Wild and crazy garden!

 

Hello, friends! Happy late summer to you! We had some MUCH NEEDED rain this week, and my garden is growing like crazy with the added moisture. The herbs, tomatoes, onions and peppers are even more plentiful than they were! Another thing in my garden that is exploding right now is my tomatillo plant. I’ve never grown tomatillos before, but we found a plant when we were looking at tomatoes. I decided to get one to see what I thought about it. Now, I’m so glad I did! They are a delicious change from tomatoes, and I’ve made some great meals including them. I want to share what I’ve learned about tomatillos, and two different ways to utilize them in dishes.

The tomatillo is actually not a tomato, it is a vegetable from the nightshade family, and is actually related more closely to cape gooseberries. Their scientific name is Physalis philadelphica and they are a staple in Central and South America. They have a light brown husk that will eventually break off when the tomatillo is ripe. The tomatillo has a tart flavor, rather than a sweet flavor like tomatoes.

Tomatillos have high levels of dietary fiber, very few calories (approximately 11), moderate levels of vitamin C, A, K, niacin, potassium, manganese, and magnesium. They also have withanolides and flavonoids like lutein, zeaxanthin, and beta carotene.

Because tomatillos have high levels of fiber they are excellent for digestive health, as fiber can help add bulk to foods and speed their transit through the digestive tract, thereby eliminating constipation, excess gas, bloating, cramping, and even colon and gastric cancers. Fiber is also good at regulating the release of carbohydrates into the bloodstream, thereby regulating blood sugar levels, which is important for people with diabetes.

They also contain phytochemicals called withanolides, which have been directly linked to anti-cancer and antibacterial functions. Antioxidants help combat the effects of free radicals, which are the dangerous byproducts of cellular reproduction, that can kill or mutate healthy cells and turn them into cancerous cells. In addition, the vitamin A, C, and other flavonoids within tomatillos provide other cancer-protective effects, particularly lung and oral cancers.

The vitamin C in tomatillos is good for the immune system and collagen production, and the vitamin A and beta carotene helps with our vision and eye health. The high nutrient, low calorie and low fat in them also help with weight loss, because they help us feel full, acquire the necessary nutrients, and reduce the chances of overeating. The niacin helps us to increase energy, and the potassium is heart healthy. Did I convince you to try them?!!

I made two sauces with my tomatillos, one in which I roasted the tomatillos, and one with raw tomatillos. They’re both easy to make, but the raw tomatillos give the sauce a bright and vibrant flavor, and the roasted tomatillos make the sauce deeper and more intensely flavored. I loved them both, and I can’t decide which one I like better so I’m sharing them both with you.

Roasted Tomatillo Sauce

  • 10 tomatillos, peeled, rinsed and cut in half
  • 5 jalapenos, seeds and ribs removed for a milder sauce
  • 1/2 cup of chopped onion
  • 1/2 cup chopped cilantro
  • 1/4 cup of water
  • tablespoon minced garlic
  • 1 teaspoon salt

Preheat broiler in oven. Peel tomatillos and MAKE SURE TO RINSE THEM AFTER PEELING. Tomatillos are very sticky and must be rinsed to remove the stickiness.

Chop them in half and put them on a baking sheet with the chiles. Roast them 4 inches below a very hot broiler until darkly roasted, even blackened, about 5 minutes. Flip them over and roast the other side, 4-5 minutes more. They will be splotchy and blistered, and that’s perfect.

In a blender or food processor, combine the tomatillos, chiles, juice from the baking sheet, cilantro, water, onion, and salt until it’s a rough puree. Serve immediately or store it in the fridge.

I served the sauce over a pork tenderloin I made in the crockpot. I added shredded Mexican cheese, and served with corn tortillas. It was smoky and yummy!

To make the sauce without roasting the tomatillos, just throw all the ingredients into the blender or food processor, and blend until coarsely pureed.

The sauce is a brighter green when the tomatillos are left raw, and it has a more tart, mild vinegar flavor, but it’s still really, really good. I served it over ribeyes we had made, and added black beans on the side.

That’s all there is to it! It’s a versatile sauce, whether raw or roasted, and can be used on tacos, nachos, burritos or enchiladas, on pork, chicken, beef or seafood; really any way you can think to use it. It’s delicious and healthy too, what more could you want?!! Eating tomatillo sauce is so good for you, and will help you lead a life of vitality- with Valerie! 🙂

A cornucopia of tomatoes!

 

Hello friends! These are the “dog days” of summer, aren’t they? At least they are in Indiana. According to dictionary.com, dog days are “the sultry part of the summer, supposed to occur during the period that Sirius, the dog star, rises at the same time as the sun: now often reckoned from July 3 to August 11. A period marked by lethargy, inactivity, or indolence.” Well since most of the children are back in school, I’d say the inactivity part has passed, but the heat certainly causes me to feel a bit lethargic!

However, I have no time for lethargy because my garden is producing in full abundance right now. It is certainly not lethargic either! I have more tomatoes, peppers and onions than I know what to do with, and I am very determined not to waste one thing that comes from my garden.

So, I’ve gotten creative at different ways to utilize all of my fruits and veggies, because there are only so many sliced tomatoes you can eat before you get tired of them. I started thinking about making my own tomato sauce. However, I wanted to roast them because I thought it would add a depth of flavor that non-roasted tomato sauce would not have. I began to look around for recipes and combined a few to create my own version of roasted tomato sauce.

But here is another benefit to roasting the tomatoes to make a sauce besides taste, they are MORE NUTRITIOUS than an unroasted tomato! I’m totally serious! I didn’t know that, I only knew I liked the taste better. When tomatoes are roasted or cooked in a sauce, it helps to break down the plant cell walls, allowing us to better absorb the antioxidant lycopene. This nutrient helps safeguard our cells from environmental damage, may protect us from certain cancers, and is heart-friendly. Tomatoes do lose about 10% of their vitamin C from the cooking process, however the benefits of the increased absorption of lycopene far outweigh the loss of vitamin C. Some vegetables like peppers and broccoli are healthier when eaten raw, because cooking causes them to lose essential nutrients. This is not the case with tomatoes, as they are best for you when eaten roasted or cooked.

Now that you know how good roasted tomatoes are for you, I’m going to share my roasted tomato sauce recipe with you. It is SO AMAZING, if I do say so myself. I’m eating it right now over an Italian sausage with a piece of Colby Jack cheese melted on it. The sauce is creamy and it’s flavor can best be described as spunky! Please enjoy!

Valerie’s Roasted Tomato Sauce

  • 30 tomatoes, halved
  • 1 cup extra virgin olive oil (EVOO)
  • 1/2 cup chopped onions
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons basil, chopped
  • 1 tablespoon oregano, chopped
  • 1 tablespoon rosemary, chopped
  • 1/2 cup balsamic vinegar

Preheat the oven to 325 degrees. Take the halved tomatoes, core them, remove the seeds, and place them on 2 large sheet pans halved side up. Coring and removing the seeds is optional, and makes a more concentrated sauce. If you’re short on time, just halve the tomatoes and place them on the sheet tray. Make sure you add a half hour more to the cooking time because the tomatoes with the seeds and cores will have A LOT more juice to them, and therefore will need to cook a half hour longer. I sprayed my trays with organic olive oil cooking spray so the tomatoes wouldn’t stick, which would aid in my clean up.

Next, get a big bowl and add the rest of the ingredients to it. Microwave the bowl for 2 minutes and pour the contents equally over the tomatoes. Use your hands to make sure the oil mixture gets all over the tomatoes.

Bake the tomatoes for 2 hours (2 1/2 hours if you didn’t remove the seeds and cores). Rotate the pans halfway through the baking process. Then, turn the oven up to 400 degrees and roast them for another 30 minutes. They will turn kind of blackened but that is PERFECT. You won’t believe how wonderful your house will smell while you’re doing this.

Now you have two options, you can either use a food mill and pulverize the tomatoes that way, or use a blender or food processor to beat up the tomatoes. I started using my food mill, but I felt it was leaving too many tasty bits unused, so I switched to using my trusty Vitamix. What I did was pour all the tomatoes into my blender, and blend on medium for about 20 seconds. Then, I poured the blended tomatoes into a pot, and cooked the roasted tomato sauce until thickened, about 15 minutes. I tasted it, added a 1/2 cup of red wine, and another 1/2 teaspoon each of salt and pepper.

Here’s a cool thing, the trays will have all kinds of bits on them and you may think, “oh my goodness, clean-up will be a huge ordeal!” but fear not, dear readers, I have a great and easy clean-up method that adds to the flavor of the sauce too. Take a cup of water and microwave it for 2 minutes, pour it onto the sheet pan, and wait a minute. Then, take a spatula, scrape off the bits, and pour the water/tasty bits into the sauce. It definitely adds flavor and makes clean-up easier too! That’s a win-win, my friends!

This sauce is so versatile, you can use it on pasta, to make Italian sausage sandwiches, as a sauce for steaks, or the way I used it the other night, over my healthy chicken Italiano. I took chicken thighs, salted and peppered them, and cooked them on the stove in a little EVOO. After they were cooked through, I added a piece of prosciutto and provolone cheese to the top and cooked for another minute until the cheese melted. Then, I poured the sauce over the top and served with fresh green beans- DELIZIOSO!

You can also turn this sauce into a Mexican sauce by adding chili powder, cumin, and jalapenos, and use it on enchiladas or in a taco sauce. Another variation is that you could add croutons, and turn it into a tomato soup. This sauce is so amazing, the sky’s the limit with it. You should definitely make this sauce, and if you make something super cool with it, let me know! One of the BEST ways to start your day!

Hello friends! I wanted to let you in on my latest healthy find, and give you some info about why it’s my new favorite thing to eat in the morning. Now before I tell you what it is, you have to promise not to say, “EW” and stop reading. You have to keep on reading to get in on this because it’s delicious as well as healthy, I promise! Ok, so here we go, my latest new yummy thing is… plain Greek yogurt. Wait, wait, wait, let me explain. Because I agree with you, plain yogurt is, well, sour. However, I turned plain yogurt into a yummy beginning of the day dish so keep the faith my readers, I’ll get you there too!

Here’s how this whole Greek yogurt thing started with me. I’ve been reading for years about yogurt, in particular Greek yogurt, and how great it is for you. I mean, it is loaded with probiotics which helps to promote a healthy gut and immune system among many other things, it’s higher in calcium than a glass of milk which gives us strong bones and teeth, it has a high satiety rating, meaning that it makes us feel SATISFIED longer which helps us eat less, so it is good for weight loss. Greek yogurt is 30% protein which is great for our muscles, and it’s relatively bland flavor makes it a perfect vehicle for different dishes.

Greek yogurt is by far a better choice than regular yogurt because it has more protein, less natural sugar (about 4 grams in Greek yogurt versus 7 grams in regular), lower carbohydrates per cup, less lactose so it’s easier to digest, and a thicker, smoother texture that helps us feel more satisfied. That’s because Greek yogurt is strained to remove the whey. When whey is removed, so is the water, resulting in a thicker, more substantial yogurt product.

HOWEVER, and this is a big however, most yogurt products out there, whether Greek or regular, are NOT A HEALTHY CHOICE FOR US. Most yogurts sold at US grocery stores are more of a dessert than a health food. This was my constant problem with yogurt. For years, I would go to the grocery store peruse the yogurt aisle and the backs of the containers of yogurt (remember it’s critically important to read your labels in the grocery store before you make your buying decisions), and be appalled at how much sugar is in these small containers of yogurt. For instance, one six ounce container of Yoplait yogurt may contain 26 grams of sugar (for the red raspberry flavor). General Mills announced last year it would reduce the amount of sugar in their yogurts by 25%, but even so their yogurt products will still have close to 20 grams of sugar in one container.

This amount of sugar would negate the health benefits that the yogurt would provide. Remember to have a healthy gut it is important to avoid sugar as it can cause disease-causing microbes to crowd out your beneficial gut flora. Other problems with yogurt is that it can contain artificial colors, artificial sweeteners, and additives, yet it masquerades as health food.

Another really important point is to eat full fat yogurt, as opposed to low or no fat versions, because low or no fat yogurt does not contain the same levels of CLA (conjugated linoleic acid) or other high quality fats like the omega 3’s found in most whole milk yogurt. Let me tell you why that’s important, CLA helps prevent cancer and aids in weight loss too! Also, vitamins A and D, which are critical to metabolism and good immunity, are fat soluble. So you need to ingest them with fat in order for your body to absorb them.

There are very few yogurts on the market that make FULL FAT plain Greek varieties with no added sugar, artificial flavors or sweeteners. There are only two that I know of-Fage and Wallaby Organic. However, I’ve read that Fage could possibly come from cows fed with GMO feed. I think that for me though the full fat option is the most important benefit, so I have chosen to use this brand because it’s readily available in most grocery stores. It contains only Grade A Pasteurized milk and cream, and Live active yogurt cultures (L. bulgaricus, S. thermophiles, L. Acidophilus, Bifidus, L. Casel). That’s all it contains. It has 220 calories per cup, with 25% RDA of calcium, 20 grams of protein, and only 9 grams of naturally occurring sugar.

Now to the fun part, how did I make it into something that tasted delicious without adding a lot of sugar or calories?!!! The answer came to me one morning when I was searching for something to eat that was full of protein and not too caloric. My S.O. had a container of Fage plain full fat yogurt in the fridge. I looked at the protein level and saw that it had 20 grams per cup and only 9 grams of sugar and I was sold. The challenge was to find something to pair with the yogurt that wasn’t too sugary and would make the plain yogurt taste good. The answer was sitting in a jar right in front of me- peanut butter! I looked at the plain yogurt and I looked at the peanut butter and I thought, “what the heck, let’s try it!” And it was AWESOME! It tasted sweet- but it wasn’t, creamy, and had a wonderful texture. The peanut butter only added 1 additional gram of sugar, and just like that it became my new go-to morning meal. Here’s how I did it:

Take a cup of Fage full fat yogurt, add a teaspoon of peanut butter, and a few shakes of organic cinnamon and mix it all together. Eat immediately. It has 283 calories, 22.3 grams of protein, 10 grams of sugar, 11 grams of fat (and remember that fat is GOOD FOR YOU)and 25% of your calcium for the day. It will keep you full and satisfied. In fact, I usually make a cup of this and then only eat half of it, and store the rest in the fridge for the next day. It is a healthy and delicious way to start your day, I promise!

And that’s all there is to it! I hope you’re now a believer about plain, full fat Greek yogurt, like I am now. You really can add anything to it, but remember to watch the sugar of whatever you’re adding to keep it really healthy. Since it has a flavor like sour cream you can also use it wherever you would use sour cream, because it’s a lot healthier. Eating plain, full fat Greek yogurt will help you to live a life of vitality- with Valerie! 🙂

Hello my friends! The topic I’m going to talk to you about today came about because of my concern that my daughter, Danielle, is not drinking enough water. I was sure that was really bad for her, and I started researching what and how much we should be drinking. The results were even more shocking than I thought, and not only did I share them with Danielle, I also wanted to share them with my readers as well.

Now we all know that if you’re dying of thirst while being stranded in the desert that is really bad, right? Well, the fact that really surprised me was that if you are 1 to 2% dehydrated, which would show as symptoms of mild thirst, that can cause problems like headaches, irritability, and impaired cognition. A 2% dehydration level also leads to a 10% decrease in athletic performance, so make sure you’re hydrating before you exercise. Even more concerning, according to a recent Harvard study, more than half of American children are dehydrated and 1/4 of children do not drink water on a daily basis. Boys were 75% more likely to be inadequately hydrated than girls.

If your response is, “What’s the big deal about water, anyway?”, here’s the answer for you. Our bodies are made up of approximately 65% water, which is crucial for blood circulation, metabolism, regulation of body temperature, waste removal and detoxification.

Here’s another concern, children and the elderly have an underdeveloped thirst mechanism, which makes them more vulnerable to dehydration. Also, hunger and sugar cravings could be a sign that you are dehydrated so when you feel hungry, drink a glass of water first. Other dehydration symptoms are fatigue, dizziness, mood swings, foggy thinking and poor concentration, chills, muscle cramps, back or joint ache, dull, dry skin, pronounced wrinkles, constipation, infrequent urination, dark, concentrated urine, and bad breath.

How much water should we drink a day in order to avoid the above symptoms? The Institute of Medicine recommends women drink 2.7 liters (91 ounces) a day, and men 3.7 liters (125 ounces). I don’t walk around with a device to measure how much water I’m drinking, I use the urine rule which means that if my urine is a light yellow color I’m drinking an adequate amount of water. One thing to keep in mind though, if you’re taking a supplement containing vitamin B2 (like most multivitamins) your urine will be a bright, fluorescent yellow after you take it. In that case, use the frequency rule. A healthy person urinates 7-8 times per day so if you are urinating a lot less frequently than that or if it’s just a super small amount, up your water intake.

Here’s a scary fact about dehydration that I uncovered, according to a study published in the Journal of Psychology and Behavior, dehydrated drivers made twice the amount of errors in a two hour drive compared to hydrated drivers. That is similar to the results of a driver who is under the influence of alcohol- yes, that’s what I said! Frightening!

A comforting thought though, is that all of this is 100% preventable by simply rehydrating yourself and your children. However, not all beverages are equal. If you’re drinking energy drinks or soda, they are high in caffeine which acts as a diuretic that can dehydrate you. Stay away from those. Also, sodas, sports drinks, fruit juices and other sweetened beverages contain processed fructose which is one of the primary causes of obesity and metabolic dysfunction. One soda per day adds as much as 15 pounds to your weight per year, and it also increases your risk of diabetes by 85%.

Sports drinks many people believe to be more important to drink when you’re dehydrated than water because of electrolyte replacement. However, most sports drinks contain two thirds or even more sugar than sodas, usually high fructose corn syrups. They also contain artificial colors and flavors which is also not good for your health. Fructose is metabolized by the liver and is the main cause of non-alcoholic fatty liver disease. Just like alcohol, your body turns fructose directly into fat, which cancels out the benefits of your workout.

You may be drinking sugar free sodas or sports drinks and think you’re doing something healthy for your body, but that’s absolutely incorrect. Those sugar free drinks will contain artificial sweeteners, which may be worse for you than fructose. Also, many people think they need to drink sports drinks to replenish their electrolytes (salt) lost during exercise, but they usually just use processed salt to do that.

Also, fruit juices are not a healthy option either. Fruit juices can contain more sugar than soda. For example, one 8 ounce glass of orange juice has 8 teaspoons of sugar, at least 50% of that is fructose. Many fruit juices contain high fructose corn syrup, just like soda. And many fruit juices are made by the same parent companies that make soda pop, so keep that in mind. Now, eating a whole fruit is hydrating like an orange or watermelon, but just remember to eat the fruit, not buy the juice from the grocery store, because the whole fruit contains a lot of fiber too.

Ok, so what should we be drinking, you ask? Well, of course the answer is WATER. But all water is not created equally and I want to address that as well. First of all, please please please don’t drink bottled water! Those bottles are clogging up our landfills and the plastic contains industrial chemicals like bisphenol-A, bisphenol-S (BPA/BPS) and phthalates which leach from the plastic. Also, just because you’re drinking bottled water, it doesn’t mean it’s any more pure than the tap water you’re drinking, and often times it’s more contaminated.

Tap water can have many contaminants as well, so the best choice is FILTERED tap water. And use a glass water bottle instead of a plastic one to make sure fewer contaminants get into your water. Filters are inexpensive to buy, and can be easily installed on your kitchen faucet. The best one is a reverse osmosis water filtration system because it removes almost everything bad from your water. Those systems are a bit pricier, but are definitely worth it. If you need a little flavor in your water, like Danielle does, I recommend putting an organic lemon into your water. It makes a HUGE DIFFERENCE IN THE TASTE OF THE WATER.

Also, another healthy alternative I found for my family to drink is organic coconut water. It’s very hydrating and has no sugar, or artificial colors or flavors. It’s also packaged in a paper carton so it’s more environmentally friendly and there are no chemicals to leach into your beverage. It tastes a bit like a pina colada but with no sugar. It has electrolytes too and at only 43 calories per cup, is a great bang for your nutritional buck. I think it’s a great alternative for those who need a bit more after a workout.

So that’s my wisdom for the day. Get hydrated by drinking filtered water, coconut water, or whole fruit, and avoid sports drinks, fruit juices, sodas, and energy drinks. Look for frequency of urination and urine color as signs of dehydration, and be alert for the symptoms like fatigue, dizziness, thirst, etc. If you feel hungry or have a sugar craving and you’ve just eaten, make sure you have a glass of water before reaching for the cookies or candy, it could be thirst at work. Also, urge your children or elderly family members to drink more pure water, because they may not be as aware of their dehydration as you are. Every time I grab my glass of water I remind Danielle to drink her coconut water because I realize she doesn’t get the thirst signal like she should. Drinking pure water or other healthy options is SO GOOD for you, and will help you live a life of vitality- with Valerie!

Fab Fourth- Fab Side!

Hi All! Well I’m sitting on the beach in sunny Southern California right now, and I’ll be spending the Fourth of July in Las Vegas this year. It’s quite a change from my normal Fourth festivities, that’s for sure! I usually have a cookout, and then we go and watch our local fireworks display. 

While I won’t have a cookout this year (or even cook at all!), I wanted to share a recipe for the BEST and easiest side salad to make your fabulous Fourth meal complete. It’s made with one of my favorite vegetables, the humble but delicious cucumber. Did you know how healthy cucumbers are for you? No? Then it’s a good thing you read my post today because I’m going to tell you right now. 

Cucumbers protect your brain because they contain the anti-inflammatory flavenol called fisetin. It plays an important role in memory by protecting nerve cells from age related decline. They also contain polyphenols called lignans and phytonutrients called cucurbitacins which have anti-cancer properties.

Cucumbers also contain potassium which plays an important role in lowering blood pressure. They’re very high in fiber and water too which helps in two ways. First, fiber helps aid in digestion (colon’s broomstick!) and water helps digest the other food you eat, and it also fills you up so it helps maintain a healthy weight. Another super thing is that cucumbers are very low in calories (1 cup has only 16 calories) so you can eat a lot of them and not take in too many calories. 

Are you now convinced that cucumbers are a super duper thing to eat? Good, because I’ve got a delicious salad to share with you that my family loves. It’s quick too so you can spend time enjoying your family and friends during the holiday. 
  
Cool Cucumber Salad
  
 1. Prep Veggies– Peel and chop two cucumbers, one onion (I used fresh green onions from my farmer’s market for this recipe but any type of onion will do) and one large tomato. I use Heirloom tomatoes because I love the flavor but again, any will do. Put them in a flat-ish container (because I like for the vinaigrette to really soak into the veggies).

  
2. Make Vinaigrette– Combine 1/2 cup organic white vinegar with 1/4 cup extra virgin olive oil, 1 cup of water, a teaspoon of honey, 2 teaspoons of salt, and 1 teaspoon of pepper in a small bowl and whisk them together.

3. Add vinaigrette to cucumbers, tomatoes and onions and give a stir. Ideally I like to make this an hour or so ahead of my meal to allow the ingredients to combine, but I’ve also made it a second before dinner and it’s been yummy so either way is fine.

My new love these days is zucchini. It’s a vegetable I haven’t been all that excited about in the past, but lately it’s been calling my name! I’ve been cooking with it and trying new recipes for my family. Now we are all loving zucchini. My favorite new zucchini dish that I’m sharing with you today is a recipe for lasagna made with zucchini instead of pasta noodles. The advantage is that with the zucchini replacing pasta, there are much fewer carbs in this dish. Remember that carbs turn into sugar in your body and cause weight gain and other illnesses like cancer, heart disease and a whole host of other awful things. Also, replacing the super carby pasta with a cool vegetable like zucchini means gaining lots of nutritional advantages which I will highlight for you next. Last, I will share my zucchini lasagna recipe with you.

1. Nutrition– Zucchini and all summer squash is 95% water, which is naturally low in calories (33 for a medium zucchini), a gram of protein and less than a gram of fat. It has 6 grams of carbohydrates but two of them are fiber, this makes it a low glycemic food which will not spike blood sugar, but will instead provide a steady source of glucose to your system.

2. Vitamins– Zucchini is a great source of two antioxidant vitamins which help boost immunity and supports healthy aging, 35 milligrams of vitamin C (between 39-46% RDA for adults) and 392 IU of vitamin A (13-27%).

3. Potassium– One of the main electrolytes in your body needed in proper balance (2 to 1) with sodium . The typical American diet tends to be very high in sodium which throws the balance off and leads to high blood pressure. A medium zucchini has 512 mg of potassium, or 11% of your daily needs.

4. Very versatile vegetable– Raw zucchini gives an extra crunch to salads, It can be cut into strips or rounds for dipping in hummus. It’s great in stir fries and soups. Also, who doesn’t love zucchini bread or muffins? I definitely do! In about a month, they will be abundant in backyard gardens, so you’ll have plenty of this veggie to work with soon.

Zucchini Lasagna

  • 1 LB ground beef
  • 1 1/4 teaspoons salt
  • 1 teaspoon olive oil
  • 1/2 large onion, chopped
  • 3 tsp minced garlic
  • 1 28 oz can crushed tomatoes
  • 2 tbs chopped fresh basil
  • Freshly ground black pepper
  • 3 medium zucchini
  • Cooking spray
  • 1 1/2 cups ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 4 cups shredded mozzarella cheese

The first thing you want to do is thinly slice your zucchini lengthwise with a mandolin. If you don’t have a mandolin (I don’t) slice it as best as you can. Lightly salt the zucchini and set aside for 15 minutes to get as much of the water out of it as you can. Then blot with paper towels.

In a large pot, sauté the onions and garlic in the olive oil, and then add the ground beef and brown. Add the tomatoes, basil, 1/4 teaspoon of salt, and pepper to taste. Reduce heat to low, cover and simmer, stirring occasionally for 25 minutes.

In a medium bowl, combine the ricotta, Parmesan, mozzarella and egg.

Now, preheat the oven to 375 degrees, spray your baking dish with nonstick cooking spray, grill the zucchini for 2 minutes each side to make it less soft, and start layering the lasagna. Spread 1/3 of the meat sauce, 1/3 of the zucchini, and 1/3 of the cheese mixture. Then, 1/3 zucchini, 1/3 cheese, 1/3 meat sauce and repeat one more time until the pan is full. Cover with foil.

Bake for 30 minutes, then remove the foil, and bake 20 more minutes uncovered. Add some more grated parmesan to the top and bake for 10 more minutes. Let stand 5-10 minutes and serve.

Ladies and gentlemen, let me tell you that it was DELICIOUS! in fact, my family ate it in 1 sitting! They kept going back at it like savages until it was gone. According to my calculations one slice is 300 calories, compared to 400 calories for a slice of regular lasagna. And the health benefits are by far greater than the caloric savings as I mentioned above. It’s a win-win, my friends! Try it and let me know how you like it! Ok, here’s the deal, did you know that Superbowl Sunday is the NUMBER ONE EATING DAY OF THE YEAR? Yes, that’s right! More food is eaten on this upcoming Sunday than any other day of the year! Even Thanksgiving is a distant second to Superbowl Sunday in terms of calories. And get this, OVER 6,000 CALORIES ARE CONSUMED!!! When I read that statistic I was stunned. I also read that the week before Superbowl Sunday is also at the top of the list in terms of calories. I guess anticipating the gorge fest brings on early pre-gorge fests.

I read this morning that the most popular food item served at Superbowl parties is vegetables! What?!!  I guarantee you that people aren’t eating 6,000 calories of veggies on Sunday! Though, vegetables are the most popular food item, we finally get to the root of the problem when you hear the most consumed food items on this day, which are chicken wings and pizza. According to Fox Sports, Pizza Hut will deliver 2 MILLION PIZZAS with 1,700 orders per minute occurring shortly before kickoff. One slice of pepperoni and sausage pizza is 350 calories and three chicken wings are approximately 255 calories so you can see how this meal is problematic calorically. That’s before the beer or margaritas are consumed, and the chips, dips, and desserts too! Can you see now how you can easily get to 6,000 calories with a four hour plus game?!!

So you see the concern that I have, don’t you? And you should be concerned too! With all of this in mind I began to think about my wonderful readers and how I could advise you to make good choices on Sunday (and every day, of course!). The first scenario is the easiest one, which is if you are the one hosting the Superbowl party. Then you can control the menu and preparations. You can also control what your guests bring, that is if they call to ask you.

The second scenario is more difficult- if you are someone else’s party guest. Then, you have MUCH less control over what is served and your choices will be more limited to what is available. However, I have a solution for you that I hope you’ll like (and it’s not to starve yourself by the way, I’d never say that!). The solution is CHILI!! Specifically, you call host of said party and ask him/her if you can bring something to contribute to the party and when he/she says yes then you offer to bring a pot of chili. It won’t be turned down because EVERYBODY loves chili! This is how you will eat safely and healthily on Sunday.

Why is chili such a good solution you ask? Well I’ll tell you, it’s because chili is healthy and filling! The beans and meat provide a nice serving of protein, the tomatoes and tomato sauce a great serving of vegetables, and the beans give you a nice punch of fiber which fills you up and helps you stay full. Calorie wise you’re better off with chili too because one serving (one cup) is only 259 calories and you will feel FULL after you eat it. If you have a cup of chili, one (only one!) beer, a handful of tortilla chips and guacamole you will only have consumed about 600 calories. That’s a FAR CRY FROM 6,000!! Plus all of the nutrition you will have gained from this meal is light years away from the nutritional wasteland of greasy pizza and fried chicken wings!

I’m going to share my recipe for chili, which I think is simple and fabulous. I’m also including the MOST DELICIOUS SALAD RECIPE EVER which I just made up the other night when I was in the mood for something different. I served the salad with my chili and I think the Mexican flavors in the salad really complemented the similar flavors in the chili. Bring the salad and the chili to the gathering and you will make some friends I promise you! If it’s your own gathering make my salad and chili, add some salsa, guacamole and tortilla chips and you’ve got a HEALTHY, DELICIOUS PARTAY!

  • 2 lbs ground beef
  • 1 large can (28 oz) pureed tomatoes
  • 1 large can diced tomatoes
  • 1 onion diced
  • 2 cups water
  • 2 tablespoons minced garlic
  • 2 big cans (28 oz) kidney beans
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First, sauté onions and minced garlic in a dash of extra virgin olive oil, then after about 3 minutes, add the ground beef and cook until no longer pink. Next add all the rest of the ingredients and either put that into a crockpot and cook on low for 6 hours, or leave it on the stove on low heat, stirring frequently until thick and bubbly. You may need to add more spices as it cooks so taste it every once in a while. And that’s all there is to it! Done!

The most delicious salad ever

  • 1 bag of organic lettuce greens of your choice
  • 1 jalapeno pepper, deseeded and with insides removed, chopped
  • 1 stalk of green onion chopped
  • 1 medium tomato chopped
  • 1 handful of fresh cilantro leaves, rough chopped
  • 1/2 avocado chopped
  • 1 lime
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Take the first 6 ingredients and add them to a large bowl. Then in a smaller bowl take the next four ingredients and make the vinaigrette by squeezing one lime into the bowl and then whisking in the olive oil until the two ingredients are combined. Then add the salt and pepper, stir, add the vinaigrette to the salad and toss. This one’s done too! The creaminess of the avocado makes the salad so rich and the jalapenos, since they’ve been deseeded and the insides removed, are no longer really spicy, just fruity and flavorful. The cilantro adds that delicious freshness too. And the lime makes the vinaigrette really pop with flavor! It’s just really good!

And that’s how you avoid consuming 6,000 calories on Sunday, my friends! If you make a pot of chili and a delicious salad you will feel satisfied and know you’ve eaten something really good for your body. I know you can do it! Hi Friends! Well, it’s still officially cold outside. I was hoping it would go away after a few days (every year I think this even though I’ve lived here all my life!), but it’s still hanging around. When it’s cold like it is here in the Midwest, I mainly want to eat warm, comforting food. I served this dish to my family the other night and my Honey asked me where I got the recipe. I told him that I sort of combined a couple of recipes and used what I had available to make up something new. He was amazed, pleasantly of course, so I’m really glad it was a successful experiment. It was easy too so I’m excited to share it with you today. I call it Italian chili because it has the beans, ground beef, and vegetables like a chili, but the taste is more like a thick minestrone. It’s flavorful and healthy too!

Italian “Chili”

1. Ingredients, 1 chopped onion, 1 tablespoon minced garlic, 1 tablespoon extra virgin olive oil (EVOO), 2 lbs grass fed ground beef, 1 28 oz can crushed tomatoes, 1/4 cup red wine, 1 can white or red kidney beans, 1/2 package organic mixed vegetables, 1/2 cup gluten free elbow noodles, 1 cup water, 1 teaspoon each dried oregano, basil, red pepper flakes, salt and pepper.

2. Sweat the onions- First add your EVOO and warm it up a little, then add the onions and garlic and cook them over medium heat until the onions are soft- about 5 minutes.

3. Brown the beef- Add the beef into the pan and sauté until browned. This should take about 10 minutes.

4. Now here’s the fun part- This is the best step in the process, you just put all the rest of the ingredients into the pot, the frozen veggies, wine, crushed tomatoes, beans, water, pasta, and spices, clap the lid onto it, reduce the heat to simmer, and let it go! Just stir once every 10 minutes so the ingredients don’t stick to the bottom. After 20 minutes the pasta should be soft enough that you can serve it, but if you’re not going to eat until later you can leave it on simmer and it could sit on the stove for an hour or so. Just remember to stir every 10 minutes or most of your ingredients will be stuck to the bottom of the pot.

And that’s it! It’s a super easy recipe and it’s delicious too! With the beans, tomatoes and all the veggies it’s really healthy so you can feel good about what you’re eating. As always, buy organic ingredients whenever you can so that you can ensure you’re putting the best food possible on the table for you and your crew. This recipe makes plenty for a family of four with enough leftover for a lunch or two- yay! When you reheat the “chili” you may have to add a cup of water because it thickens upon standing. You can also add tomato juice or tomato sauce instead of water for a more tomato-y flavor. Make this recipe because I promise you’ll enjoy it! Hello Friends! I hope you had a wonderful Christmas! I did and I’m really revving up for a healthful and fabulous 2015! One of the ways I’m doing that is by drinking Matcha green tea. Now, I’ve always known that green tea is good for me, though I’ve never really been a tea drinker (see my previous post “HEALTHY coffee is my favorite way to start the day!”), as coffee has always been my morning drink of choice. Lately, I’ve been doing some research on green tea, Matcha specifically, and I was intrigued enough to try it. I have become a believer about the health benefits of Matcha green tea and I’d like to share my findings with you today.

Here’s the thing, all tea (white, green, oolong, black, and pu-erh) comes from the same plant, camellia sinensis, which is a woody shrub native to southern China that is generally kept plucked to its picking height of 3-4 feet.  Now, Matcha is a high quality green tea that is covered before picking to accentuate the color, and then stone ground after being picked and before being sealed into small tins. In Japan, Matcha tea is a very important part of the tea ceremony. It has a somewhat grassy taste, but the type I drink enhances the green tea taste with other flavors like blood orange and peach. It’s definitely important to make sure you purchase high quality Matcha tea, as with all varieties, to ensure you are receiving the maximum benefits.

Matcha green tea is powdered which makes it easier to prepare. You just add hot water if you want to drink it warm, or cold water if you want it as a cold beverage, stir and you’re done! No steeping of tea leaves involved with Matcha tea. Next, I will discuss the health benefits of drinking it, and then I’ll let you know the type I’m currently drinking.

Matcha tea is high in antioxidants– Remember that antioxidants are the nutrients and enzymes responsible for fighting against the negative effects of UV radiation, giving us younger looking skin, and fighting off a number of life-threatening illnesses. We know that fruits, vegetables, red wine, and chocolate have antioxidants, but Matcha green tea has FIVE TIMES THE ANTIOXIDANTS AS ANY OTHER FOOD IN JUST ONE SERVING! That makes it worth it for me to drink it!

2. Tons of Catechin, EGCg– Green tea has a specific set of organic compounds called catechins. Catechins are among the most potent and beneficial antioxidants out there. One specific catechin, epigallocatechin gallate (EGCg), makes up 60% of the catechins in Matcha green tea. Out of all antioxidants EGCg is the one most widely recognized for its cancer fighting properties. Matcha contains over 100 times more EGCg than any other tea on the market.

Enhances calm but increases energy (What the what?!!)- Here’s how that works, the amino acid L-Theanine in Matcha tea leaves promotes the production of alpha waves in the brain which induces relaxation without the drowsiness caused by other “calming products” out there. It also contains a combination of nutrients that gives increased endurance and more energy which can last UP TO SIX HOURS. It doesn’t have the usual side effects of stimulants, like nervousness and hypertension. Samurai warriors drank Matcha green tea before going into battle because of the tea’s energizing properties, and Zen Buddhist monks and Chinese Daoists drank it as a way to relax and meditate while remaining alert. So it calms you, AND give you energy- naturally! That’s a win win!

4. Boosts memory and concentration– Another side effect of L-Theanine is that it produces dopamine and serotonin which enhance mood, promote better concentration, and improve memory. I need that so that’s yet another benefit for me!

Burns calories and detoxifies the body, yet is very low in calories– Drinking Matcha green tea has been shown to increase metabolism and help the body burn fat about four times faster than average, but unlike diet aids on the market does not have any negative side effects like increased heart rate and high blood pressure. Yay for me! Also, the Matcha leaves are covered to deprive them of sunlight during the last three weeks before tea leaves are harvested, which causes a huge increase in chlorophyll production. This not only gives the tea its vibrant green color, but it is also a powerful detoxifier capable of naturally removing heavy metals and chemical toxins from the body. It is very low in calories too. The Matcha I drink has 20 calories per packet and it makes 12-16 ounces of liquid. That’s amazing!

6. Fortifies the immune system and improves cholesterol– The catechins in Matcha tea have been shown to have antibiotic properties, which promotes overall health. Also, one serving provides substantial quantities of Potassium, Vitamins A and C, Iron, Protein, and Calcium. In addition, the nutrients in Matcha may have the ability to inhibit the attacks of HIV on human T-cells. Another cool thing is that people who drink Matcha on a regular basis have lower levels of LDL (bad) cholesterol and higher levels of HDL (good). Men in particular who drink Matcha tea are 11% less likely to develop heart disease than those who don’t drink it.

I am drinking Jade Monk Matcha green tea powder in the cranberry blood orange flavor right this instant and I’m loving it! It doesn’t have the bitter flavor that some teas do, and I don’t have to add any milk, or lemon, or sweeteners like sugar or honey to make it taste delicious. I’m drinking it cold right now, but I prefer it warm. And remember it’s low in calories- one packet contains 20 calories. It’s super easy to make too. If you prefer to drink it warm what I do is use a measuring cup and put 14 ounces of filtered drinking water into it, throw it into the microwave for three minutes and then add it to a drinking glass, pour in the packet, stir and drink. If you’d like it cold, you can add cold filtered water to a drinking glass, pour the packet in, and stir. It’s also really convenient if you’re running out the door to put a water bottle into the fridge to get it cold, pour the packet in, shake and you’re done!

So that’s why I’m loving Matcha green tea right now. The health benefits are numerous, AND NATURAL! I can’t think of any negatives either, which is rare for any product on the market. Are any of you traveling over the holiday season? I am, though just for one night, thank goodness. I went to Las Vegas a week and a half ago, traveling by air of course, and came home SICK! I’ve been suffering since then with flulike symptoms. Of course I’ve done all of my homeopathies and cold remedies that I’ve discussed in a previous post “HEALING Cold Remedies”, and if you haven’t read it you definitely should. However, with the hectic pace I’ve been keeping up lately I haven’t healed as quickly as I’ve wanted. So I thought about all of my wonderful readers and I wanted to help all of you to travel and stay healthy over the Christmas holidays. Here’s my list and it works for both car and air travel.

1. Make sure you take frequent pit stops to stretch your legs- traveling by car or plane can be very rough on your circulation and increases the risk for deep venous thrombosis, which are deep blood clots that can travel to the heart, lungs or brain. They can be fatal and the best preventative is to get up and move to increase circulation to the extremities. If you’re driving get out to stretch your legs every few hours. When I’m traveling by plane I always sit on the aisle when possible so I can more easily get up and move around. I always take off my shoes and keep wiggling my toes, and flexing/extending my calf muscles to improve blood flow.

2. Remember to make healthy food choices, especially while on the go- When traveling, it is very tempting to hit a fast food place, either on the road or in the airport. It’s quick, cheap, and easy. But DON’T DO IT MY FRIENDS! Or if you have to do it, make the best fast food choices possible. Read my previous post, “HEALTHY Fast Food?” for tips on making healthy choices at fast food restaurants. If you can stop for a “real meal”, I highly recommend that instead. One thing we did when traveling by car when Jacqueline and Danielle were young was to hard boil some eggs, peel oranges, pack some nuts,  bring turkey lunch meat, and bottles of water to make impromptu meals when on the road.

3. Stay hydrated- This is super important whether traveling by car or plane. Make sure you’re drinking WATER as that is the most hydrating beverage. I’m drinking alkaline water right now as I feel it will super hydrate me. You can read my past post “Walking in a Winter Wonderland? How to protect and hydrate in the cold!” to get more information about this type of water. Any water is better than no water, or than sodas or other types of unhealthy beverages, so you can’t go wrong with drinking lots of water.

4. Take your Echinacea- This was my fatal error when traveling last week, I didn’t take my Echinacea! Echinacea is an herb that helps boost the immune system and protect you from all the germs you’re likely to be exposed to whether traveling by car or plane. It really does work, and I’m very sorry right now as I’m coughing and sneezing all over the place that I didn’t bring mine with me!

5. Keep moving when you get there- This one is super important. Even while spending time with grandparents, aunts and uncles, cousins and friends, remember to take time for a walk, a bike ride, or a workout at the gym. You will likely be eating more than usual too, so making sure to work off some of that food is critical to keeping on your healthy way of life.
