healthy remedies for overeating and overdrinking, which is very typical for this time of year. As always, please consult your physician before utilizing any of these products, especially if you are having severe symptoms for an extended period of time. Make sure to eat and drink safely, and use good judgment always! However, for the inevitable times when you aren’t feeling good, these natural products will definitely help.
